Simple Kale Spinach Salad with Avocado Green Goddess Dressing image

Who doesn't love a good simple salad and all the green goddess dressing? This homemade avocado-based dressing and salad recipe is vegan, paleo, and Whole30! Add your favorite lean protein for a great lunch option.

2 cups spinach
2 cups chopped kale, massaged with olive oil
1 pint cherry tomatoes, halved
1 TBS hemp hearts
3/4 cup water
1/4 cup extra virgin olive oil
1 1/2 medium avocados (or 2 small), pitted and fleshed
1/2 cup fresh basil leaves (a small handful)
2 TBS tahini
1 TBS apple cider vinegar
1 tsp minced garlic
1/2 tsp pink salt, to taste

Steps:

  • Toss spinach and kale in large bowl, top with cherry tomatoes and hemp hearts. Set aside.
  • In a small blender or food processor add all of your dressing ingredients-if using a NutriBullet it helps if you add the ingredients in the order above-and process until smooth. Dressing is pretty thick, so if you want it thinner you can add more water 1-2 tablespoons at a time.
  • Toss dressing with salad, or serve individually. Enjoy!

2 bunches kale, stemmed and finely chopped
1 lemon, juiced
2 ripe avocados, mashed
1 pint grape tomatoes, quartered
1 bunch green onions, sliced
2 tablespoons olive oil
6 cloves garlic, diced
1 teaspoon salt
½ teaspoon cayenne pepper

Steps:

  • Combine kale and lemon juice in a bowl. Vigorously massage kale by squeezing handfuls for about 1 minute. Add avocados, tomatoes, and green onions.
  • Mix together olive oil, garlic, salt, and cayenne pepper in a small bowl. Pour dressing over salad and mix well. Serve immediately.

2 tablespoons olive oil
1 red bell pepper, diced
2 garlic cloves, diced
1 bunch of Kale, chopped
1 bunch of spinach, chopped
Salt and freshly-ground black pepper to taste
4 tablespoons balsamic vinegar

Steps:

  • Heat the oil in a pan and cook red bell pepper, garlic, and kale about 5 minutes, covered. Add spinach, salt and black pepper, and cook about 5 minutes more. Stir in the balsamic vinegar. Serve hot.

Brussels Sprout and Kale Salad with Green Goddess Dressing image

2 cups rustic bread, torn into 1/4-inch pieces
1/3 cup olive oil
Kosher salt and freshly ground black pepper
1 ripe avocado, pit removed and flesh scooped out
2 cloves garlic, sliced
1 cup buttermilk
1/2 cup sour cream
1/4 cup white wine vinegar
1/2 cup finely chopped fresh dill
1/2 cup finely sliced scallion
3 cups shaved Tuscan kale
3 cups shaved Brussels sprouts
1 cup finely grated Parmesan

Steps:

  • Set up your grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • To a food processor, add the torn bread and pulse until you have some very fine and some larger breadcrumbs. Transfer to a cast-iron pan. Drizzle with the olive oil and season with salt and pepper. Toss to coat. Place on the indirect-heat side of the grill, close the lid and bake until golden brown and crispy, 10 to 12 minutes.
  • To a blender, add the avocado, garlic, buttermilk, sour cream and vinegar. Season with salt and pepper, then blend until smooth. Pour into a mixing bowl and mix in the dill and scallions. To a large mixing bowl, add the kale. Massage the kale until it darkens and softens. Add the Brussels sprouts and toss to combine. Dress with as much dressing as you'd like. Top with the croutons and cheese. Serve! Any remaining dressing will keep in the refrigerator for up to 5 days.

  • In a blender combine the avocado, mayonnaise, anchovies, green onion, lemon juice, garlic, and salt and pepper. Process until smooth, then chill for 24 hours before serving.

½ bunch kale - stems removed and discarded, leaves torn into bite-size pieces
½ bunch fresh spinach, torn
½ head romaine lettuce, torn
1 large carrot, diced
1 large cucumber, diced
½ red bell pepper, diced
½ cup balsamic vinegar
½ cup extra-virgin olive oil
1 tablespoon lemon juice
1 pinch sea salt
1 pinch ground black pepper
1 pinch garlic powder
1 pinch lemon pepper

Steps:

  • Toss kale, spinach, lettuce, carrot, cucumber, and red bell pepper together in a large mixing bowl.
  • Mix balsamic vinegar, olive oil, lemon juice, sea salt, pepper, garlic powder, and lemon pepper in a jar with a tight-fitting lid; seal and shake until mixed completely. Drizzle dressing over salad and toss to coat.
