8 medium fresh beets
1 cup vinegar
1/2 cup sugar
1-1/2 teaspoons whole cloves
1-1/2 teaspoons whole allspice
1/2 teaspoon salt

Steps:

  • Scrub beets and trim tops to 1 in. Place in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 25-30 minutes or until tender. Remove from water; cool. Peel beets and slice; place in a bowl and set aside. , In a small saucepan, combine vinegar, sugar, cloves, allspice and salt. Bring to a boil; boil 5 minutes. Pour over beets. Refrigerate at least 1 hour. Drain before serving.

This recipe was given to me many years ago by an elderly farmers wife and has been one of my 'must do' yearly canning recipes. If you have a large amount of beets, just keep repeating brine until your beets are all gone! Enjoy!

10 pounds fresh small beets, stems removed
2 cups white sugar
1 tablespoon pickling salt
1 quart white vinegar
¼ cup whole cloves

Steps:

  • Place beets in a large stockpot with water to cover. Bring to a boil, and cook until tender, about 15 minutes depending on the size of the beets. If beets are large, cut them into quarters. Drain, reserving 2 cups of the beet water, cool and peel.
  • Sterilize jars and lids by immersing in boiling water for at least 10 minutes. Fill each jar with beets and add several whole cloves to each jar.
  • In a large saucepan, combine the sugar, beet water, vinegar, and pickling salt. Bring to a rapid boil. Pour the hot brine over the beets in the jars, and seal lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

1 1/2 cups water
1 cup sugar
1/2 cup white-wine vinegar
1 small carrot, thickly sliced
1 small onion, thickly sliced
5 white peppercorns
1 bay leaf
2 allspice berries
4 medium beets (about 1 1/2 pounds), trimmed and scrubbed
2 bay leaves
2 allspice berries
1 piece (3 inches) fresh horseradish, peeled and cut into chunks
2 quarts water

Steps:

  • Swedish vinegar: Place all ingredients in a saucepan. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat, and let cool.
  • Beets: Put beets in a medium pot; add bay leaves, allspice berries, horseradish, and water. Bring to a boil, and cook until beets are tender when pierced, 45 minutes to 1 hour. Drain. When cool enough to handle but still warm, peel and cut into quarters.
  • Transfer beets to a nonreactive container with a tight-fitting lid, and pour vinegar over them. Cover, and refrigerate at least 2 days and up to 1 week before serving.

I love my mom's pickled beets, but I don't always want to go through the fuss of making a batch. This recipe takes about as much time as boiling water! No special equipment needed. The hardest part is waiting for the beets to become infused with flavor.

1 (16 ounce) jar pickled beets
⅔ cup white sugar
⅔ cup white vinegar
¼ teaspoon salt
2 whole cloves

Steps:

  • Drain beet juice from the jar, leaving about 1/2 inch juice in the bottom.
  • Combine sugar, vinegar, salt, and cloves in a saucepan over medium-high heat. Cook, stirring occasionally, until sugar dissolves into a syrup, about 3 minutes. Remove from heat and let cool, 5 to 10 minutes.
  • Pour syrup over beets in the jar, covering them completely. Seal jar and shake gently.
  • Refrigerate beets for 2 to 3 days before serving.

6 medium red beets with greens, stems trimmed to 2 inches, remaining stems and greens reserved for Stewed Beet Greens
Coarse salt
1/3 cup cider vinegar
1/4 teaspoon freshly ground pepper
1/3 cup olive oil

Steps:

  • Place beets in a large pot, and cover with cold water by 2 inches. Bring to a boil over high heat; add 2 teaspoons salt. Reduce heat slightly to maintain a rolling boil. Cook until tender, about 30 minutes. Drain, and let cool slightly. Trim stem ends, then peel beets using a paring knife or a vegetable peeler. Cut beets crosswise into 1/4-inch-thick slices. Arrange on a platter.
  • Whisk together vinegar, 1 1/4 teaspoons salt, and the pepper in a small bowl. Add oil in a slow, steady stream, whisking until emulsified. Pour vinaigrette over beets, and serve.

Roasted Beets, recipe follows
1 large red onion, frenched
1 cup tarragon wine vinegar
1 1/2 teaspoons Kosher salt
1/2 cup sugar
1 cup water
6 medium beets, cleaned with 1-inch stem remaining
2 large shallots, peeled
2 sprigs rosemary
2 teaspoons olive oil

Steps:

  • Remove the skin from the Roasted Beets and slice thinly. Arrange in 1-quart jars alternating layers with the onion. In a small pot boil the rest of the ingredients and pour over the beets. Tightly lid the jars and place in the refrigerator for 3 to 7 days before serving.
  • Preheat oven to 400 degrees F.
  • In a large bowl toss all of the ingredients. Place into a foil pouch and roast in the oven for 40 minutes.

1 lb medium beet, with 1 inch of stems remaining
5 -6 unpeeled garlic cloves
1/4 cup plus 1 tbs. extra virgin olive oil
1 tablespoon dried culinary provence' lavender buds, finely ground in a spice grinder plus 1/2 teaspoon dried culinary provence' lavender buds, finely gr
2 tablespoons fresh lemon juice
sea salt & freshly ground black pepper
1/4 cup Italian parsley, chopped
1 teaspoon finely grated lemon zest

Steps:

  • Preheat oven to 375º F.
  • Place the beets and garlic on a large sheet of foil and sprinkle with ¼ cup of the oil and 1 tablespoon of the lavender; toss to combine. Fold up the foil to make a sealed packet. Place on a baking sheet.
  • Roast for 30 to 45 minutes, or until tender when tested with a sharp knife. Set aside until cool enough to handle. Slip off the skins.
  • Cut the beets into quarters and place in a large skillet. Peel the garlic and mach. Add the garlic to the beets.
  • Stir in the lemon juice, the remaining 1 tablespoon oil, and the remaining ½ teaspoon lavender. Season with salt and pepper. Warm through over medium heat.
  • Sprinkle with the parsley and garnish with the lemon zest.
  • Serve hot or warm.

  • Bring all ingredients except beets to a boil in a 2- to 3-quart saucepan, stirring until sugar is dissolved. Cover and simmer 30 minutes.
  • Cool marinade, then chill, covered, 1 day to allow flavors to develop. Pour through a fine sieve into a bowl.
  • Cook beets in a saucepan of boiling salted water until tender, 1 to 1 1/4 hours. Drain and cool. Slip off skins and cut into 1/2-inch pieces.
  • Stir together beets and marinade, then marinate, covered and chilled, 1 day.

7 lbs fresh beets
4 cups vinegar (5 percent)
1 1/2 teaspoons canning salt or 1 1/2 teaspoons pickling salt
2 cups sugar
2 cups water
8 fresh lavender, blossom (that`s 8 stems with full blossom head)
6 inches fresh thyme sprigs
4 vidalia onions (peeled and sliced thinly)

Steps:

  • Trim off beet tops, leaving 1 inch of stem and roots to prevent bleeding of color. Wash thoroughly. Sort for size. Cover similar sizes together with boiling water and cook until tender (about 30 minutes). Drain and discard liquid. Cool beets.
  • Trim off roots and stems and slip off skins. Slice into 1/4-inch slices.
  • Combine vinegar, salt, sugar, and fresh water.
  • Add lavender and thyme to vinegar mixture. Bring to a boil. Add beets and onions. Simmer 5 minutes. Remove lavender and thyme it`s fine if the flower heads release in the mixture. If you want you can tie them into a tea steeper or cheesecloth. Fill jars with beets and onions, leaving 1/2-inch head-space. Add hot vinegar solution, allowing 1/2-inch head-space.

  • Recommended process time for pickled beets in a boiling-water canner.
