DEEP DISH APPLE PIE
Deep dish apple pie features layers and layers of delicious apple slices and a buttery flaky pie crust!

- Prepare my pie crust recipe through step 5.
- In a large bowl, stir the apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg together until thoroughly combined. Set filling aside as the oven preheats. This gives the filling a chance to rest.
- Preheat oven to 400°F (204°C).
- On a floured work surface, roll out one of the discs of chilled dough (keep the other one in the refrigerator). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9×2 inch pie dish. Tuck it in with your fingers, making sure it is smooth. Spoon the filling into the crust and discard the leftover juices in the bottom of the bowl.
- Remove the other disc of chilled pie dough from the refrigerator. Roll the dough into a circle that is 12 inches diameter. Lattice the pie crust. Crimp or flute the edges to seal.
- Lightly brush the top of the pie crust with the egg wash. Sprinkle the top with coarse sugar, if using.
- Place the pie onto a large baking sheet and bake for 25 minutes. Keeping the pie in the oven, turn the temperature down to 375°F (190°C) and bake for an additional 30-35 minutes. After the first 20 minutes of bake time, I place a pie crust shield on top of the pie to prevent the edges from browning too quickly.
- Allow the pie to cool for 3 full hours at room temperature before serving. This time allows the filling to thicken up. Cover leftovers tightly and store in the refrigerator for up to 5 days.

- In a large mixing bowl, combine the apples, pears, lemon zest, lemon juice, orange juice, and 1/2 cup sugar; set aside for 10 minutes.
- In a small bowl, combine the remaining 1/4 cup sugar, cornstarch, and five-spice powder; stir mixture into the fruit.
- Transfer filling to the chilled pie shell; smooth filling with you hands to even it out.
- Place the pie on the center oven rack of a 400° oven; bake for 30 minutes.
- To make the topping: put the flour, cornmeal, brown sugar, and salt in the container of a food processor; pulse several times to mix.
- Scatter the butter over the mixture; pulse until mixture resembles fine crumbs.
- Empty crumbs into a bowl and rub them between your fingers to make large, buttery crumbs; refrigerate until ready to use.
- Take pie out of oven and lower oven temperature to 375°.
- Distribute crumbs evenly over top of pie; tamp them down lightly.
- Return pie to oven (rotate pie so that the part that faced the back of the oven now faces the front); place a foil-lined baking sheet onto the rack below to catch any spills.
- Bake for 30 minutes or until the juices bubble thickly around the edge.
- Transfer pie to a wire rack and let cool at least 1 hour before serving.

- Preheat oven to 350-degrees Fahrenheit.
- Combine oat bran, raisins, and 1 tablespoon maple syrup. Spread oat-bran mixture in the bottom of a deep dish pie pan; set aside.
- Core and slice both apples and pears. To crust, place apples and pears by alternating layers of both fruits.
- In a bowl, combine water or apple juice with the reserved 1 tablespoon of maple syrup. Add cinnamon, nutmeg, cloves, and salt. Mix and pour over apple and pear layers. Sprinkle with almonds if using.
- Bake until done, about 1 hour, covered with foil except for the last 15 minutes.
- NOTE: Butter Buds are available in most supermarkets. in this recipe they provide the flavor of butter without the fat.

- Line a 9-in. pie plate with bottom pastry; trim to 1 in. beyond edge of plate. In a large bowl, combine the pears, apples, 1 cup sugar, lemon juice, cinnamon and nutmeg. Transfer mixture to crust; dot with butter. , Roll out remaining pastry to fit top of pie; cut slits or decorative cutouts in pastry. Place over filling; trim, seal and flute edges. Add decorative cutouts if desired. Brush with milk; sprinkle with remaining sugar. Cover edges loosely with foil. , Bake at 350° for 30 minutes. - Peel apples and dice.
- Mix crust ingredients together and roll out.Press firmly into the bottom of a 10 inch spring form pan. Save about 1/3 of dough for the top of the pie.
- Mix filling ingredients and pour into crust pressed into the bottom of the pan.
- Cover with rolled out leftover dough; pinch edges.
- Brush top crust with icing.
- Cut several slits in top to vent.
- Use a pie guard around edges of pie or place 1" aluminum foil around edges of pie.
- Bake at 350 for one hour; Watch pie--don't let it get too browned.
- Serve with a slice of American cheese (melted) on top.

- Prepare recipe for double crust pie. Roll out dough for bottom crust. Place in 9-inch pie plate. Press to fit without stretching dough. Trim even with pie plate. Heat oven to 400 degrees F.

- Mix all filling ingredients.
- Place stacked sheets of phyllo on a flat surface and cover with plastic wrap to keep from drying out.
- Place 1 phyllo sheet on work surface. Lightly coat with nonstick cooking spray. Top with another sheet. Cut lengthwise in three 4-inch-wide strips. Move strips apart. Mound 1 heaping tablespoon filling at one end about 1-inch from corner. Fold opposite corner at same end over filling, forming a triangle. Continue folding your way up the strip, as you would a flag, to the end.
- Repeat with remaining phyllo and the filling. You'll have 12 turnovers. (Can be made ahead up to this point and frozen on a tray or cookie sheet. When firm, pack in plastic bags.).
- To bake freshly made or frozen turnovers: Heat oven to 400-degrees F. Lightly coat a cookie sheet with nonstick cooking spray.
- Arrange turnovers seam-side down on prepared cookie sheet. Lightly spray tops with cooking spray. Sprinkle with cinnamon sugar. Bake 15 - 17 minutes, or until golden. Remove to wire rack to cool.
APPLE PEAR PIE
This is a terrifically delicious apple pear pie. The tartness of the Granny Smith apples combines wonderfully with the pears. The apples and pears are cooked down with sugars and seasonings to a nice consistency and flavor. Cinnamon butter brushed on the crust gives it a nice color. This pie holds its shape well when sliced.

- 1. Pre-heat oven to 375 degrees.In a medium saucepan add the pears, apples, butter minus 2 tablespoons, vanilla, 1/2 teaspoon cinnamon, and both sugars (minus 2 tablespoons of the white).
- 2. Boil for 25 minutes.
- 3. Pour into pie crust.
- 4. Then top with the second crust. Put in your air holes wherever you want. Bake for 10 minutes.
- 5. Add the rest of the sugar, a pinch of cinnamon, and butter in a small saucepan.
- 6. Heat until melted.
- 7. Brush onto the half-baked pie.
- 8. Then put back into the oven and bake for 25 minutes more or until golden brown.
- 9. Let cool and serve.
- 10. Tip: Serve with vanilla ice cream if you want to serve hot.

Cook in a Dutch oven, stirring often, with cover on until apples are just tender, about 15 minutes. Remove the apples and juices to a rimmed baking sheet and let cool, about 30 minutes.
