Whether it's for St. Patrick's Day or any other day of the year, this Guinness Beef Stew has incredible rich, deep flavor.

2 lbs. beef stew meat (well trimmed)
2 Tbsp. cooking oil
1/2 cup all-purpose flour
2 tsp. salt
1/2 tsp. pepper
1 tsp. dried leaf oregano (not ground)
1 tsp. dried leaf thyme (not ground)
1 tsp. onion powder
6 oz. tomato paste
15 oz. beef broth
3 cups baby red potatoes (quartered)
3 cups carrots (sliced)
2 cups celery (sliced)
1 cup white onion ((1 small onion); cut into large pieces)
2 tsp. garlic (minced)
11.2 oz. Guinness beer (1 bottle (original or extra stout))
2 bay leaves

Steps:

  • In a large ziplock bag, add the flour, salt, pepper, oregano, thyme, and onion powder.
  • Add the beef to the bag and shake until the beef is well coated.
  • In a large skillet set to medium high heat, add the oil once hot.
  • Add the flour coated beef; brown the meat on all sides, don't let burn.
  • When the meat has browned add the tomato paste and beef broth.
  • Stir the beef, tomato sauce, and beef broth until a thick sauce forms, pulling up any stuck on bits; set aside off the heat.
  • Add the potatoes, carrots, celery, onion, and garlic to the slow cooker.
  • Add the beef and sauce mixture over the veggies.
  • Stir in the Guinness beer and add bay leaves on top.
  • Cover and cook on LOW for 8 hours without opening the lid during the cooking time.
  • Remove bay leaves.
  • Serve and enjoy!

2 tablespoons butter
2 pounds (900 g) well marbled chuck beef roast, cut into 2-inch pieces
Salt
2 cups chopped onion (about 1 large onion)
2 celery stalks, chopped
2 tablespoons tomato paste
1 pint (16 ounces, 475 ml) Guinness extra stout (make sure you use extra stout and not draught)
3 cups (700 ml) beef broth
2 large carrots, peeled and cut into chunks
3 to 4 parsnips, peeled and cut into chunks
1/2 pound (280 g) celery root, potatoes, or very young turnips, peeled and cut into chunks
2 teaspoons dried thyme
4 tablespoons chopped fresh parsley (optional)

Steps:

  • Cook in slow cooker: Cover and cook on "high" for 4 hours, or "low" for 8 hours. When done, add more salt to taste. If you want, sprinkle with fresh parsley to serve.

1 1/2 lb lean beef stew meat
1 teaspoon coarse salt
1 teaspoon ground black pepper
2 tablespoons flour
4 large yukon golden potatoes, largely diced
2 large carrots, peeled and diced into 1 inch pieces
2 large parsnips, peeled and diced into 1 inch pieces
1/2 large yellow onion, chopped
2 cloves garlic, minced
1 tablespoon tomato paste
4 cups beef broth
11.2 fluid ounce bottle Guinness Extra Stout
Coarse salt and ground black pepper to taste

Steps:

  • In a large pan, heat olive oil over medium high heat. Turn slow cooker on*.
  • In a large bowl, toss beef together with salt, pepper, and flour to coat. Add to the pan and cook until all sides of the chunks are browned (about 8 minutes).
  • While beef is browning, add potatoes, carrots, parsnips, onion, garlic and tomato paste to the slow cooker. Stir to coat.
  • Add browned beef, beef broth, and Guinness to the slow cooker and stir to combine.
  • Cook for 3-4 hours on high, 8-10 hours on low. Add salt and pepper to taste and serve with a pint of Guinness.

½ cup all-purpose flour
1 teaspoon salt
½ teaspoon freshly ground black pepper
3 pounds boneless beef chuck, trimmed and cut into 1 1/2-inch pieces
¼ cup vegetable oil
1 large yellow onion, coarsely chopped
1 (15 ounce) can Irish stout beer (e.g. Guinness®)
4 cloves garlic, chopped
1 (14.5 ounce) can beef broth
1 tablespoon chopped fresh parsley
2 sprigs fresh thyme
2 bay leaves
1 pound round red potatoes, halved
3 carrots, cut into 1-inch chunks
1 (17.5 ounce) package frozen puff pastry, thawed and cut into quarters

Steps:

  • Combine flour, salt, and pepper in a shallow dish; add beef pieces. Toss to coat each piece evenly. Reserve remaining flour mixture for later use.
  • Heat oil in a large non-stick skillet; cook and stir coated beef, working in batches, until browned on all sides, about 10 minutes per batch. Transfer cooked beef to a slow cooker.
  • Cook and stir onion in the same skillet used for beef until golden, about 5 minutes. Add beer and garlic; bring to a boil for 1 minute. Scrape browned bits of food from bottom of the pan with a wooden spoon. Pour onion mixture into the slow cooker.
  • Mix beef broth, parsley, thyme, and bay leaves into beef mixture in slow cooker.
  • Cook on Low until beef is almost tender, 2 1/2 to 3 hours. Sprinkle in the reserved flour mixture; stir well. Add potatoes and carrots.
  • Cook on High until potatoes are tender, about 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange puff pastry on baking sheets; pierce each piece several times with a fork.
  • Bake in the preheated oven until golden and crispy, about 10 minutes. Ladle stew into individual dishes; top each with a pastry square.

The meat in this stew is the most tender I have ever had. This recipe is a combination of two that I put together, one which I liked the cooking technique and the other that I liked the flavor of. I would suggest testing your slow cooker to see if it cooks hot. Ours does, so 8 hours does it for optimal tenderness. My husband likes it served over plain egg noodles, but I prefer it by itself.

2 1/2 lbs beef chuck roast, cubed
1/4 cup flour
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon paprika
1 cup beef broth
1 cup Guinness stout or 1 cup other stout beer
1 teaspoon Worcestershire sauce
4 garlic cloves, minced
3 bay leaves
4 carrots, sliced
2 onions, sliced lengthwise
1 celery rib, sliced
2 potatoes, large, diced
1 (16 ounce) package mushrooms, quartered
1 teaspoon dried thyme
1 teaspoon dried parsley

Steps:

  • Combine flour, salt, pepper, and paprika in small bowl. Place meat in slow cooker; add flour mixture and toss to coat.
  • Add all remaining ingredients and mix well. Cover. Cook on low 8-12 hours, to desired tenderness. Stir before serving.

With my Irish father in town, I wanted a ready-made meal after a long day of sight-seeing. I chose a hearty beef stew and wanted to incorporate his favorite beer, Guinness. I was worried that we left it in too long, but after 10 hours on low and 2 hours on warm ( it was a long day of sight-seeing) it was still awesome! Makes a flavorful, thick sauce to dip bread in. I filled the crock pot to the top because I wanted enough for them to have lunch left-overs, so decrease the amounts if needed. Enjoy!

8 -10 red potatoes, skin on, quartered
6 carrots, peeled, sliced into thick chunks
2 stalks celery, cut in chunks
3 bay leaves
3 lbs stew meat, cubed (I used chuck)
1/2 cup flour
1 dash salt
1 dash pepper
1 dash garlic powder
2 -3 tablespoons olive oil
1 medium onion, diced
4 large garlic cloves, minced
8 ounces baby portabella mushrooms, halved
2 (8 ounce) cans tomato sauce
10 3/4 ounces beef broth (I used consomme)
1 (13 g) envelope Lipton Onion Soup Mix
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon creole seasoning (Tony Chachere's)
1 teaspoon Italian herb seasoning (Mrs. Dash)
12 ounces beer (Guinness, draught or stout)
1 cup frozen peas, if desired

Steps:

  • Put potato, carrot, and celery chunks in the bottom of crock pot. Top with 2 bay leaves.
  • Season flour with a dash of salt, pepper and garlic powder and coat the beef with the flour mixture. Heat a couple of tbsp of olive oil over med-high heat in a large skillet and add 1 bay leaf. Sauté beef in batches, just until browned.(It took me about 3 batches in a 12" skillet). Add more oil to pan as necessary for each batch. Remove and set aside.
  • Add onion and garlic to the same pan and sauté over med heat for a few minutes, then add about half the can of beef broth to deglaze, scraping up the brown bits on the bottom of the pan. (That's Flavor!).
  • Add meat and onions to crock pot, top with mushrooms.
  • Mix remaining beef broth with tomato sauce, onion soup mix, remaining seasonings, and add to crock pot. Pour in most of bottle of beer (whatever fits, I had a few sips left for me).
  • Cook 8 hours on low heat. Stir in frozen peas when done, they'll heat up on their own.
  • Serve with crusty French bread!
  • *Tony Chachere's and Mrs. Dash are my "go-to" seasonings for everything. You can use your favorite if these are not available.

This is not a toss-it-in-and-go kind of slow cooker recipe: It takes a little time to brown the beef and make a roux-thickened gravy, but those steps build flavor and ensure that you end up with a hearty stew rather than watery soup. Get everything going in the slow cooker - prepare the night before if you have the time - and the stew will be ready the moment you step in the door at suppertime. 2 tablespoons plus 1/3 cup all-purpose flour
Kosher salt and black pepper
4 tablespoons vegetable oil, plus more as needed
3 large garlic cloves, chopped
2 dried shiitake mushrooms, halved (optional)
2 tablespoons tomato paste
2 teaspoons packed brown sugar
1 teaspoon unsweetened cocoa powder
1 teaspoon onion powder
1/2 teaspoon caraway seeds
1/2 teaspoon instant espresso powder
2 cups Guinness or other stout beer
2 cups beef broth or stock
2 fresh thyme sprigs
1 pound red or Yukon gold potatoes, cut into 1- to 2-inch pieces
1 to 1 1/2 pounds root vegetables, such as carrots, turnips, rutabaga, celery root or parsnips, peeled and cut into 1- to 2-inch pieces
1 tablespoon balsamic vinegar
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice, plus more to taste
3/4 cup sour cream
3 tablespoons jarred horseradish
1/4 cup minced scallions or chives

Steps:

  • In a large mixing bowl, combine the beef and 2 tablespoons flour. Season generously with salt and pepper and toss to coat. In a large skillet or Dutch oven, heat 2 tablespoons vegetable oil over medium-high. Working in batches, add the beef and let it brown on two sides, about 2 minutes per side. Add a bit more oil if the meat sticks. (You can brown it on more than two sides if you have time, but two sides is enough to build flavor and texture.) Transfer the browned beef to a bowl or plate.
  • Make the gravy: Reduce the heat to medium-low and add the remaining 2 tablespoons oil. Add the garlic, dried shiitakes (if using), tomato paste, brown sugar, cocoa, onion powder, caraway seeds and espresso powder. Cook, stirring constantly, until the mixture is fragrant and evenly blended, 1 to 2 minutes. (Reduce the heat to low or remove from the heat temporarily if the bottom of the pan threatens to burn.) Add the remaining 1/3 cup flour and cook, stirring and scraping constantly, until the mixture forms a thick, dry paste, about 1 minute. Add the beer and broth. Increase the heat to high and bring to a boil, whisking constantly to scrape any browned bits off the bottom of the pan. Let it boil until it is smooth and noticeably thickened, about 1 minute. Season with salt and pepper and remove from the heat.
  • Add the beef and any juices, the thyme, potatoes and root vegetables to a 6- to 8-quart slow cooker. Add the gravy and stir to combine. Cover and cook on low until the beef and vegetables are tender, about 8 hours.
  • When ready to serve, add the vinegar, Worcestershire sauce and lemon juice. Taste, and season with more salt, pepper and lemon juice, if necessary. (If the stew tastes flat, add more lemon juice first, then more salt and pepper; acid is key to making it taste lively. It may need a surprising amount of salt, especially if you have used unsalted or low-salt stock.) Discard the thyme sprigs.
  • Make the horseradish sour cream: Stir together the sour cream, horseradish and scallions in a small bowl. Season with salt. Serve stew in low bowls with a spoonful of the horseradish sour cream on top.
