CRISPY BAKED SHRIMP IN LEMON BUTTER SAUCE (PRAWNS)



Crispy Baked Shrimp in Lemon Butter Sauce (Prawns) image

Recipe video above. People call this Magic Baked Shrimp - named as such because it's so simple to make, yet it tastes like a million bucks! Shrimp (prawns) baked in a white wine-butter reduction with lemon and garlic, with a crunchy parmesan breadcrumb topping! Don't skip crust bread for dunking in the incredible sauce! It's basically a crunchy version of Shrimp Scampi!

500g/ 1 lb jumbo prawns/shrimp (, peeled and deveined (Note 1))
3/4 cup dry white wine ((sub chicken broth))
75g/ 5 tbsp unsalted butter (, melted)
2 tbsp lemon juice
3 garlic cloves (, minced)
1/2 tsp salt
1/4 tsp pepper
3/4 cup panko breadcrumbs ((Note 2))
1/4 cup parmesan (, finely shredded)
1/4 tsp salt
1.5 tbsp olive oil
Finely chopped parsley
Lemon

Steps:

  • Preheat oven to 220°C/430°F (all oven types).
  • Pour wine and half the butter into 9 x 13" / 22 x 33cm baking pan (see Note 3 if using glass). Place in oven for 10 minutes to reduce.
  • Toss prawns with remaining butter, garlic, lemon juice, salt and pepper. Butter may harden - that's ok.
  • Mix Crunchy Topping ingredients.
  • Remove pan from oven. Add prawns - spread out in single layer, but snug.
  • Top with Crunchy Topping. Bake 12 minutes.
  • Flick to broiler/grill on high, broil for 1 - 2 minutes (max) to brown top a bit more.
  • Sprinkle with parsley. Serve immediately with lemon wedges and crusty bread to mop up the incredible sauce!

Shrimp fra diavolo is a spicy, delicious one-pan Italian dish. It's made with plump shrimp cooked in a flavorful, hearty tomato sauce with generous amounts of garlic, white wine, and fresh parsley. Serve it with your favorite crusty bread, pasta, or rice.

1 pound large shrimp, (peeled and deveined, tails attached)
Kosher salt
2 teaspoons crushed red pepper flakes, (more to your liking)
Extra virgin olive oil
1 medium yellow onion, (chopped)
5 garlic cloves, (minced)
1 cup dry white wine
1 15- ounce can diced fire-roasted tomatoes, (or plain fire-roasted tomatoes)
¼ cup tomato paste
Black pepper
2 teaspoons dried oregano
½ cup chopped fresh parsley

Steps:

  • Pat the shrimp dry and season with kosher salt and 1 teaspoon of red pepper flakes.
  • Heat 2 tablespoons extra virgin olive oil in a large skillet. Add the shrimp and cook for 45 seconds to 1 minute over medium heat. Transfer the shrimp and its juices to a plate for now. (If the shrimp is still grey in some parts it is okay, it will finish cooking in the sauce).
  • In the same skillet, heat another 3 tablespoons extra virgin olive oil over medium-high until shimmering. Reduce the heat to medium then add the onions and garlic. Cook for 5 minutes over medium heat, tossing regularly, until the onions have softened and turned a light golden brown (manage your heat to make sure the garlic does not burn). Add the white wine and cook until reduced by half.
  • Stir in the diced tomatoes and tomato paste. Season with kosher salt, black pepper, the oregano, and the remaining red pepper flakes. Bring to boil, then lower the heat to medium low and allow the sauce to simmer for 10 minutes or so until thickened.
  • Return the shrimp to the skillet and nestle it into the sauce. Cook for 1 more minute or until the shrimp is just warmed through and pink. Finish with fresh parsley. Serve immediately with your favorite crusty bread, pasta, or rice.

Easy shrimp recipe, coated in Mediterranean spices and skillet-cooked in a light white wine and olive oil sauce with shallots, bell peppers and tomatoes. Ready in 25 minutes or less!

1 1/4 lb large shrimp (or prawns, peeled and deveined (if frozen, be sure to thaw first))
1 tbsp all-purpose flour
1 to 2 tsp smoked Spanish paprika
1/2 tsp each salt and pepper
1/2 tsp ground coriander
1/4 tsp cayenne
1/4 tsp sugar
1 tbsp butter (I prefer to use ghee clarified butter)
3 tbsp Extra virgin olive oil
1/2 red onion, (thinly sliced)
4 garlic cloves, (chopped)
1/2 green bell pepper and 1/2 yellow bell pepper, (cored and sliced)
1 cup canned diced tomato
1/3 cup chicken or vegetable broth
2 tbsp dry white wine
2 tbsp fresh lemon juice
1/3 cup chopped parsley leaves

Steps:

  • Pat the shrimp dry and place it in a large bowl. Add the flour, smoked paprika, salt and pepper, coriander, cayenne, and sugar. Toss until the shrimp is well-coated.
  • In a large cast iron skillet, melt the butter with the olive oil over medium heat. Add the shallots and garlic. Cook for 2-3 minutes, stirring regularly, until fragrant (be sure not to burn the garlic.) Add the bell peppers and cook another 4 minutes or so, tossing occasionally.
  • Now add the shrimp. Cook for 1 to 2 minutes, then add the diced tomatoes, broth, white wine and lemon juice. Cook for a couple more minutes or until the shrimp turns bright orange.
  • Finally, stir in the chopped fresh parsley and serve!

4 lbs fresh cooked shrimp, shelled
1 (28 ounce) can italian tomatoes with basil
1 (7 ounce) can tomato paste
2 (8 ounce) cans pimientos, whole
1 teaspoon dried basil
1/4 teaspoon powdered marjoram
1 tablespoon parsley, chopped
1/4 teaspoon pepper
1 lemon, juice of
3/4 cup olive oil
2 garlic cloves
3/4 lb imported feta cheese
salt
Tabasco sauce
2 large bermuda onions

Steps:

  • Peel and chop onions. Heat the oil in a large 12" frying pan. Add onion and cook very gently, stirring with a wooden spoon, until soft- not brown, just golden. Press into this the garlic, using a garlic press. Blend in one can tomato paste, pimientos, chopping them and including their juice. Then add the peeled Italian tomatoes with basil, chopping the tomatoes likewise. Add pepper, basil, marjoram, a generous dash of tabasco and salt to taste. Simmer gently for 1/2 hour, stirring occasionally to prevent sticking. Transfer to the top of an extra large double boiler and stir in the strained lemon juice. Keep hot over boiling water. When ready to serve, drain the prepared cooked shrimp, add to the sauce and allow to heat through (about 10 minutes). In the meantime, cut the feta cheese into 1" cubes. Drop gently into the sauce, turn off heat, cover and allow to stand 5 minutes. Do not stir. Place the whole potful into a large, hot soup tureen, sprinkle with chopped parsley and serve at once at the table in large soup plates. Crisp, warm French bread should accompany this. Also chilled white wine.

1/2 cup pearl (Israeli) couscous
1/2 cup sugar snap peas, strings removed, then halved
1 1/2 tablespoons unsalted butter, divided
5 ounces peeled and deveined shrimp
1/4 cup dry white wine
1 small tomato, finely chopped
1 pinch of sugar
1 tablespoon chopped tarragon

Steps:

  • Cook couscous in well-salted boiling water, uncovered, until tender, about 10 minutes. Stir in sugar snaps 3 minutes before couscous is done. Drain and transfer to a bowl, then stir in 1/2 tablespoon butter and salt and pepper to taste.
  • While couscous and sugar snaps cook, toss shrimp with 1/8 teaspoon each of salt and pepper. Heat remaining tablespoon butter in a 10-inch heavy skillet over medium-high heat until foam subsides. Sauté shrimp, turning once, until just cooked through, about 3 minutes total. Transfer shrimp with a slotted spoon to a plate.
  • Add wine, tomato, and sugar to skillet and boil until tomato starts to fall apart, about 4 minutes. Return shrimp to skillet and stir in tarragon.
  • Season with salt and pepper. Serve shrimp and pan sauce on top of pearl couscous.

¾ cup butter
2 onions, chopped
2 cloves garlic, minced
1 bunch fresh parsley, chopped
2 (14.5 ounce) cans stewed tomatoes
2 (14.5 ounce) cans chicken broth
2 bay leaves
1 tablespoon dried basil
½ teaspoon dried thyme
½ teaspoon dried oregano
1 cup water
1 ½ cups white wine
1 ½ pounds large shrimp - peeled and deveined
1 ½ pounds bay scallops
18 small clams
18 mussels, cleaned and debearded
1 ½ cups crabmeat
1 ½ pounds cod fillets, cubed

Steps:

  • Over medium-low heat melt butter in a large stockpot, add onions, garlic and parsley. Cook slowly, stirring occasionally until onions are soft.
  • Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth, bay leaves, basil, thyme, oregano, water and wine. Mix well. Cover and simmer 30 minutes.
  • Stir in the shrimp, scallops, clams, mussels and crabmeat. Stir in fish, if desired. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open. Ladle soup into bowls and serve with warm, crusty bread!

1 1/2 pounds medium shrimp with shells, shelled and deveined; retain shells
Salt to taste
1 1/2 pounds fresh English peas, shelled (1 1/4 to 1 1/2 cups depending on size)
3 tablespoons extra-virgin olive oil
1 head green garlic or 6 garlic cloves, minced
1/4 to 1/2 teaspoon red chile flakes, to taste
1/3 cup finely chopped cilantro
1/3 cup finely chopped parsley
Cooked rice for serving, optional

Steps:

  • Place shrimp shells in a medium saucepan, add 1 quart water and salt to taste. Bring to a boil. Skim off foam, reduce heat, cover partly and simmer 30 minutes. Strain broth into a bowl and discard shells. Return broth to saucepan.
  • Meanwhile, sprinkle shrimp with salt, toss and let sit for 15 minutes.
  • Return broth to a boil and add peas. Boil 2 minutes, until just wrinkled and slightly tender. Scoop out with a skimmer or slotted spoon and set aside. Measure out 1/2 cup broth and set aside.
  • Heat oil over medium heat in a wide heavy skillet. Add garlic and chile flakes. Cook, stirring, until garlic is fragrant and beginning to color, about 1 minute. Turn heat to medium-high and add shrimp. Cook, stirring, until shrimp turns pink, about 2 minutes. Add peas, cilantro and parsley and continue to toss in the pan for another minute. Stir in 1/2 cup broth and heat through while stirring to deglaze pan. Remove from heat, taste and adjust seasoning. Serve.
