SHRIMP SALAD
Steps:
- Bring 5 quarts of water, 3 tablespoons salt, and the lemon to a boil in a large saucepan. Add half the shrimp and reduce the heat to medium. Cook uncovered for only 3 minutes or until the shrimp are barely cooked through. Remove with a slotted spoon to a bowl of cold water. Bring the water back to a boil and repeat with the remaining shrimp. Let cool; then peel, and devein the shrimp.
- In a separate bowl, whisk together the mayonnaise, mustard, wine or vinegar, 1 teaspoon salt, pepper, and dill. Combine with the peeled shrimp. Add the red onion and celery and check the seasonings. Serve or cover and refrigerate for a few hours.
SHRIMP STACK SALAD
Steps:
- 1. FOR THE SHRIMP SALAD: Whisk the olive oil, champagne vinegar, lemon zest, mustard, salt, and pepper together in a small bowl. Measure 3 tablespoons of the vinaigrette into a medium bowl and mix with the mayonnaise. Add the shrimp to the mayonnaise mixture and toss to coat. Cover with plastic wrap and refrigerate until needed. Set the remaining vinaigrette aside. 2. FOR THE GAZPACHO SALSA: Toss the yellow bell pepper, mango, tomato, red onion, jalapeño, cilantro, salt, pepper, olive oil, and sherry vinegar in a medium bowl and set aside. 3. FOR THE AVOCADO SALSA: Toss the avocado, salt, pepper, and lime juice in a medium bowl and set aside. 4. TO ASSEMBLE: Divide the shrimp, and both salsas into 6 portions. Place a 3 inch wide round biscuit cutter in the center of an individual plate. Use a slotted spoon to press a portion of the Avocado Salsa into the bottom of the cutter using the back of a soup spoon. Lift the cutter off the plate slightly to reveal some but not all of the avocado. Holding the cutter aloft, press a portion of the Shrimp Salad evenly into the cutter on top of the avocado. Lift the cutter farther to reveal some but not all of the shrimp salad. Holding the cutter aloft, use a slotted spoon to press a portion of the Gazpacho Salsa evenly into the cutter on top of the shrimp. Gently lift the cutter up and away from the plate to reveal the shrimp tower. 5. Dress the salad greens with the remaining champagne vinaigrette. Serve immediately.
SHRIMP SALAD
Using plenty of lemon - both the zest and juice - is the secret to this tangy, creamy shrimp salad. If you're using this to make sandwiches, chop the shrimp into pieces before adding them to the dressing. You can also leave the shrimp whole for an elegant salad, served with lettuce, avocado, and other vegetables if you like. If you're starting with precooked shrimp, you can skip the first step entirely.

- Bring a medium pot of salted water to a simmer. Slice one of the lemons and add to the pot, along with the shrimp. Simmer, never letting the water boil if you can help it, until the shrimp turn opaque, 2 to 4 minutes, depending on their size. Drain well, and discard the lemon slices. If you like, you can chop the cooked shrimp into smaller pieces.
- Grate the zest from the remaining lemon into a large bowl. Halve the naked lemon and squeeze the juice into the bowl. Whisk in the mayonnaise and oil.
- Add the celery, onion, herbs and cooked shrimp, tossing to combine. Season to taste with salt and pepper. Cover and refrigerate until ready to eat. Serve with lettuce and avocado, if you like.
SHRIMP SALAD
This recipe came from my sister, many years ago. It's made the same way as potato salad only you substitute shrimp and crackers for the potatoes. It's always the first thing to disappear at a party. I don't know if it was ever published anywhere or how many it serves.

- Boil and season shrimp, to your taste.
- (To save alot of time, buy the shrimp that are precooked and already peeled).
- Boil eggs.
- When shrimp are done cut into small pieces.
- Chop eggs.
- Take one stack of the crackers of your choice and crush them. I prefer the Ritz.
- In a large bowl mix crushed crackers and eggs; add pickle relish and mayo as you would for potato salad.
- Add shrimp and French dressing.
- Mix well. Spread on the rest of the crackers and enjoy.
