This simple recipe is perfect for a family dinner after work. The prep takes about 5-10 minutes, and the results are delicious!

2 lbs Boneless Skinless Chicken Breast
2 boxes Stovetop Chicken Stuffing Mix
2 cans Cream of Chicken Soup
1 can (14.5 oz) Chicken Broth
Salt & Pepper to taste

Steps:

  • Spray slow cooker with non-stick cooking spray
  • Coat each chicken breast with salt and pepper to taste. If you want a little spice, add a pinch of cayenne! Once coated, lay the chicken down at bottom of the slow cooker
  • Pour chicken stuffing mix in the slow cooker on chicken
  • In a medium bowl, whisk together 2 cans of cream of chicken soup and 1 can of chicken broth. Pour over stuffing. We recommend lightly mix the stuffing and coup mixture in a crockpot. This will help avoid the stuffing sticking to the pan
  • Cook on low for 7 hours or high for 4 hours. The luxury of slow cookers!
  • Once done, mix up stuffing and soup mixture. We love to make a sandwich with this recipe and put the chicken and stuffing inside the bread with a little cranberry jam! It is a great comfort food recipe.

1 cup chicken broth
1 (10.75 ounce) can cream of chicken soup

2 lb. beef short ribs, cut into individual rib sections
1/2 large onion, cut into 4 wedges
2 sun-dried tomato halves (not oil-packed), cut into thin strips
4 medium carrots, cut in half lengthwise and crosswise
8 small red potatoes (1 lb.)
1 garlic clove, minced
1/2 cup dry red wine or water
1 cup water
1 teaspoon beef-flavor instant bouillon
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried basil leaves
1/4 teaspoon pepper
2 tablespoons all-purpose flour

Steps:

  • Brown beef ribs in large nonstick skillet over medium-high heat until browned on all sides, turning frequently.
  • Meanwhile, in 4 to 6-quart slow cooker, layer onion, tomato, carrots, potatoes and garlic.
  • Spoon browned beef into slow cooker. Drain off any fat from skillet; add wine, 1/2 cup of the water and bouillon to skillet. Cook over medium heat until mixture comes to a boil, stirring occasionally. Sprinkle beef with salt, thyme, basil and pepper. Pour hot wine mixture over beef.
  • Cover; cook on low setting for 8 to 10 hours.
  • About 15 minutes before serving, with slotted spoon, remove beef and vegetables from slow cooker; place in serving bowl. Skim off fat from cooking juices in slow cooker.
  • In 4-cup glass measuring cup or medium bowl, blend remaining 1/2 cup water and flour until smooth. Pour juices from slow cooker into flour mixture; mix well. Microwave on HIGH for 3 to 4 minutes or until mixture boils, stirring once halfway through cooking. Pour sauce over beef and vegetables.

1 cup butter or margarine
2 cups chopped onion
2 cups chopped celery
¼ cup chopped fresh parsley
12 ounces sliced mushrooms
12 cups dry bread cubes
1 teaspoon poultry seasoning
1 ½ teaspoons dried sage
1 teaspoon dried thyme
½ teaspoon dried marjoram
1 ½ teaspoons salt
½ teaspoon ground black pepper
4 ½ cups chicken broth, or as needed
2 eggs, beaten

Steps:

  • Melt butter or margarine in a skillet over medium heat. Cook onion, celery, mushroom, and parsley in butter, stirring frequently.
  • Spoon cooked vegetables over bread cubes in a very large mixing bowl. Season with poultry seasoning, sage, thyme, marjoram, and salt and pepper. Pour in enough broth to moisten, and mix in eggs. Transfer mixture to slow cooker, and cover.

4 lbs whole chickens
4 -6 medium potatoes, peeled and cut in half
1 onion, sliced
3 garlic cloves, smashed (optional)
1 (6 ounce) package seasoned stuffing mix
1 1/2 cups chicken stock
1 tablespoon olive oil
salt
pepper

Steps:

  • Rinse the chicken and pat it dry. Rub the entire chicken with olive oil, then generously sprinkle with salt and pepper.
  • Place the dry stuffing mix in a bowl and add the chicken stock. Stir to mix and combine well. Place the stuffing inside the chicken cavity.
  • Line the bottom of the slow cooker with the halved potatoes (try and get one single layer of potatoes for even cooking) and the onion slices. If desired, add in the crushed garlic for a deeper flavor. Sprinkle with salt and pepper. Place the chicken on top of the potatoes and onions.
  • Place the lid on the slow cooker and set on Low for 8 - 9 hours, or on High for 4 - 5 hours, until the chicken is completely cooked through and the potatoes are fork-tender.
  • Remove the chicken from the slow cooker at the end of cooking time, cover with foil, and let rest for 10 minutes before removing stuffing and placing in another bowl. Carve chicken as you normally would.
  • Pro tip: Don't want to cook a whole chicken? You don't have to! This same dinner can be made by placing chicken breasts on top of the potatoes and onions, and placing the stuffing on top of the chicken. Remember to reduce the cooking time by about half.
  • Pro tip: Placing the chicken upside down (breast-side down) on top of the potatoes causes many of the juices from the legs to run down into the breasts while the chicken is cooking. This is a French technique that I've tried in the oven, but it works so much better in the slow cooker!
