SIZZLING BEEF FAJITA SALAD



Sizzling Beef Fajita Salad image

Number Of Ingredients 17

1 1/2 pounds skirt steak
2 tablespoons vegetable oil
1 1/2 cups thinly sliced red bell peppers
1 1/2 cups thinly sliced green bell peppers
1/2 cup thinly sliced red onion
2 cloves garlic minced
3 cups fresh spinach torn into large bite sized pieces
1 to 1 3/4 pound Bread Bowl
MARINADE
4 cloves garlic minced
1/4 cup fresh lime juice
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chile powder
1 teaspoon ground coriander
1 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • 1. In a large bowl, whisk together all of the marinade ingredients. Add the steak and turn to coat. Cover and refrigerate at least 2 hours, turning the steak occasionally as it marinates. 2. Preheat the broiler. 3. Heat the oil in a large skillet over high heat. Add the bell peppers, onion, and garlic, reduce the heat to low, and sauté the mixture about 7 minutes, or until the peppers and onions are soft. Turn off the heat. 4. Broil the steak about four inches from the heat source for 5 minutes on each side, or until fully cooked. Transfer the meat to a cutting board and let stand for 10 minutes before thinly slicing. 5. Add the meat to the skillet with the sautéed vegetables, and heat for a minute or until the mixture sizzles. 6. Place the spinach in the bottom of the bread bowl, top with the sizzling fajita mixture, and serve.

2 teaspoons chopped fresh cilantro
1 1/2 lb ground beef
1 medium onion, finely chopped (1/2 cup)
1 teaspoon garlic powder
1 teaspoon chipotle chile pepper powder
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
3 slices (3/4 oz each) pepper Jack cheese, cut into quarters
12 mini burger buns (about 3 inches in diameter)
12 leaves curly leaf lettuce
24 grape tomatoes

Steps:

  • Heat gas or charcoal grill. In small bowl, mix mayonnaise and cilantro; set aside.
  • In large bowl, mix beef, onion, garlic powder, chile pepper powder, salt and pepper. Shape into 12 (3 1/2-inch) patties, about 1/2 inch thick.
  • Place patties on grill over medium heat. Cover grill; cook 3 to 4 minutes. Turn; top each patty with 1 cheese slice quarter. Cover grill; cook 3 to 4 minutes longer or until cheese is melted and meat thermometer inserted in center of patties reads 160°F. Add buns, cut sides down, to grill for last 1 to 2 minutes of cooking time or until lightly toasted.
  • Spread mayonnaise mixture evenly on bun bottoms. Top with burgers; cover with bun tops. Garnish with lettuce and tomatoes threaded on toothpick.

1 tbsp olive oil
400g pack good quality sausages
1 red onion , roughly chopped
1heaped tbsp wholegrain mustard
1 tbsp light muscovado sugar
16 cherry tomatoes
2 Little Gem lettuces
1large avocado
¼ cucumber
1 tbsp red wine vinegar
crusty bread , to serve

Steps:

  • Heat the oil in a wok or deep frying pan. Using scissors, snip the sausages into quarters straight into the pan. Throw in the onion, and fry for a minute or two, stirring every now and then to brown everything. Spoon in the mustard and sugar, tip in the tomatoes and cook for a few minutes more, stirring occasionally, until the tomatoes are just beginning to split and the mixture is coated in the sweet mustard glaze.
  • Meanwhile, separate the lettuces into leaves, peel, stone and slice the avocado and halve and slice the cucumber. Mix them together and pile onto a platter. Spoon the hot sausage mixture on top. Add the vinegar and 1 tbsp water to the pan and stir it over the heat to dislodge all those tasty flavourings from the pan. Spoon the pan juices over the salad and serve with crusty bread.
