Linguine With Shrimp Scampi - Barefoot Contessa Ina Garten image

This is a light pasta dish with plenty of shrimp, garlic, and lemon. I have reduced the amount of lemon and salt from the original recipe to suit my DBF's tastes. The leftovers are just as good heated up in the microwave the next day.

kosher salt
3/4 lb linguine
3 tablespoons unsalted butter
2 1/2 tablespoons olive oil
1 1/2 tablespoons minced garlic (6 cloves)
1 lb large shrimp, peeled and deveined (about 16 shrimp)
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest of, grated
3 tablespoons fresh lemon juice (1 1/2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Steps:

  • Drizzle some oil in a large pot of boiling salted water, add the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
  • Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat.
  • Add the garlic, saute for 1 minute. Be careful, the garlic burns easily!
  • Add the shrimp, 1 teaspoon of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often.
  • Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes.
  • Toss to combine.
  • When the pasta is done, drain the cooked linguine and then put it back in the pot.
  • Immediately add the shrimp and sauce, toss well, and serve.

2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
2 teaspoons chopped fresh parsley or 3/4 teaspoon parsley flakes
1 tablespoon lemon juice
1/8 teaspoon salt
Grated Parmesan cheese, if desired

Steps:

  • In 10-inch skillet, heat oil over medium heat. Add shrimp and remaining ingredients except cheese. Cook 2 to 3 minutes, stirring frequently, until shrimp are pink. (Do not overcook shrimp or they will become tough.) Remove from heat. Sprinkle with cheese.

2 lbs shrimp, in the shell, 12 to 15 count
3 tablespoons olive oil
2 tablespoons dry white wine
kosher salt & freshly ground black pepper
12 tablespoons unsalted butter, at room temperature
4 teaspoons minced garlic (4 cloves)
1/4 cup minced shallot
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaf
1/4 teaspoon crushed red pepper flakes
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1 extra-large egg yolk
2/3 cup panko breadcrumbs (Japanese dried bread flakes)
lemon wedge, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, devein, and butterfly the shrimp, leaving the tails on.
  • Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.
