1/2 (14.1-ounce) package refrigerated pie crusts
2 1/2 pounds small, slender sweet potatoes, peeled and cut into 1/8-inch to 1/4-inch rounds
1/2 cup granulated sugar
2 (4 x 1inch) orange peel strips
1/2 cup light brown sugar, firmly packed
2 tablespoons all-purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon loosely packed orange zest
1/2 teaspoon table salt
Streusel Topping

Steps:

  • Preheat oven to 375°F. Fit piecrust into a 9-inch deep-dish pie plate; fold edges under, and crimp. Bring potatoes, next 2 ingredients, and 1 cup water to a boil in a Dutch oven. Cover, reduce heat to medium, and simmer 6 minutes or until potatoes are just tender. Transfer potatoes to a large colander, reserving cooking liquid. Rinse potatoes with cold water. Transfer cooking liquid and orange peel strips to a small saucepan, and bring to a boil over medium-high heat. Reduce heat to medium, and simmer, stirring occasionally, 10 to 12 minutes or until reduced to 1/4 cup. Reserve 2 tablespoons. potato-orange liquid; discard remaining liquid. Transfer potatoes to a bowl; toss with brown sugar, next 4 ingredients, and reserved 2 tablespoon potato-orange liquid. Spoon into crust; sprinkle with streusel. Bake at 375°F for 1 hour and 5 minutes to 1 hour and 15 minutes, shielding with aluminum foil after 30 minutes to prevent excessive browning. Cool completely.

Being from the South, we love our sweet potato pie. While many use many different ingredients to make their sweet potato pie this one stands out for its simplicity and goodness. This recipe was passed down to me from my best friend's mother who would cook the absolutely best sweet potato pies. After asking many times she finally wrote it down for me. Prepare yourself for the world's best sweet potato pie. Enjoy with whipped cream.

3 large sweet potatoes
1 cup butter (such as Land O'Lakes®), melted
5 eggs, beaten
1 (12 fluid ounce) can evaporated milk (such as PET®)
1 cup white sugar, or to taste
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
½ teaspoon ground nutmeg
½ teaspoon baking powder
½ teaspoon lemon juice
3 pie shells, thawed

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 40 to 50 minutes. Drain water, peel sweet potatoes, and mash in a bowl.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix butter and eggs together in a bowl until smooth; stir into mashed sweet potatoes. Mix milk, sugar, flour, vanilla extract, nutmeg, baking powder, and lemon juice into sweet potato mixture; pour into the 3 pie shells.
  • Bake in the preheated oven for 10 minutes. Lower oven temperature to 350 degrees F (175 degrees C) and continue to bake until a toothpick inserted in the center of a pie comes out clean, about 40 minutes more. Cool pies for 15 to 30 minutes before refrigerating to cool completely, 1 to 2 hours.

1 large egg
1-3/4 cups mashed sweet potatoes
1/2 cup 2% milk
1/4 cup reduced-fat butter, melted
1 tablespoon bourbon
1-1/2 teaspoons vanilla extract
2/3 cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg

1 reduced-fat graham cracker crust (9 inches)

  • In a large bowl, whisk the the first 7 ingredients until blended. 1 (1 pound) sweet potato
½ cup butter, softened
1 cup white sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Steps:

  • Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
  • Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
  • Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

1 1/2 lbs sweet potatoes (about 4 medium)
1 cup light brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon salt
6 tablespoons butter
1/2 cup heavy cream

Steps:

  • Boil sweet potatoes until half cooked, 15 to 20 minutes.
  • Peel and slice sweet potatoes thinly.
  • Mix brown sugar, cinnamon, nutmeg, ginger and salt.
  • Place a layer of sweet potatoes in pastry-lined 9-inch pie pan.
  • Sprinkle with some of the spice mixture; dot with a little bit of butter.
  • Continue with layers until all ingredients are used, dotting top with butter.
  • Add cream.
  • Top with top crust, fluting edges and cutting vents.
  • Bake at 425 degrees Fahrenheit for 30 for 40 minutes.
  • If potatoes are still not tender, reduce temperature to 350 degrees Fahrenheit and continue baking until they are done.

Steps:

  • In a small bowl whisk together the oil, butter and salt and pepper to taste.
  • Arrange the potato slices not touching in rows on an oiled baking sheet.
  • Brush slices with the oil mixture.
  • Roast them in the oven on the upper third or middle layer of a pre heated 450 degree oven turning once.
  • Bake for about 18-22 minutes or until golden crisp.
  • Drain on paper towels and sprinkle with salt to taste.

1 large egg yolk
1/4 to 1/2 cup ice water, divided
2-1/2 cups all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
1/2 cup cold shortening, cubed
1/2 cup cold butter, cubed
FILLING::
2-1/2 pounds sweet potatoes
2/3 cup packed brown sugar
1/2 cup sour cream
3 large eggs, lightly beaten
1/3 cup butter, melted
1 tablespoon bourbon
2 teaspoons vanilla extract
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Optional toppings: Whipped cream and sugared cranberries

Steps:

  • In a small bowl, mix egg yolk with 1/4 cup ice water; set aside. Place flour, sugar and salt in a food processor; pulse until blended. Add shortening and butter; pulse until shortening and butter are the size of peas. While pulsing, add egg yolk mixture. Add just enough of remaining ice water to form moist crumbs. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight. , Preheat oven to 400°. Scrub sweet potatoes; place in a 13x9-in. baking pan with 1-1/2 cups water. Bake until tender, 45-50 minutes. Meanwhile, on a lightly floured surface, roll 1 disk of dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate.
