Make an extra special meal for an extra special person. Create a quick, tasty BBQ's steak sandwich by adding lightly seasoned steak and grilled vegetables to Dempster's Thinfuls Buns.

2 tablespoons prepared horseradish
4 tablespoons mayonnaise
1 teaspoon olive oil
1 cup thickly sliced green and red pepper
2 sirloin steaks (250g)
salt and pepper
4 slices havarti cheese
4 dempster's thinfuls buns

Steps:

  • Preheat BBQ to medium-high.
  • Mix mayonnaise and horseradish in a small bowl and set aside.
  • Toss peppers in oil and grill for about 4 minutes, turning occasionally. Slice into 1/2 inch strips, set aside and keep warm.
  • Season steak with salt and pepper and grill until desired doneness is reached. Allow to rest for 5 minutes.
  • Turn BBQ down to low and grill the Dempster's Thinfuls 2-2 minutes.
  • Cut steaks into slices and assemble the sandwich with all the ingredients. Enjoy!

I tried for years to make a cheese steak as good as the takeout sub shops of southeastern Massachusetts. I think this is about as close as you can come at home. Freezing the steak the day before makes it easy to cut into very thin slices.

2 tablespoons butter
¼ medium onion, sliced
4 large fresh mushrooms, sliced
¼ green bell pepper, sliced into long strips
1 (1/2 pound) well-marbled beef steak of any type, sliced as thinly as possible
3 tablespoons chopped pickled hot peppers
1 teaspoon hot pepper sauce
2 slices sharp Cheddar cheese
salt and pepper to taste
⅓ French baguette, cut in half lengthwise

Steps:

  • Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion; cook and stir until tender. Push onion to the side of the pan, and add the mushrooms. Cook and stir until softened, then add the bell pepper and cook just until tender, about 3 minutes. Remove from the pan with a slotted spoon, and set aside.
  • Add the remaining butter to the skillet. No need to clean the pan, just let it heat up a little bit. Place the steak in the skillet along with the pickled peppers. Season with salt and pepper. The steak cooks really fast, just a couple of minutes. Once the steak is mostly browned, return the onion and pepper to the pan. Cook until heated through.
  • Turn off the heat, and place the slices of cheese over the top of the pile so they can melt. Scoop the whole pile into the awaiting bread, making sure to pour some of the juices onto that wonderful sandwich.

  • Garlic Aioli: Mix mayonnaise and garlic together. Set aside for 30 minutes+ for the flavour to develop (do not keep for more than 3 days tops).
  • Caramelised Onion: Melt butter in a skillet over medium low heat. Add onions and stir to coat in butter. Place lid on (or place a baking tray over skillet) and leave for 20 minutes, stirring once or twice. Remove lid then cook for a further 20 minutes, stirring every now and then, until onion is golden (increase heat slightly if the colour is not changing). Add sugar, vinegar, salt and pepper. Cook for a further 10 minutes until jammy. Remove from heat and keep warm.
