Old Fashioned Blackberry Cobbler image

This blackberry cobbler is made with a light, fluffy pastry crust that absorbs and enhances the deliciously sweet blackberry flavors. Top with ice cream and enjoy!

2 lbs blackberries (frozen or fresh)
1/2 cup granulated sugar
1 1/2 cup water
1/4 cup fresh lemon juice
2 tsp vanilla extract
2 tbsp all purpose flour
1 stick of butter
Pastry/crust
1 1/2 cup all purpose flour
1 tsp baking powder
3/4 cup granulated sugar
1 cup milk

Steps:

  • Place blackberries, 1/2 cup sugar, 1 cup water, lemon juice, and vanilla extract in a pot. Place the pot on a burner, and turn the heat on to medium high. Bring to a boil.
  • In a small cup or bowl, combine 1/2 cup water and 2 tbsp of all purpose flour. Mix, then pour into the blackberry mixture, and stir.
  • Remove the pot from the heat.
  • In a separate bowl, add 1 1/2 cup flour, 3/4 cup granulated sugar, 1 tsp baking powder, and 1 cup water. Mix until the batter is smooth.
  • Place a stick of salted butter in a bake dish, then place the bake dish in a oven preheated on 350. Let the butter melt down, then remove the bake dish out of the oven.
  • Pour the pastry/crust in the center of the bake dish along with the butter.
  • Next, spoon out or pour the blackberry mixture into the center of the dish.
  • Bake the cobbler on 350 F, for about 35 to 40 minutes.
  • Remove the cobbler from the oven, and let cool.
  • Serve along our with ice cream or whipped cream.

2 1/2 cups blackberries
2/3 cup sugar
1 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) plus 2 tablespoons unsalted butter
1 cup heavy cream
Whipped sweetened cream, for serving

Steps:

  • Preheat oven to 350 degrees F.
  • Into a buttered shallow baking dish place blackberries. Sprinkle with 1/3 cup sugar.
  • In the bowl of a food processor combine flour, baking powder and salt. Add butter and pulse to create lumpy mixture. Add cream and pulse until dough forms. Dough will be soft. Spoon dough over blackberries.
  • Melt remaining 2 tablespoons butter and drizzle over mounds of dough. Sprinkle with remaining 1/3 cup sugar.
  • Bake about 30 to 40 minutes or until dough and fruit are cooked through and dough is lightly browned.
  • Serve with whipped sweetened cream.

This is an awesome pie/cobbler. Everyone I've served it to is crazy about it. You can add raspberries or do a fruit medley and you have a versatile cobbler. It's wonderful, but be sure to use a cast iron skillet for the best taste!

1 box refrigerated pie crust or make your own.
1 bag(s) frozen blackberries 10-14 ounces
1 stick butter, melted
1 1/3 c sugar
1/2 c flour
2 Tbsp sugar
1-2 Tbsp butter
1/2 c water

Steps:

  • 1. Preheat oven to 350 Using a No. 7 cast iron skillet, place one crust into skillet, pierce bottom and sides with fork. Bake 7-10 mins and then remove from oven. Increase oven to 400.
  • 2. In large mixing bowl, mix melted butter, 1 1/3 c sugar and flour. Add berries, toss until berries are covered and mixture is crumbly. Gently pour berries into skillet, sprinkle water over berries.
  • 3. Top with 2nd crust. Seal around edges folding crust if needed. Scatter small pieces of butter on top of crust and then sprinkle with sugar. Cut slit in center of crust. Bake 45 minutes. Cool completely and serve spooning into individual serving dishes, add vanilla ice cream or whip cream, if desired.

1 cup white sugar
1/2 cups white sugar
4 cups fresh blackberries (washed)
2 tablespoons cornstarch dissolved in 1/4 cup cold water
1 tablespoon lemon juice (optional)
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons butter (cold)
1/4 cup boiling water
coarse sugar for topping

Steps:

  • Preheat oven to 400.
  • Add 1 cup sugar, 4 cups blackberries and cornstarch that dissolved in cold water to a large ovenproof skillet (like a cast iron or coated cast iron pan).
  • Heat blackberries over medium, stirring frequently until boiling. They will start to change from their dark color to a pink.
  • Boil blackberries for 2-3 minutes until sugar is completely dissolved. Remove from heat.
  • In a mixing bowl, add flour, remaining 1/2 cup sugar, tsp of baking powder, salt and mix well.
  • Add butter ( I find it easier to cut butter into tablespoons) and use a pastry blender to cut in butter until mixture is small and crumbly.
  • Add boiling water and mix just until combined, being careful not to over mix.
  • Spoon dollops of dough onto the top of the blackberries.
  • Sprinkle top of dough with coarse sugar (Note that its fine to sprinkle the whole pan with sugar if you like)
  • Bake cobbler for 20-25 minutes or until brown on top.
  • Remove from oven and let stand until cooled a bit and serve as is or over vanilla ice cream.

6 ounces blackberries
6 ounces raspberries
2 tbsp honey
1 stick cinnamon
1 cup water
1 1/2 cup flour
1 1/2 sticks butter
2 tbsp golden brown sugar
2 tsp baking powder
1 tsp salt
1/3 cup half and half

Steps:

  • Add butter into the flour, brown sugar, baking powder, and salt
  • Cut with a fork, or a mixer if you have one
  • You should have a coarse meal texture when it's done, add in the creamer and mix in. Store in the fridge until ready.
  • With the broiler preheating, cook down your berries in water with honey in a skillet, with a cinnamon stick added. Stir occasionally and bring to a boil, reduce to low heat. about 6 minutes
  • Add the biscuit mix directly on top of the berry reduction, using an ice cream scoop, or a large spoon.
  • Cover and cook on low for 15 minutes, they should be nice and spongy to the touch. Place them in the broiler for 5 minutes or until the biscuits golden brown on top.
  • Serve with some ice cream and enjoy!

1 stick butter
1 1/4 c. sugar
1 c. self-rising flour
1 c. milk
2 c. blackberries (frozen or fresh)

Steps:

  • Melt butter in a microwavable dish. Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all well together. Butter a baking dish.
  • Now rinse and pat dry the blackberries. Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle ¼ cup sugar over the top.
  • Bake in the oven at 350 degrees for 1 hour, or until golden and bubbly. If you desire, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it's done.
