SLOW COOKER CHICKEN MEATBALLS WITH CREAM SAUCE

1 pound ground chicken
1 pound ground turkey
1/2 cup panko bread crumbs
1/2 cup half and half
1 egg
2 teaspoons old bay seasoning
1/2 teaspoon salt
2 cups chicken broth
5 tablespoons butter (divided)
1/4 cup flour
1/2 cup sour cream
1/4 cup seedless blackberry preserves
16 oz Reames Frozen Egg Noodles

Steps:

  • Add ground meat to large bowl
  • Mix together panko and half and half and let soak for 5 minutes
  • Add soaked breadcrumbs, egg, and seasonings to ground mix and use hand to mix until just combined
  • Heat 1 tablespoon of butter and olive oil in skillet or multi-cooker
  • Form meat mixture into ping pong sized balls and place in single layer in skillet
  • Brown on each side for about 2 minutes then transfer to slow cooker
  • Add broth, cover and cook on low for about 6 hours or high for about 3
  • Heat remaining 4 tablespoons of butter in skillet
  • Whisk in flour until smooth
  • Slowly pour in broth from the slow cooker and continue to whisk
  • Add in preserves and sour cream and bring to a simmer while continuing to whisk until sauce thickens, about 5 minutes
  • Cook noodles according to package directions
  • Serve meatballs with noodles and sauce and garnished with parsley if desired

1 (10.75 ounce) can condensed cream of mushroom soup
2 tablespoons steak sauce
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
½ teaspoon ground black pepper
1 (28 ounce) package frozen cooked meatballs, thawed
1 onion, diced
1 cup sour cream

Steps:

  • Whisk beef broth and mushroom soup together in a slow cooker. Add steak sauce, Worcestershire sauce, garlic powder, paprika, salt, and pepper. Stir in meatballs and onion.
  • Cook on High for 4 hours. Add sour cream, mixing well. Cook until sauce is heated through, about 30 minutes.

These slow cooker meatballs are Italian style but with a twist, ground chicken instead of beef. Serve over pasta of your choice or use the meatballs and sauce to make a sub. Leftover sauce freezes well.

5 cups crushed and strained tomatoes (such as Aurora®)
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon salt
1 pinch red pepper flakes
ground black pepper to taste
1 pound lean ground chicken
1 large egg
½ cup fresh bread crumbs
½ cup finely grated Parmesan cheese
¼ cup grated onion
2 tablespoons olive oil
1 tablespoon chopped fresh parsley
1 large clove garlic, minced
½ teaspoon salt
ground black pepper to taste

Steps:

  • Prepare the sauce by whisking tomatoes, basil, parsley, oregano, salt, red pepper flakes, and black pepper in a slow cooker. Adjust heat to High.
  • Combine ground chicken, egg, bread crumbs, Parmesan cheese, onion, olive oil, parsley, garlic, salt, and pepper in a medium bowl. Use your hands to gently mix together. Roll into 1 1/2-inch balls and place into the sauce. Use a spoon to cover the meatballs with sauce; do not stir.
  • Place the lid on the slow cooker and drape a thick kitchen towel over it. Cook on High for 2 1/2 hours until meatballs are cooked through.

  • To make the meatballs, crack the eggs into a large mixing bowl and whisk them lightly. Add the chicken, bread crumbs, Parmesan, onion, garlic, parsley, basil, salt and pepper, and using your hands, mix and knead the mixture to combine it well.
  • Form the mixture into twenty-eight meatballs about 1½- inches in diameter. The mixture will be a bit sticky, so wet your hands as needed to make rolling the meatballs easier. Place the meatballs on a foil-lined baking sheet, and cover them with another sheet of foil. Refrigerate for at least 1 hour or more. The meatballs can be prepared in advance and refrigerated for up to 24 hours.
  • To make the sauce, add the tomatoes, marinara, water, onion, garlic, Italian seasoning, red pepper flakes, salt and pepper to the slow cooker. Cover and cook for 1 hour on HIGH.
  • When the sauce is done, place the refrigerated meatballs into the sauce, reshaping them into nice balls as you add them. Spoon the sauce over any exposed meatballs so that they are all immersed in sauce. Cover and cook for 4 to 6 hours on LOW, until the meatballs are thoroughly cooked. Avoid stirring the meatballs during cooking to help them keep their shape.
