1/4 cup sugar
1 teaspoon cornstarch
Dash salt
1/4 cup water
1 cup fresh or frozen blueberries
1/2 teaspoon grated lemon zest
1-1/2 teaspoons lemon juice
Vanilla ice cream

Steps:

  • In a small saucepan, combine sugar, cornstarch and salt. Gradually whisk in water until smooth. Add blueberries, lemon zest and juice; bring to a boil over medium heat, stirring constantly. Cook and stir until thickened, 2-3 minutes (some berries will remain whole). Serve warm or chilled over ice cream.

2 cups blueberries, fresh or frozen
2 Tbs lemon juice
2 Tbs sukrin 1
2 Tbs water
⅛ tsp xanthan gum

Steps:

  • Place blueberries, lemon juice, erythritol and water in a small saucepan and bring to a simmer
  • Simmer on a low heat for 8-10 minutes or until the blueberries have started to break down
  • Remove pan from heat and sprinkle in the xanthan gum a small bit at a time, stirring continuously
  • The sauce will thicken more as it cools. Serve either warm or chilled
