SLOW COOKER GAMMON IN COLA



Slow cooker gammon in cola image

Fill your kitchen with the smell of Christmas with this slow cooked gammon. The cola adds a sweet treacly flavour to balance the saltiness of the ham.

1.5-1.8kg unsmoked boneless gammon joint
2l cola (not diet)
1 carrot, peeled and chopped
1 onion, peeled and quartered
1 stick celery, chopped
1 cinnamon stick
½ tbsp peppercorns
1 bay leaf
150ml maple syrup
2 tbsp wholegrain mustard
2 tbsp red wine vinegar
pinch of ground cloves or five-spice

Steps:

  • Set your slow cooker to medium. Place the gammon joint in and cover with the cola. Add 1 chopped carrot, 1 quartered onion, 1 chopped celery stick, 1 cinnamon stick, ½ tbsp peppercorns and 1 bay leaf.
  • Cook for 5½ hrs on low until the gammon is tender but still holding its shape, topping up with boiling water if necessary to keep the gammon fully covered.
  • Carefully pour the liquid away, then let the ham cool a little while you heat the oven to 190C/170C fan/gas 5. Lift the ham into a roasting tin, then cut away the skin leaving behind an even layer of fat. Score the fat all over in a criss-cross pattern.
  • Mix the maple syrup, mustard, vinegar and ground cloves or five-spice in a jug. Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 30 mins.
  • Remove from the oven and allow to rest for 10 mins, then spoon more glaze over the top. Can be roasted on the day or up to two days ahead and served cold.

Mary Berry's slow cooked gammon with is perfect for feeding large numbers over Christmas. Can be served hot or cold.

3kg/6lb 8oz unsmoked gammon joint, off the bone
600ml/21fl oz ginger beer
4 pieces stem ginger, finely chopped
4 tbsp ginger syrup from the jar
200g/7oz full-fat crème fraîche
6 tbsp full-fat mayonnaise
2 tbsp Dijon mustard
2 tbsp wholegrain mustard
pinch caster sugar
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 160C/140C Fan/Gas 3.
  • To make the gammon, put the gammon joint in a saucepan that fits snugly. Pour in the ginger beer and 1.2 litres/2 pints of water or just enough to cover the gammon. Cover with a lid, bring to the boil and boil for a few minutes. Transfer to the oven for about 2½ hours or until cooked through. Alternatively, simmer over a low heat for about 2½ hours.
  • Increase the oven temperature to 220C/200C Fan/Gas 7.
  • Remove the gammon joint from the liquid and, using a sharp knife, slice off the skin, just leaving a very thin layer.
  • Line a roasting tin with kitchen foil, sit the gammon, fatiside up in the tin and wrap the foil around the meat just leaving the top showing. Score the fat and drizzle over the ginger syrup. Scatter over the chopped ginger and press lightly so the top fat is covered.
  • Bake in the hot oven for about 25 minutes or until golden and glazed on top.
  • To make the sauce, mix all the ingredients together and season with salt and pepper.
  • Slice the gammon into thin slices and serve hot or cold with the sauce.

2 tablespoons sugar
1 tablespoon Coleman's dry mustard
Salt and pepper
2 tablespoons vinegar
1/2 cup cream
1 egg yolk
1 (6 to 8 pound) baked ham, sliced

Steps:

  • In a small saucepan, off heat, combine sugar, mustard, salt and pepper. Whisk in vinegar until it forms a paste. Add cream, whisking, and beat in yolk. Heat over low heat, whisking constantly, until sauce thickens slightly, do not boil or sauce will curdle.
  • Serve the sauce warm with slices of baked ham.
