SIMPLE SAUSAGE MEAT RAGU

The best sausage meat pasta recipe to whip up

olive oil
6 pork sausages
2 sliced onions
2 crushed garlic cloves
1 tsp chilli flakes (or whatever desired heat you like)
1 tsp fennel seeds
2 x 400 g chopped tomatoes
splash of red wine ((optional))
grated Parmesan for serving
chopped parsley for serving
300 g Pappardelle or Rigatoni pasta ((I like getting the fresh pasta but when in a rush, the dried pasta is just as good))

Steps:

  • Heat a few tablespoons of olive oil in a frying pan pan and sweat off your onions and garlic.
  • Cut the skin of the sausages and pinch small pieces of sausage into the pan and cook until browned. Stir in a pinch of salt.
  • Add chilli and fennel and cook for around 1 minute.
  • Pour in the tomatoes and a splash of wine and simmer for 20 minutes.
  • During this time, cook the pasta as directed on the packet. (Don't forget to add a couple of tablespoons of the pasta 'juice' into the pan with the meat etc simmering - adds a bit of flavour and sauce-y-ness)
  • When the pasta is done, strain and add it to the pan with the ragu. Stir in so the sauce gets all over the pasta.
  • Serve with chopped parsley and Parmesan.

1 lb plain Italian sausage
2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup dry white wine
3 lbs fresh plum tomatoes, peeled, seeded, and chopped (or 28 oz. can imported Italian peeled tomatoes with their juice, passed through a food mill)
salt
fresh ground black pepper
3 -4 fresh basil leaves, torn into bits

Steps:

  • Remove the sausage from the casings.
  • Chop the meat finely.
  • In a large pot, heat the oil over medium heat.
  • Add the sausage meat and the garlic.
  • Cook, stirring often, until the pork is lightly browned, about 10 minutes.
  • Add the wine and bring to a simmer.
  • Cook until most of the wine evaporates.
  • Stir in the tomatoes and salt/pepper to taste.
  • Bring to a simmer.
  • Decrease heat to low.
  • Cook, stirring occasionally, until the sauce is thickened, about 1 hour 30 minutes.
  • Stir in the basil just before.
  • Serve hot over cooked hot pasta.

1/2 lb Italian sausage
1/2 cup onion, chopped
3/4 teaspoon garlic, minced
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon dried oregano
1/8 teaspoon ground black pepper
1 (15 ounce) can whole canned tomatoes, chopped, juices reserved
1 (8 ounce) can tomato sauce
1 tablespoon tomato paste
1/4 cup dry red wine
1/4 cup heavy cream
1 pinch sugar

Steps:

  • Add sausage and cook, stirring, until brown and the fat is rendered, about 4 minutes.
  • Add the onions, garlic, crushed red pepper salt, basil, oregano and black pepper, and cook, stirring, until soft, 4 minutes. Add the tomatoes and their juices, tomato sauce, tomato paste, wine, cream, and sugar, and stir well.
  • Bring to a simmer and cook, uncovered, stirring occasionally, until thick and the flavors are blended, about 30 minutes, adding water as necessary to keep from getting too thick.

2 tablespoons olive oil
1/4 lb pancetta
2 lbs heirloom tomatoes, cored
5 fresh bay leaves or 2 dried bay leaves
2 tablespoons fresh oregano
1 tablespoon fresh rosemary
1 lb sausage
1 tablespoon olive oil
5 -6 garlic cloves

Steps:

  • Preheat a roasting pan in a 350F (180C) oven. Add olive oil and pancetta; return to oven until pancetta is crispy. Push to one side and add herbs.
  • Put tomatoes into roasting pan, core hole down. Return to oven until tomato skins blister, about 5 minutes. Pinch off tomato skins. Toss carefully to keep tomatoes from falling apart.
  • Drizzle sausage with olive oil and rub in well. Place sausages into pan, pushing down amongst the tomatoes. Toss in garlic cloves. Sprinkle with salt and pepper. Return pan to oven for 1 hour, turning sausages once or twice.
  • Serve with crusty Italian bread, polenta or rice. Drizzle with a little high-quality balsamic vinegar.
