LOADED BAKED POTATO SOUP

Everyone who has tried this soup loves it. It is a good soup for veggie haters. Baking the potatoes first gives them the perfect texture for this thick creamy soup. You won't be disappointed. I always serve this with crackers and top the soup with a bit more shredded Cheddar, crumbled bacon, and a dollop of sour cream.

LOADED BACON-CHEESEBURGER-POTATO SOUP

Loaded Bacon-Cheeseburger-Potato Soup image

This particular soup is a cheeseburger variation on a more traditional potato soup base, and the addition of the ground beef alongside all that cheese and the potatoes makes for a rich, creamy, and hearty soup. The thick cut bacon adds a nice savory flavor and good texture. I love all the vegetables mixed throughout as well. It's just a great combination of flavors, textures, and ingredients. The cheese really thickens up the broth and it's a "stick to your ribs" kind of meal! Serve this with some crusty bread for sopping up all that goodness.

Categories     Potato Soup

Time 55m

Yield 6

Number Of Ingredients 14

1 pound ground beef
4 thick bacon slices bacon
2 medium carrots, peeled and diced
2 medium celery, diced
1 small onion, diced
4 cups chicken broth
2 large russet potatoes, peeled and diced
3 tablespoons butter
¼ cup all-purpose flour
1 ½ cups milk
2 cups shredded Cheddar cheese, plus more for garnish
1 teaspoon dried basil
1 teaspoon dried parsley
salt and freshly ground black pepper to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain, discard grease, and set aside.
  • Meanwhile, place bacon in a 3-quart saucepan, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove crisped bacon with a slotted spoon and set on paper towels to drain. Leave bacon grease in the saucepan.
  • Sauté carrots, celery, and onion in the bacon grease until vegetables are tender, about 10 minutes. Add broth, potatoes, and browned ground beef; bring to a boil. Reduce heat, cover, and simmer until potatoes are tender, 10 to 12 minutes.
  • Meanwhile, wipe out the skillet you previously cooked the beef in. Melt butter in the skillet and whisk in flour; cook, stirring frequently, until bubbly, 3 to 5 minutes. Carefully whisk milk into flour-butter mixture until well combined and very smooth.
  • Pour milk mixture into the soup, whisking to combine; bring to a boil and simmer for about 2 minutes. Add Cheddar cheese and stir until melted. Season with basil, parsley, salt, and pepper.

LOADED POTATO SOUP

Loaded Potato Soup image

After searching for a loaded potato soup recipe that used real cheese instead of the processed stuff, I finally found one but it lacked flavor. After using it as a starting point and making several changes, I came up with this version that my family loves. It takes a bit of work to make it, but it is well worth it. It makes a large pot, but it's even better as leftovers. I hope you enjoy it, too!

Provided by mudpies4all

Categories     Chowders

Time 1h30m

Yield 12 cups, 12 serving(s)

Number Of Ingredients 12

8 potatoes, scrubbed and cut into 1/2 inch cubes
4 slices bacon, diced
1/2 large onions, diced or 1 tablespoon dried onion flakes
1/2 cup butter
1/2 cup flour
4 cups milk
4 cups water
4 teaspoons chicken bouillon
1/2 teaspoon garlic salt
1 1/2 cups shredded cheddar cheese
1 cup sour cream
salt and pepper, to taste

Steps:

  • 1. Boil potatoes until tender but still firm, drain, and set aside.
  • 2. While potatoes boil, heat stock pot or dutch oven over medium heat, add diced bacon, and cook until bacon is nearly crisp.
  • 3. Add onion and cook until translucent (or lightly browned, if using dried onions). Remove bacon and onion to a small dish.
  • 4. Add butter to bacon drippings in pan. (If you're feeling virtuous you can clean the bacon drippings out of the pan and just use the butter, but it really does add something wonderful to the flavor if you leave it in.) When butter is melted, gradually whisk in flour and a bit of the milk to form a roux. Cook while whisking constantly until lightly browned and free of lumps,.
  • 5. Add remaining milk, water, chicken bouillion, and garlic salt. Cook over medium heat for 15-20 minutes, or until slightly thickened.
  • 6. Add cooked potatoes to broth.Cook additional 15-20 minutes.
  • 7. Remove from heat and cool slightly. Mix in sour cream, bacon, and cheddar cheese. (If you add the dairy while the soup is too hot, it will curdle.) Season with salt and pepper, to taste.
  • 8. Serve immediately or transfer to crock pot on warm to serve later in the day. I serve it with additional cheese, bacon bits, and scallions for garnish.
