1 green bell pepper (diced)
1 medium cucumber (diced)
4.5 ounces sliced black olives (2 (2.25 ounce cans), drained)
1 cup cherry tomatoes (halved)
8 ounces pepperoni (1 package, cut into fourths)
8 ounces Colby Jack Cheese (1 package, cubed)
1 red onion (minced)
16 ounces Italian dressing (1 bottle)

Steps:

  • Cook pasta according to package directions for al dente.
  • Drain pasta and rinse in cold water.
  • Toss cold pasta with remaining ingredients until well combined.
  • Refrigerate for at least 2 hours before serving.

This is something I threw together one day. Prepare the veggies while the pasta cooks and you're done in 10 minutes. I use different kinds of tomatoes, depending on what I have on hand. Cherry or grape tomatoes are easy to just throw in - no cutting required.

8 ounces uncooked rotini pasta
1 avocado - peeled, pitted and diced
1 large tomato, diced
½ cup Ranch dressing
2 tablespoons crumbled cooked bacon

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, until al dente. Drain, and rinse under cold running water to cool.
  • In a bowl, gently toss together pasta, avocado, tomato, dressing, and bacon. Chill until ready to serve.

1-1/4 cups uncooked tricolor spiral pasta
1/4 cup reduced-sodium chicken broth or vegetable broth
3 tablespoons red wine vinegar
1 tablespoon canola oil
1 garlic clove, minced
1 teaspoon sugar
1 teaspoon dried basil
1/2 teaspoon salt
2 cups broccoli florets
1 cup halved cherry tomatoes
1 large sweet red pepper, julienned
1/4 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; rinse under cold water. Drain. In a large bowl, whisk together the broth, vinegar, oil, garlic, sugar, basil and salt. Add pasta, broccoli, tomatoes, pepper and Parmesan and toss to coat.

1 Portuguese or Kaiser roll, halved crosswise
1 tablespoon mayonnaise
3 to 4 ounces sliced fresh turkey breast
2 slices bacon, cooked and cut into 2-inch strips
3 thin slices cheddar cheese
3 slices avocado, 1/4-inch thick
2 slices tomato, 1/4-inch thick
2 leaves romaine lettuce

Steps:

  • Spread both sides of a roll with mayonnaise. On bottom, layer turkey, bacon, cheddar, avocado, tomato and lettuce. Cover with top half of roll. Slice, and serve.

Number Of Ingredients 11

12 oz Rotini Tri Colored Pasta
1 chopped red pepper
1 chopped green pepper
1 sliced cucumber
1 can of sliced black olives
2 tomatoes, chopped
1 small can of mushrooms
1 small package pepperoni (cut into quarters, or you can use the new mini pepperoni)
8 oz block of marbled cheddar, cut into cubes (any cheese will work)
1 red onion (diced)
16 ounces Italian Dressing (any brand works great)

Steps:

  • Cook the pasta as it directs on the package. Pour cooked pasta into a large bowl. Then add red and green peppers, cucumber, sliced olives, tomatoes, mushrooms, pepperoni, cheese cubes, and onion.
  • Pour Italian dressing on salad (you can use fat-free or low-fat if you want). Mix well. Put salad in fridge for a couple of hours before serving. Stir again before serving. Sprinkle grated Parmesan cheese on top.

1/2 cup stuffed Spanish olives
kosher dill pickle
1/2 onion, small
1 (4 ounce) can ripe olives, sliced
1 cup mayonnaise
1 hard-boiled egg, sliced
1 dash paprika

Steps:

  • Cook pasta, drain and rinse in cold water and drain.
  • Dice or chop very small stuffed olives, pickles and onion.
  • Add black olives, cooked pasta.
  • Add enough mayonnaise to taste.
  • Mix well. Add salt and pepper.
  • Slice egg and use to garnish top of salad.
  • Sprinkle with paprika.
