SIMPLE MARINATED SHRIMP

My easy crowd-pleasing recipe is prepared a day ahead of time, cutting down on the need for party-day fuss. I always seem to get a lot of requests for the recipe whenever I make it for a special occasion. -Margaret DeLong, Lake Butler, Florida

2 pounds cooked medium shrimp, peeled and deveined
1 medium red onion, sliced and separated into rings
2 medium lemons, cut into slices
1 cup pitted ripe olives, drained
1/2 cup olive oil
1/3 cup minced fresh parsley
3 tablespoons lemon juice
3 tablespoons red wine vinegar
1 garlic clove, minced
1 bay leaf
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a 3-qt. glass serving bowl, combine shrimp, onion, lemons and olives. In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat. , Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before serving.

This recipe was clipped from an insert that came with one of my cooking magazines. I think it is a good recipe because it uses ingredients that most people generally have in their pantries and fruit bowls (except the seafood of course).

1/2 cup soy sauce
2 tablespoons brown sugar
1 teaspoon grated lemon peel
1/4 cup lemon juice

Steps:

  • Combine all ingredients in a plastic food storage bag or marinade dish.
  • Add 4- 6 oz seafood fillets of your choice.
  • Refrigerate for at least 40 minutes.
  • Discard marinade and broil seafood for 3 to 4 minutes on on each side or until fish flakes easily with a fork.

Easy marinade for flavorful shrimp with a little kick. My family loves these and the marinade is also great on grilled steak. Serve with a salad and grilled potatoes for a yummy dinner or by themselves as a great appetizer.

⅓ cup olive oil
¼ cup ketchup
2 tablespoons balsamic vinegar
2 tablespoons minced garlic
1 tablespoon dried cilantro
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon cayenne pepper
2 pounds large shrimp, peeled and deveined
metal skewers

Steps:

  • Combine olive oil, ketchup, balsamic vinegar, garlic, cilantro, paprika, salt, and cayenne pepper in a large bowl. Add shrimp and coat well. Chill in the refrigerator for 30 minutes to 1 hour.
  • Preheat a grill for medium-high heat and lightly oil the grate. Thread shrimp onto skewers.
  • Cook shrimp on preheated grill until pink and opaque, 2 to 3 minutes on each side.

This recipe was created for the Fish and Seafood Forum Wild Card challenge for ZWT6. This marinade can be used for any fish or shrimp.

6 tablespoons extra virgin olive oil
3 tablespoons garlic, minced
2 teaspoons fresh thyme, chopped
1/4 cup fresh basil, chopped
3 tablespoons Greek oregano, chopped
1 lemon, zested
4 tablespoons lemon juice
1/4 cup ouzo
salt and pepper, to taste

Steps:

  • Heat the olive oil in small skillet over medium heat.
  • Add garlic and saute for 2-3 minutes to infuse the garlic flavor in the oil.
  • Remove from heat; cool.
  • Combine the garlic mixture and all other ingredients in a small bowl.
  • Marinate fish or shrimp in a zip lock bag for 3-4 hours.

10 large red Thai chilies, seeded and chopped
6 cloves garlic, peeled and chopped
15 shallots, peeled and chopped
1 4-inch piece fresh turmeric, peeled and chopped, or 1 1/2 teaspoons ground turmeric
1 medium tomato, skinned and seeded
1 4-inch piece ginger, peeled and chopped
1 tablespoon coriander seeds
10 candlenuts
1 teaspoon dried shrimp paste
1/4 cup vegetable oil
2 stalks lemongrass, peeled and bruised
1 teaspoon palm sugar
2 tablespoons tamarind paste
1 1/2 teaspoons salt

Steps:

  • In a food processor, combine the chilies, garlic, shallots, turmeric, tomato, ginger, coriander, candlenuts and shrimp paste. Process until the ingredients are well ground but not pureed.
  • In a medium-size saute pan, heat the oil over medium heat and add the chili mixture, lemongrass and palm sugar. Cook, stirring occasionally, for 10 minutes. Remove from the heat and cool to room temperature. Remove the lemongrass stalks and stir in the tamarind paste and salt. Use as a marinade for seafood and as a condiment. Store, covered, in the refrigerator for up to three weeks.

Number Of Ingredients 8

1 12-ounce bottle light-colored beer (preferably lager style)
3/4 cup fresh lime juice
6 garlic cloves, minced
1 teaspoon powdered chicken bouillon base (such as Knorr Swiss)
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon hot pepper sauce
1 teaspoon ground black pepper

Steps:

  • Whisk all ingredients in medium bowl to blend. Let marinade stand 1 hour before using. (Can be prepared 1 week ahead. Cover marinade and refrigerate. Rewhisk before using.)
