TENDER BREADED TURKEY CUTLETS

Tender Breaded Turkey Cutlets image

I came up with this thinking of a different way to serve the turkey breast. The sour cream seals in the moisture and no one would ever guess that it's in there. A great new way to try turkey. This is my husband's new favorite turkey dish.

RUSSIAN-STYLE TURKEY CUTLETS

Russian-Style Turkey Cutlets image

So simple and so good--these cutlets are a case where the whole is greater than the sum of the parts. Ground turkey is often disappointingly dry, but here a bit of butter and cream keep the meat moist. The butteriness of the juicy cutlets contrasts beautifully with the racy freshness of an uncomplicated red wine. A Beaujolais from France or a merlot from Trentino in Northern Italy or will be perfect.

Provided by NcMysteryShopper

Categories     Lunch/Snacks

Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

2 slices good-quality white bread, crusts removed
1/4 cup half-and-half
1 lb ground turkey
1 egg
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 teaspoon dried dill
5 tablespoons butter, 3 of them at room temperature
1 cup dry breadcrumbs
2 tablespoons cooking oil

Steps:

  • Break the bread into pieces. In a large bowl, soak the bread in the half-and-half until the liquid is absorbed, about 2 minutes. Mix in the turkey, egg, salt, pepper, dill, and the 3 tablespoons room-temperature butter. Put in the freezer for about 10 minutes to firm up.
  • Remove the turkey mixture from the freezer; it will still be very soft. Form the mixture into four oval cutlets and coat them with the bread crumbs.
  • In a large, nonstick frying pan, heat the remaining 2 tablespoons butter and the oil over moderate heat. Cook the cutlets until golden brown and just done, 4 to 5 minutes per side.
  • Menu Suggestions.
  • Sautéed mushrooms are the traditional Russian accompaniment to turkey cutlets. Beets, glazed carrots, and mashed potatoes are other excellent possibilities.

TURKEY CUTLETS MARSALA

Turkey Cutlets Marsala image

Here is a recipe adapted from one written by Elizabeth David, the erudite British cookbook writer who died in 1992. Jill Norman beautifully reanimated it in her 2010 book "At Elizabeth David's Table" and we took it along ever so slightly in the name of ease: lightly browned cutlets in a sauce of Marsala wine. The cooking is gentle, and takes little time. It pairs nicely with a mushroom risotto or a pile of rice.

Provided by Sam Sifton

Categories     brunch, dinner, easy, lunch, quick, main course

Time 15m

Yield 2 servings

Number Of Ingredients 6

4 turkey cutlets, approximately 1 ¼ pounds
Kosher salt and freshly ground black pepper
Flour for dusting
4 tablespoons unsalted butter
1/4 cup Marsala wine
1/4 cup chicken stock, homemade or low-sodium

Steps:

  • Season cutlets aggressively with salt and pepper, then lightly dust them with flour.
  • Melt the butter in a large sauté or frying pan set over medium-high heat, and when it begins to foam, add the turkey cutlets to the pan. Turn the heat down to medium, and cook, gently, for 3 minutes a side, being careful not to allow the butter to blacken.
  • When the second side is just about done, pour the Marsala over the cutlets, and allow it to bubble and combine with the butter. Now do the same with a splash or two of the chicken stock. Cook in the pan for 2 or 3 minutes more.

INDIAN TURKEY CUTLETS

Indian Turkey Cutlets image

This is originally a recipe for outside grilling from Good Housekeeping July 2003. It works just as well inside in my broiler. Tastes like a Tandoori chicken recipe.

Provided by mandabears

Categories     Chicken

Time 20m

Yield 6 serving(s)

Number Of Ingredients 9

2 large limes
1/3 cup low-fat plain yogurt
1 tablespoon vegetable oil
2 teaspoons minced peeled fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 clove garlic, minced
6 turkey cutlets, about 1 1/2 pounds

Steps:

  • Preheat broiler.
  • Grate 1 teaspoon peel from 1 lime and squeeze 1 tablespoon juice.
  • Cut remaining lime into wedges.
  • Reserve for squeezing juice over cooked cutlets.
  • In a large bowl, mix lime peel and juice, yogurt, vegetable oil, ginger, cumin, coriander, garlic and salt.
  • Just before cooking add turkey cutlets to the yogurt mixture and stir to cover cutlets.

EASY TURKEY CUTLETS WITH POTATOES AND MUSHROOMS

Easy Turkey Cutlets with Potatoes and Mushrooms image

Parmesan cheese helps brown the cutlets and keeps them moist during broiling.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 55m

Number Of Ingredients 9

1 pound red potatoes, cut into 1-inch pieces
1 1/2 pounds small white button mushrooms, stems trimmed
2 strips bacon (2 ounces), cut crosswise into 1/2-inch pieces
1/2 teaspoon dried sage
Coarse salt and ground pepper
8 turkey cutlets (3 to 4 ounces each)
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
Grainy mustard, for serving

Steps:

  • Heat broiler. If using a broiler-proof rimmed baking sheet, set rack 4 inches from heat; if using a broiler pan, set rack so that top of pan is 4 inches from heat. On sheet (or pan), arrange potatoes and mushrooms in a single layer. Sprinkle with bacon, sage, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Broil, tossing every 5 to 6 minutes, until potatoes are tender and browned, 20 to 25 minutes. Transfer to a serving bowl (reserve sheet).
  • Place turkey cutlets on sheet; season with salt and pepper, and sprinkle with Parmesan, dividing evenly. Broil until cheese is golden and turkey is opaque throughout, 6 to 8 minutes.
  • Meanwhile, toss potatoes and mushrooms with parsley; season with salt and pepper. Keep warm.
  • Serve turkey cutlets with potato-mushroom mixture, accompanied by grainy mustard.
