SINGLE GIRLS WHOLESOME MOLTEN CHOCOLATE CAKE

Steps:
- Preheat the oven to 375 degrees F. Grease an 8 ounce ramekin with cooking spray.In a microwave safe bowl, melt together the butter and chocolate for 15-30 seconds, until melted and smooth. Add the egg, vanilla, and coconut sugar and mix to combine. Stir in the whole wheat flour and salt. Pour the batter into the prepared ramekin. Insert the dark chocolate in the the center. Add the nut butter and then spoon a little batter overtop to seal. Transfer to the oven and bake for 7-10 minutes. Bake 7 minutes for super gooey and 10 for just a little lava. serve with whipped cream or ice cream.

CLASSIC CHOCOLATE LAVA CAKES (FOR 1)
A quick and easy molten lava chocolate cake is packed with real melted chocolate and turns out fudgy on the outside and silky on the inside. Best served with coffee or vanilla ice cream (or better yet, frozen cool whip)

- Preheat oven to 425
- In a microwave-safe bowl, combine butter and chocolate. Microwave for ~1 minute or until butter is melted.
- Whisk the butter and chocolate together until smooth. Add in vanilla and sugar, whisk again. Add in egg, flour, and coffee, whisk again.
- Pour the batter into a sprayed/greased 6oz ramekin.
- Bake for 12 minutes, or until the edges of the cake begin to pull away from the ramekin, and the center is set but still wobbly.
- Remove from oven and let set on the counter for 3-5 minutes. The cake will continue to set/"cook" in the ramekin.
- Once the ramekin dish is cooled enough to touch, place your serving plate on top and flip, tapping the bottom of the ramekin to release the cake. Serve with ice cream, creme fraiche, or whipped cream.

INDIVIDUAL MOLTEN LAVA CAKES
These are so quick and easy. I make them after dinner that way they are nice and gooey. You will need 4 small ramekins. My oven is weird so I cook for maybe 9 minutes I check often to mke sure they are still jiggly. After remving from oven I run a knife around the edges before unmolding. I use a combination of dark and semi sweet chocolate

Steps:
- Position rack in middle of oven and preheat to 450 degrees F. Butter and flour four 4-ounce ramekins.
- Melt chocolate with butter. Remove from heat. Beat eggs, yolks and sugar with an electric mixer on high speed in a deep bowl, 8 minutes, until thick and pale. Whisk chocolate mixture into egg mixture. Whisk in flour.
- Pour batter into ramekins. Place on baking sheet and bake 14 minutes, or until cakes have risen and have a thin crust, sides are set and cakes are slightly jiggly in the center; under baking is better than over baking.
- Carefully invert each cake onto a serving plate and let sit 20 seconds. Unmold by lifting up one corner of mold; cake will fall onto plate. Dust tops with confectioners' sugar and serve immediately.
