There is nothing like a sweet slice of my 4-ingredient homemade fresh strawberry pie recipe, made with juicy strawberries and strawberry jello in a perfectly textured pie crust.

1 cup sugar
1 cup water
3 tbsp strawberry gelatin mix
1 pint fresh strawberries
3 tbsp cornstarch
1 pie crust, cooked and cooled (The recipe for my crust may be found here. I made a double recipe for a thicker, fluted crust.)

Steps:

  • Combine the sugar, cornstarch, and dry gelatin mix in a saucepot and stir together. Add the water and cook over medium-high heat until thick and clear, stirring constantly to prevent scorching.
  • Set this pie filling aside and let it cool.
  • Wash and hull strawberries, cut them in half, and then arrange them in the pie crust. When the filling is cool, pour it over the strawberries. Cover and chill the pie in the fridge until ready to serve. Serve with whipped cream. Think of me when you eat a piece :).

1 9 inch frozen pie shell
1 package jell-o strawberry gelatin
1/2 cup sugar
3 tablespoons cornstarch
3/4 cup ginger ale
1 quart fresh strawberries, sliced in half (or quarters or any other way you like them)

Steps:

  • Bake the pie shell according to the directions on the package and set aside to cool.
  • In a medium saucepan, combine the remaining ingredients except for the strawberries over medium heat.
  • Cook, stirring occasionally, for 5-7 minutes or until Jell-O has dissolved and the mixture is clear.
  • Remove mixture from heat, let stand about 5 minutes.
  • Stir in strawberries and pour into the pie shell.
  • Chill for about 4 hours or until set.

1/2 pound beef suet, chopped
3/4 pound raisins
1/2 pound sultanas (golden raisins)
3/4 pound Granny Smith apples, chopped
3/4 pound currants
3/4 pound brown sugar
1/4 pound blanched almonds, chopped
1/2 pound combined lemon and orange peel, chopped
2 lemons, grated and juiced
Pulp of 1 vanilla bean
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
5/8 cup brandy
4 cups flour, sifted
1 1/2 cups cold, unsalted butter, cut into small pieces
2 egg yolks
1 tablespoon superfine sugar
1/2 teaspoon salt
8 tablespoons ice water
1/4 cups whipped heavy cream
1/4 cups whole, hulled strawberries
Black pepper, to garnish

Steps:

  • Mincemeat: Make at least one month ahead. Mix together first 15 ingredients. Pack in sterile canning jars, pour in brandy, and seal according to jar manufacturer's instructions.
  • Pastry: Place flour in medium bowl. Make well in center of flour and add butter, 1 egg yolk, sugar, salt and 2 tablespoons of the water to the well. With fingertips, mix only these "well" ingredients together, then begin to work in the surrounding flour, adding ice water as needed. Once combined, knead several times and place pastry on a plate. Chill in the refrigerator for an hour or so.
  • Preheat oven to 400 degrees. Cut pastry in half. Roll 1 half to fit a 10-inch pie pan. Prick all over with a fork. Cut parchment paper to fit inside pastry shell. Cover parchment evenly with dried beans or pie weights. Bake for 15 minutes. Remove paper and weights. Allow pastry to cool.
  • Meanwhile, roll out the other pastry half so it is big enough to cover the pie. Fill the cooled pastry crust with mincemeat. Cover with unbaked pastry, crimp edges, glaze with the remaining egg yolk, and poke hole in center. Bake for 30 minutes until golden brown.
  • Remove pie from oven and cool. Before serving, cover with whipped cream and then strawberries. Sprinkle strawberries with black pepper to enhance their sweetness.

⅓ cup all-purpose flour
½ teaspoon ground cinnamon

  • Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.
  • Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.
  • Bake for 35 to 45 minutes, or until the crust is slightly browned.

1 sheet refrigerated pie crust
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries
Whipped cream, optional

Steps:

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.

1 cup graham cracker crumbs
¼ cup white sugar
¼ cup butter, melted
1 tablespoon unflavored gelatin
¼ cup cold water
1 cup heavy whipping cream
½ cup chopped strawberries
⅓ cup white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl; mix until evenly moistened and press into the bottom and sides of a 9-inch pie pan.
  • Bake in the preheated oven until the crust is lightly browned and smells toasted, about 12 minutes. Remove from the oven and cool.
  • Soak gelatin in cold water for 3 minutes. Heat the water and gelatin in the top of a double boiler set over simmering water, stirring frequently, until gelatin is completely dissolved.
  • Beat whipping cream in a chilled glass or metal bowl until soft peaks form.

5 tablespoons cornstarch
7 ounces lemon-lime flavored soda (I use 7-Up)
1 quart strawberry, cleaned and stems removed
2 drops red food coloring (optional)
1 pie shell, baked and cooled
whipped topping (optional)

Steps:

  • In a pot, blend sugar and cornstarch; add lemon-lime soda.
  • Cook over medium heat, stirring until smooth and thick.
  • Add strawberries, cook for a few minutes, and then add food coloring (if desired).
  • Pour into baked and cooled pie shell.
  • Chill for a few hours. Serve with whipped topping, if desired.
