Wow, this slow cooker corned beef is good and so easy! Serve right out of the slow cooker or thinly slice across the grain to make great Reuben sandwiches.

Steps:
- Trim excess fat from corned beef and put in a large enough slow cooker that the brisket can lay almost flat along the bottom. Place onion on top of beef.
- Drain sauerkraut and pile on top of onion. Mix broth and mustard together and pour over everything in the slow cooker.
- Cook on Low until brisket is very tender, 7 to 9 hours. An instant-read thermometer inserted into the center should read 160 degrees F (71 degrees C).

SLOW COOKER CORNED BEEF AND SAUERKRAUT
This Corned Beef and Sauerkraut with beer cooks low and slow all day in the crock pot for fall apart tender and super flavorful beef!

- Remove the corned beef brisket from the packaging and rinse thoroughly under cold running water. Place it on a plate, and pat dry with a paper towel. Set aside.
- Put your carrots and the diced potatoes in the bottom of your slow cooker.
- Place the corned beef brisket on top of the vegetables with the fat side up.
- Sprinkle the top of the corned beef with the ground pepper, garlic powder, and celery salt.
- Pour the beer into the slow cooker, covering the veggies and meat.
- Cover and cook on low for 8 hours (or up to 10) or high for 6 hours.
- One hour before it is ready, (if cooking on High at 5 hours or on low at 7 hours), add the sauerkraut. Gently place it in the slow cooker around the corned beef and submerge in the broth/liquid.
- Cook for the remaining time.
- Serve and Enjoy!

- Layer the potatoes, carrots, onions, celery and thyme in the insert of a 6-quart slow cooker. Put the brisket on top of the vegetables and add the beer and pickling spice. Add enough water to just cover the brisket. Cover and cook on low until the meat and vegetables are tender, about 8 hours.
- Arrange the cabbage over the brisket (it's OK if the cooker seems crowded), cover and cook until soft and wilted, 45 minutes to 1 hour more.
- Whisk together the sour cream, horseradish and mustard in a small bowl.
- Remove the cabbage and toss with 1 tablespoon of the butter and pepper to taste in a large bowl. Remove the meat and let rest. Strain the remaining vegetables (reserve some of the cooking broth to serve on the side if you like) and toss with the parsley, the remaining 2 tablespoons butter and salt and pepper to taste.
- Slice the corned beef against the grain and serve with the vegetables, horseradish sauce and broth if using.
CROCK POT CORNED BEEF WITH SAUERKRAUT AND PLUMS
I was craving some sauerkraut and had this lovely piece of corned beef so I searched and searched and couldn't find a recipe so made this one up. A tin of plums will do and the hot sauce is optional but it does give it a bit of kick. I stated Sweet Russian Mustard but the Sweet German will be fine too. I enjoyed it and hope you will too.

- Rinse the meat under cold water and dry on paper towels.
- Mix together the sauerkraut, plums, mustard, Ketjap Manis and hotsauce.
- Place half the kraut mixture in the bottom of the crock pot, then put in the corned beef and top with remaining kraut mixture.
- Turn crock Pot to low and cook for 7 hours,.
- Slice and serve with grainy mustard and hot sauce on the side.

- Place sauerkraut in a slow cooker and place corned beef on top. Place beer, onion, garlic cloves, and pickling spice in the slow cooker, around and on top of the corned beef.
- Cook on Low until brisket is very tender, 7 to 8 hours. Remove brisket from the slow cooker and let rest for 10 minutes.
- Drain and discard excess liquid from the slow cooker so you can easily access the sauerkraut.
- Thinly slice corned beef against the grain. Assemble open-faced sandwiches by layering corned beef, sauerkraut, and Swiss cheese slices on rye bread. Reserve remaining corned beef for another use.

- Spray 5- to 6-quart slow cooker with cooking spray. In cooker, place potatoes, carrots and onion. Top with corned beef; sprinkle with contents of seasoning packet. Add beer and enough water to just cover corned beef.
