1 can (10.75-ounces) condensed cream of broccoli soup
3/4 cup whole milk
1 1/2 cups shredded sharp Cheddar
2 tablespoons chopped fresh chives
1/2 teaspoon minced garlic
Salt and pepper

Steps:

  • Stir in soup and milk in a heavy medium saucepan over medium heat to blend. Bring to a simmer, and then gradually whisk in cheese; stir until melted. Stir in chives and garlic. Season, to taste, with salt and pepper. Serve over broccoli, asparagus, cauliflower, potatoes, or vegetables of your choice.

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Melt butter in medium saucepan on low heat.
  • Stir in flour, salt and ground red pepper; cook 2 minutes.
  • Gradually add milk, stirring until well blended.
  • Cook on medium heat until mixture boils and thickens, stirring constantly.
  • Reduce heat to low; simmer 3 minutes.
  • Stir in Parmesan cheese; set aside.
  • Heat oil in large skillet on medium-high heat.
  • Add broccoli, carrots, bell peppers, onions and garlic; cook and stir 4 to 5 minutes set aside.
  • Mix ricotta cheese and basil.

Steps:

  • Heat oven to 375°F.
  • Melt butter in medium saucepan on low heat. Stir in flour and ground red pepper; cook 2 min. or until hot and bubbly, stirring frequently. 1/8 teaspoon ground cardamom
Pinch of ground cloves
1 medium tomato, chopped
1 cup cauliflower florets (about 5 ounces)
1/2 cup peas (shelled fresh or thawed frozen)
1 medium carrot, cut julienne
6 ounces green beans, trimmed, slices diagonally (about 1 cup)
1/2 cup water
1/4 cup raisins
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2 tablespoons chopped fresh cilantro

Steps:

  • Toast cumin and coriander in small skillet over medium-low heat until aromatic, stirring occasionally, about 4 minutes. Transfer to plate.
