EASY HOMEMADE CHILI
Easy homemade chili. Goes great with cornbread or over corn chips for a chili pie! I like to use spicy pinto beans.

Steps:
- In a large saucepan over medium heat, combine the beef and onion and saute until meat is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water.
- Season with the chili powder, garlic powder, salt and ground black pepper to taste. Bring to a boil, reduce heat to low, cover and let simmer for 15 minutes.

This thick zippy stew from Amy Short of Lesage, West Virginia is loaded with familiar ingredients, such as ground beef, tomatoes, kidney beans and chili beans. Chili powder and green chilies season it just right.

Steps:
- In a 2 quart saucepan, brown hamburger in vegetable oil. Add onion and garlic, and cook until the onion is soft. Pour off any excess fat.
- Stir in beans, crushed tomatoes, chili powder, and vinegar. Salt and pepper to taste. Heat to boiling, and reduce heat. Cover, and simmer 30 minutes.

SIMPLE, PERFECT CHILI
This is a recipe by Ree Drummond (The Pioneer Woman) on Food Network. Saw her make this one Saturday morning and it looked so easy and tasty...and it is!!

Steps:
- Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
- After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and /or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

SIMPLE CHILI
This comes from a Betty Crocker cookbook of One Dish Meals and it is so yummy! Its easy to make too, most of the time is for simmering. This is really mild, but could be a great starting point for a spicier chili. ZWT 3: U.S. (chili) and Mexican/tex-mex/S.W. (variation)

- Cook beef, onion and garlic in 3 qt saucepan until beef is brown.
- Stir in remaining ingredients except beans.
- Heat to boiling, reduce heat to low.
- Cover and simmer 1 hour, stirring occasionally.
- Stir in beans.
- Heat to boiling, reduce heat to low.
- Simmer uncovered about 10 minutes, stirring occasionally, until desired thickness.
- To freeze for OAMC: Let chili cool to room temperature and then place into quart-size freezer bag. Remove air and freeze flat on a cookie sheet. Once frozen, can be stored in freezer standing up or stacked horizontally.
- To serve, thaw in fridge overnight and then transfer to a pot and reheat over medium low heat until heated through.

- Season the chicken with salt and pepper.
- Cut the chicken into thin strips then coat in the egg wash and flour.
- Shallow fry for a few minutes on each side, until golden brown.
- Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
- In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
- Add back in the chicken and peppers and stir well in the sauce.
- Serve with rice.

SIMPLE CHILI STEW
One of my favourite weekday dishes! This is my take on a Weight Watchers recipe a friend of mine gave me years ago. I've been making it often ever since, dieting or not! It's quick and simple to make and you can easily adjust it to your personal taste. For a vegetarian version, substitute vegetable broth for the beef broth.

- Chop bell pepper and onion in bite-size chunks.
- Rinse and drain kidney beans.
- Heat oil in frying pan and saute bell pepper and onion chunks until lightly browned, about 2 minutes.
- Add beef broth and the kidney beans.
- Stir in tomato paste, salt (if using), chili powder and oregano.
- Heat gently but do not boil.
- Serve with fresh, crusty bread.
