SLOW COOKER CASHEW BEEF AND BROCCOLI STIR FRY



Slow Cooker Cashew Beef and Broccoli Stir Fry image

Delicious melt in your mouth beef that cooks right in your slow cooker with veggies and cashews hidden throughout. One of the best meals that you will make in your slow cooker and so much better than takeout!

1 lb. boneless (beef chuck roast, sliced into thin strips)
1 cup beef broth (or beef consumme)
1/2 cup low sodium soy sauce
1/3 cup dark brown sugar
1 tbsp. sesame oil
3 garlic cloves (minced)
2 tbsp cornstarch
3 cups Frozen Broccoli Florets
1 cup cashews
1 cup frozen carrots
White or brown rice (cooked)

Steps:

  • In a mixing bowl, whisk together the beef consume, soy sauce, dark brown sugar, sesame oil, and garlic.
  • Lay the beef strips in the crockpot and pour the sauce over, tossing the strips to coat.
  • Turn the crockpot on low and cook for about 6 hours. You don't want to cook the beef too long or it will start to shred.
  • When it is just about done, take 4 Tbsp of the sauce and whisk it in a small bowl with the cornstarch. Slowly stir this into the crockpot. Add the broccoli, cashews and carrots and stir. Cook an additional 30 minutes so that the sauce can thicken and frozen broccoli and carrots can cook. You don't want to add the broccoli until the very end or it will be mushy. If you are using fresh broccoli, steam before or add about an hour before it is done cooking to heat through.
  • Serve over rice and enjoy!

2 pounds beef sirloin, cut into 1/4-inch strips
2 bell peppers, sliced
1 medium-size onion, sliced
1 cup broccoli, chopped
2 medium-size carrots, peeled & sliced or diced
1 tablespoon oil (for Instant Pot)
1/4 cup water
1/4 cup coconut aminos (or low-sodium soy sauce if not paleo or whole30)
2 tablespoons rice vinegar
1 teaspoon sesame oil
2 garlic cloves, minced
1 tablespoon ground ginger
1/2 tsp salt
1/4 tsp pepper
1 tablespoon arrowroot starch flour & 1 tablespoon water (to thicken)

Steps:

  • Add beef, bell peppers, onion, and carrots to the slow cooker.
  • In a small bowl, mix together SAUCE ingredients. Pour sauce into the slow cooker. Stir to mix well.
  • Cook HIGH 2-3 hours or LOW 4-6.
  • Add broccoli and cook an additional 30 minutes.
  • Turn on the IP and select Sauté. Once hot add oil to the pot. Add the beef and sear until browned, 2-3 minutes on each side. Remove beef & set aside.
  • Add bell pepper, onion, carrots & cook for a 5-7 minutes, or until soft, stirring frequently. Add garlic and cook an additional minute.
  • Add beef back to the pot. Stir in ginger, salt, pepper, water, coconut aminos, rice vinegar, and sesame oil.
  • Close lid and seal valve. Set high pressure and cook for 9 minutes. Quick release pressure.
  • Turn on the IP and select sauté. Mix together arrowroot starch flour & water. Stir mixture into the Instant Pot along with the broccoli. Cook 5-10 minutes or until broccoli is tender and sauce has thickened to your liking.

¼ cup cornstarch
1 ½ pounds beef flank steak
¾ cup water
¾ cup soy sauce
¾ cup brown sugar
½ cup shredded carrots
3 green onions, chopped
2 tablespoons olive oil
2 cloves garlic, minced
½ teaspoon minced fresh ginger root

Steps:

  • Spread cornstarch into a wide, shallow bowl. Dredge flank steak in the cornstarch to coat completely; put into a large resealable plastic bag.
  • Stir water, soy sauce, brown sugar, carrots, green onions, olive oil, garlic, and ginger together in a bowl; pour into the bag with the beef and seal.
  • Put bag of marinating beef in the freezer until the day before you wish to prepare it.
  • Remove bag from freezer and put bag into a bowl and place in refrigerator to thaw, at least 24 hours before you wish to prepare the beef.
  • Empty bag into the crock of a slow cooker.

2 cups beef broth
1/2 cup reduced-sodium soy sauce
1/3 cup packed brown sugar
1-1/2 teaspoons sesame oil
1 garlic cloves, minced
1 beef top sirloin steak (1-1/2 pounds), cut into 1/2-inch-thick strips
2 tablespoons cornstarch
1/4 cup cold water
4 cups fresh broccoli florets
Hot cooked rice
Optional: Sesame seeds and thinly sliced green onions

Steps:

  • In a 5-qt. slow cooker, combine the first 5 ingredients. Add beef; stir to coat. Cover and cook on low until tender, about 6 hours. , In a small bowl, whisk cornstarch and cold water until smooth; stir into slow cooker. Cover and cook on high until thickened, about 30 minutes. Meanwhile, in a large saucepan, place a steamer basket over 1 in. of water. Place broccoli in basket. Bring water to a boil. 1 beef bouillon cube
1 cup warm water
½ cup soy sauce
⅓ cup brown sugar
2 cloves garlic, minced
1 tablespoon sesame oil
1 ½ pounds beef sirloin, cut into 1-inch strips
2 tablespoons cornstarch
2 pounds broccoli florets, or to taste
2 cups cooked jasmine rice
1 tablespoon sesame seeds, for garnish

Steps:

  • Crumble beef bouillon cube into warm water in a bowl and stir to dissolve; add soy sauce, brown sugar, garlic, and sesame oil and stir to dissolve sugar.
  • Put beef strips into a slow cooker crock. Pour sauce mixture over the beef.
  • Cook on Low for 6 to 8 hours (or on High for 4 hours).
  • Spoon 2 tablespoons liquid from the slow cooker into a bowl. Whisk cornstarch into the liquid and stir the cornstarch mixture into the liquid in the slow cooker until consistent in color.
  • Cook on High until the sauce thickens, about 30 minutes.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil.
  • Cook broccoli in covered steamer until tender, 2 to 6 minutes; add to sauce in slow cooker and stir to coat.
  • Ladle broccoli beef over portions of cooked jasmine rice and garnish with sesame seeds.

6 boneless skinless chicken breasts (frozen chicken breasts work great)
1 (10 ounce) bottle Teriyaki sauce
1 (16 ounce) bag frozen stir fry vegetables
4 cups cooked rice

Steps:

  • Spray your crock pot with non-stick cooking spray. Place your chicken in the crock pot.
  • Pour the teriyaki sauce all over it (I use about 1/2-3/4 of the bottle).
  • Cook for about 4 hours on high or 6 hours on low (you want to make sure it is cooked, but don't over cook it or the chicken will be dry).
  • About 10 minutes before you eat, stir-fry the veggies on your stove top (or even your microwave). I have thrown my veggies into the crock pot to cook with the chicken before, but I don't like it as much that way because they tend to get mushy.
  • Place some rice in a bowl, put veggies on next, then throw your chicken on top.
  • If you need extra sauce to put on top, you can use what is in the crock pot or what is leftover in your Teriyaki bottle.
