1 1/2 cups Flour ( see post for gluten free alternative)
1 tsp Baking Soda
1 tsp Ground Cinnamon
3/4 cup Splenda
1/2 cup Surkin Gold
1 cup Butter
1 tsp Vanilla Extract
2 Eggs
3 cups Rolled Oats
1 cup Raisins

Steps:

  • Preheat your oven to 350. Prep a pan for nonstick- I use parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and ground cinnamon. Set this bowl aside.
  • Now in a mixing bowl, cream together the granular sugar alternative and the butter. Then add the vanilla and the eggs, gently stirring them into the mixing bowl
  • For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Then continue mixing the cookie dough until the ingredients are mixed together.
  • Next, stir in the oatmeal and raisins by hand. Bake these cookies for 10-12 minutes or until the edges begin to brown

1/2 c . oat flour
3/4 c . oats
1 t . baking powder
1/4 t . sea salt
1 t . cinnamon
1 T . coconut sugar or any granulated sugar
2 T . coconut oil
1 1/2 t . vanilla extract
4-5 T . milk of your choice (, as needed)
3 T . raisins

Steps:

  • Preheat oven to 375 degrees.
  • Mix dry ingredients (flour, oats, baking powder, salt, cinnamon, sugar).
  • Stir in oil, vanilla, raisins, and milk, adding enough milk to moisten the flour and oats and make a dough that sticks together, but isn't overly wet.
  • Form balls with the dough (8-10).
  • Place the balls of dough onto a parchment paper-lined baking sheet and press down on the tops a bit with your fingers.
  • Bake 10 minutes until firm to the touch.
  • Cool and enjoy!

½ teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon salt
½ cup low fat margarine
½ cup packed brown sugar
5 (1 gram) packets Acesulfame Potassium sweetener
1 egg
1 teaspoon vanilla extract
1 ¼ cups rolled oats
½ cup chopped raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • Sift together the flour, baking powder, cinnamon, ginger and salt, and set aside. In a medium bowl, cream together the margarine, brown sugar and sugar substitute. Stir in the egg and vanilla. Add sifted ingredients and stir until combined, then mix in the oats and raisins.
  • Drop cookies by rounded teaspoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on the baking sheets.

Steps:

  • In a medium bowl, combine the raisins, water, egg whites, and molasses.

3/4 cup white whole wheat flour (sub a quarter unbleached all purpose for a lighter cookie)
3/4 teaspoon baking soda

1 dash nutmeg (optional, but gives more oomph) (optional)
1 dash salt (optional)
1/2 cup non-hydrogenated margarine, softened (Earth Balance)
1/2 cup brown sugar, packed
1/8 cup raw sugar
3/4 tablespoon pure vanilla extract
1 1/2 teaspoons Ener-G Egg Substitute (1 1/2 teaspoon Ener-G plus 2 tablespoons warm water)
1 1/4 cups organic old fashioned oats (instant works alright too)

1 teaspoon vanilla

1 1/2 cups old fashion oatmeal

Steps:

  • Mix brown sugar thru vanilla together.
