Steps:
- Pour the heavy whipping cream into a large bowl; add the vanilla extract and powdered sugar.
- Mix on low for about 30 seconds until you start to see some foam. Turn it up a little and run it about 30 seconds to a minute, gradually going up in speed until you see stiff peaks form. Don't over whip!
- Use immediately or store in an airtight container in the refrigerator for 2-3 days.
- Place the cubes of chocolate cake into the bottom and sides of a glass serving bowl.
- Spoon the cherry pie filling on top making sure to get down into the chocolate cake too.
- Top with a scoop of homemade whipped cream.
- Garnish with cocoa powder, nuts and a cherry.

- Drain cherries, reserving liquid in a 1-cup measuring cup. Add enough water to measure 1/3 cup; set aside., In a small saucepan, combine sugar and cornstarch; stir in reserved cherry juice mixture until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cherries and lemon juice. - Blend cream cheese with 1/4 cup skim milk on low speed of electric mixer, until smooth.
- Add remaining milk and pudding mix.
- Mix 1 or 2 minutes or until smooth.
- Mix cornstarch in cherry juice until dissolved.
- Add to cherries and cook until it boils for 1 minute.
- Remove from heat and stir in Equal.
- Alternately spoon pudding and cherries into parfait dishes, ending with pudding.
