This vegetable side dish is a great alternative to beans when the main dish has a south-of-the-border flair! I have made this with canned ingredients, but the fresh ingredients taste much better!

1 tablespoon olive oil
½ onion, sliced into rings
1 zucchini, cut into 1/4-inch slices
1 yellow squash, cut into 1/4-inch slices
1 ear corn, kernels cut from cob
4 roma (plum) tomatoes, peeled and chopped
1 clove garlic, minced
1 teaspoon ground cumin
salt and ground black pepper to taste
¼ cup chopped fresh cilantro, or more to taste
½ lime

Steps:

  • Heat olive oil in a large skillet over medium heat; cook and stir onion in hot oil until tender, 5 to 10 minutes. Stir zucchini and yellow squash into onion; cook until slightly tender, about 3 minutes. Add corn; cook for 1 minute.
  • Stir tomatoes and garlic into onion mixture; cook and stir until heated through, about 3 minutes. Season with cumin, salt, and pepper. Cook to desired doneness, 5 to 10 more minutes. Sprinkle in cilantro; stir until wilted. Remove from heat and squeeze lime over mixture.

1 small head broccoli, cut into small florets
1 garlic clove, halved
2 teaspoons vegetable oil, such as safflower
Coarse salt and ground pepper
1 sirloin steak (about 5 ounces and 1/2 inch thick)
1/4 teaspoon ground cumin
1/4 cup store-bought salsa

Steps:

  • Preheat toaster oven (or oven) to 450 degrees. On toaster-oven pan (or a rimmed baking sheet), toss together broccoli, garlic, and 1 teaspoon oil; season with salt and pepper. Roast until tender and slightly charred, 10 to 12 minutes, tossing halfway through.
  • Five minutes before broccoli has finished cooking, rub steak with cumin; season with salt and pepper. In a small skillet, heat remaining teaspoon oil over high. Add steak, and cook 1 to 2 minutes per side for medium-rare. Top steak with salsa, and serve with broccoli alongside.

1 large carrot, peeled,cut and boiled
1 potato, peeled,cut and boiled
1 onion, chopped
3 -5 cauliflower florets, washed,cut and boiled
3 -5 French beans, cut and boiled
2 tomatoes, blanched and chopped
2 slices pineapple, cut
2 pieces apples, cut
2 tablespoons oil
salt
1 tablespoon black salt
2 -3 tablespoons tomato ketchup
1/2 teaspoon red chili powder
1 bunch fresh coriander leaves, chopped
1 green capsicum, chopped
1 red capsicum, chopped
3 -5 drops vinegar or 3 -5 drops butter

Steps:

  • First wash all the vegetables nicely in chilled water.
  • Cut the carrot, potato, Frenchbeans and the cauliflower all lengthwise.
  • Boil the above vegetables till half done.
  • In a wok, heat the oil.
  • Add the onions to it.
  • Saute for a few minutes.
  • Add all the boiled vegetables.
  • Saute.
  • Add capsicums, tomatoes, pineapple and apple.
  • Saute for 1 minute.
  • Add salt, red chilli powder, black salt, corriander leaves and Tomato Ketchup.
  • Toss well.
  • Lay one fine leaf of cabbage on a hot iron tawa (griddle).
  • Put the cooked vegetables on it.
  • Just before serving, put few drops of vinegar or butter to bring that steam effect.
  • Lo and behold: Your aromatic sizzler is sizzling and waiting for you to have a great treat!

1/2 cup KRAFT Classic Balsamic Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
2 portobello mushrooms, stems removed
2 red peppers, quartered
1 boneless beef sirloin steak (1 lb.)
4 cups torn mixed salad greens
2 Tbsp. sliced red onions
1/4 cup crumbled goat cheese

Steps:

  • Heat grill to medium-high. Reserve 1/4 cup dressing. Brush remaining dressing onto mushrooms, peppers and steak.
  • Grill, dressing-sides down, 5 min. on each side or until steak is medium doneness (160ºF) and vegetables are crisp-tender.
  • Cut steak and grilled vegetables into strips; place on top of greens. Top with onions, cheese and reserved dressing.

½ cup KRAFT Greek Vinaigrette Dressing, divided
12 each cherry tomatoes
6 medium (blank)s button mushrooms, cut in half
8 large spear (7-1/4" to 8-1/2" long)s asparagus spears, blanched, cut into 2-inch lengths

Steps:

  • Place steak in large resealable plastic bag. Add 1/4 cup of the dressing; seal bag. Refrigerate 30 minutes to marinate. Remove steak from bag; discard bag and marinade.
  • Preheat grill to medium heat. Thread steak onto 12 wooden skewers alternately with the tomatoes, mushrooms and asparagus.

Our mom's steak marinade is the BEST! It's been in our family forever. Mix a few simple ingredients together for the marinade; this steak is so moist and flavorful.

1½ cups vegetable oil
¼ cup Worcestershire sauce
1 teaspoon ground pepper
½ cup apple cider vinegar
¾ cup soy sauce
2 Tablespoons dry ground mustard
⅓ cup lemon juice
6 small steaks

Steps:

  • Mix together vegetable oil, Worcestershire sauce, pepper, apple cider vinegar, soy sauce, dry mustard, and lemon juice in a Ziploc bag or an airtight container (like tupperware or rubbermaid).
  • Add 3 pounds of steak (about 6) to the marinade (any cut of steak will work).
  • Store in fridge to marinate for about 8 hours. Flip over the steaks halfway through marinating.
  • Grill over medium-high heat to your liking

1 teaspoon olive oil
2 tablespoons soy sauce
2 tablespoons white wine
1 -2 clove garlic, minced
1/8 teaspoon hot sauce
2 sirloin steaks
1/2 cup onion, chopped finely
1/4 cup green and red pepper, chopped or sliced into strips
1/2 teaspoon cumin
1/4 teaspoon oregano
2 cloves garlic, minced

Steps:

  • Prepare marinade in large tupperware bowl or large plastic, sealable bag.
  • Place steaks in marinade and turn to cover.
  • Place in fridge overnight, turning steaks occasionally.
  • Spray a small frying pan with cooking spray.
  • Saute onions, peppers, garlic, cumin, and oregano over medium heat for ten minutes.
  • While sauteing the veggies, heat heavy skillet (or electric skillet) to medium-high.
  • Sear steaks for 5-7 mins per side (for medium rare steaks).
  • Place spoonful of veggies on top of steak and serve.
