SAUSAGE AND SPINACH FETTUCCINE ALFREDO RECIPE
This easy fettuccine alfredo recipe features a silky smooth sauce made with butter and parmesan cheese, cooked sausage, and lightly wilted spinach. You need less than 20 minutes to make it and there isn't a splash of cream in sight.

- Add sausage to a wide skillet over medium-low heat. Cook, breaking up the sausage with a wooden spoon until crispy; about 10 minutes. (While the sausage cooks, move on to cooking the pasta.)
- Meanwhile, bring 3 quarts of water to a boil in a large pot. Add one tablespoon of salt and the fettuccine. Cook, stirring once or twice, for 3 minutes less than the suggested cooking time on the package. The pasta will finish cooking when making the sauce. Reserve 1 1/2 cups of the pasta cooking water then drain pasta.
- Add parmesan cheese, butter, spinach, 1 cup of reserved cooking water, and the drained pasta to the skillet with the cooked sausage. Set the skillet over low heat. Use tongs to toss the fettuccine, butter, and cheese around the pan for one minute. Take the pan off of the heat then cover the skillet with a lid. Leave for one minute.
- Uncover the skillet, toss the pasta a few more times in the sauce. If the pasta looks dry, add a splash more pasta water. If it looks wet, don't worry, the pasta absorbs some the extra moisture as it cools.
- Serve fettuccine with a few grinds of pepper and a sprinkle of extra parmesan cheese on top.

- Heat butter and olive oil in a large skillet pan over medium-high heat. Add sausage, frozen vegetables, and mushrooms. Saute until sausage is almost fully cooked, onions are tender, and any liquid from the frozen vegetables has almost fully evaporated, 10 to 12 minutes. Stir in Creole seasoning, garlic, and pepper; cook for 2 minutes. Add shrimp, Alfredo sauce, and Parmesan cheese. Cook and stir until sauce has thickened and shrimp are bright pink on the outside and the meat is opaque, about 5 minutes.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, 8 to 10 minutes. Drain fettuccine, top with shrimp-sausage mixture, and sprinkle with bread crumbs and parsley.

SHRIMP FETTUCCINE ALFREDO
This take on a classic Italian-American recipe is super easy to make. Slightly reducing the cream and adding a hefty dose of cheese means you don't have to use flour to thicken the sauce.

- Bring a large pot of water to a boil, and salt generously. Add the pasta, and boil according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil.
- Meanwhile, arrange the shrimp in a single layer on a large pie pan or paper plate, and pat them with a paper towel until completely dry. Season with salt and pepper.
- Heat a large skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and invert the plate of shrimp over the skillet so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, until the underside is pink, 1 to 2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes more. Transfer the shrimp to a bowl.
- Reduce the heat to medium, and add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce warm.
- Whisk the Parmigiano-Reggiano into the sauce. Add the shrimp and cooked pasta, and toss well. Season with salt and pepper. Serve hot in heated bowls.

Thick and Creamy! The sauce is just like the tasty alfredo sauces in italian restaurants. Easy and very well flavored. We enjoy this quite often either with shrimp or chicken. The bits of a plum tomato on top blends well with the creamy sauce and adds flavor. A pretty and wonderful dish!!!
