I was trying to figure out how to make a really good dinner out of turkey, something I have never done before. When I made this all I got were positive replies. I got this recipe and totally redid it, and it turned out great!

2 ½ pounds ground turkey
½ cup chopped onion
½ cup chopped green bell pepper
½ cup chopped tomato
1 cup no-salt-added ketchup
7 tablespoons barbeque sauce
2 tablespoons prepared yellow mustard
1 tablespoon vinegar
½ teaspoon celery seed
½ teaspoon ground black pepper
½ teaspoon red pepper flakes, or to taste
8 hamburger bun, split and toasted

Steps:

  • Heat a nonstick skillet over medium heat; cook and stir turkey, onion, bell pepper, and tomato until turkey is crumbly and no longer pink, about 5 minutes. Stir in ketchup, barbeque sauce, mustard, vinegar, celery seed, black pepper, and red pepper flakes. Reduce heat to low and simmer for 10 minutes, stirring occasionally. Serve turkey mixture on toasted hamburger buns.

These slimmed-down sloppy joes are topped with a tangy Greek yogurt and goat cheese sauce. Try these quick and easy sandwiches for a dinner that will please picky eaters and dieters alike.

8 ounce uncooked ground turkey breast
2 cup chopped fresh cremini or button mushrooms
0.75 cup chopped yellow or green sweet pepper (1 medium)
0.5 cup chopped onion (1 medium)
1 ounce no-salt-added diced tomatoes with basil, garlic, and oregano, undrained
6 whole wheat hamburger buns, split and toasted
1 Goat Cheese-Yogurt Sauce
4 ounce soft goat cheese (chèvre), softened
0.25 cup snipped fresh chives
1 clove garlic, minced
0.125 teaspoon salt
0.125 teaspoon ground black pepper
6 ounce plain fat-free Greek yogurt

Steps:

  • In a large nonstick skillet cook turkey, mushrooms, sweet pepper, and onion over medium heat until turkey is browned and vegetables are tender, using a wooden spoon to break up meat as it cooks. Stir in tomatoes. Cook over medium-low heat for 5 minutes to blend flavors, stirring occasionally.
  • Place bun bottoms on serving plates. Divide meat mixture among bun bottoms. Spoon Goat Cheese-Yogurt Sauce over meat mixture. Top with bun tops. Goat Cheese-Yogurt Sauce
  • In a small bowl combine goat cheese, chives, garlic, salt, and pepper. Gradually stir in yogurt until smooth. Makes about 1-1/4 cups.

1 cup chopped celery
2/3 cup dry lentils, rinsed & drained
2/3 cup uncooked brown rice
1/2 cup chopped onion
2 garlic cloves, minced
2 tablespoons brown sugar
2 tablespoons prepared mustard
3 1/2 cups vegetable broth
1 (8 ounce) can tomato sauce
2 tablespoons vinegar
8 hamburger buns or 8 French rolls

Steps:

  • In a 3 1/2, 4, or 5-quart crock pot, combine carrot, celery, dry lentils, uncooked brown rice, onion, garlic, brown sugar, and mustard.
  • Stir in vegetable broth.
  • Cover and cook on low heat for 8 to 10 hours or on high heat for 4 to 5 hours.
  • Stir in tomato sauce and vinegar, cover and cook for 30 more minutes.
  • To serve, spoon mixture onto buns or rolls.
