SKINNY CLASSIC POTATO SALAD

Steps:
- Place potatoes in 4-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to low; cover and simmer 20 to 30 minutes or until tender. Drain; let stand until cool enough to handle. Cut potatoes into cubes.
- In large bowl, place potatoes, eggs, celery and onion; toss gently to mix. In small bowl, mix dressing ingredients until well blended.
- Add dressing to potato mixture; toss gently to coat. Cover; refrigerate at least 1 hour or until serving time.

- Place salad greens in large salad bowl. In order given, layer remaining salad ingredients over greens.
- In small bowl, mix all dressing ingredients except cheese until well blended. Spoon dressing over salad; sprinkle with cheese. Toss salad to coat.

SKINNY PROTEIN SALAD
Years and years ago I tried something like this, but I didn't like it between bread. Now I'm reducing carbohydrate intake, and this is a tasty alternative (without bread) to plain cottage cheese (I use low fat because the nonfat is so dry and low fat is at least a compromise). Cook time is chill time if you want it cold, but isn't really necessary.
