CREAMED PEAS
Creamed peas are delicious green peas that are cooked in an easy cream based sauce with a hint of onion flavor and topped with nutmeg!

Steps:
- In a medium saucepan, melt the butter over medium high heat. Add in the grated onion and saute until the onions are cooked - soft and translucent.
- In a large measuring cup, combine the milk, cream and the cornstarch until smooth.
- Whisk into the butter and onion mixture, then add in the salt, pepper, then add in the sugar to taste.
- Add in the peas, and cook the entire mixture, stirring constantly, until the cream mixture has thickened.
- Garnish with a sprinkle of nutmeg, and some parsley for serving.

Steps:
- In a small saucepan over medium heat melt butter and add flour to make a roux.
- Cook for several minutes to cook off raw flour taste.
- Add milk, sugar, salt, pepper and garlic powder. Whisk and cook until well blended.
- Place peas in slow cooker.
- Pour sauce over peas.
- Cover and cook on high for 2 hours or low for 3 1/2 hours.

CREAMED ONIONS AND PEAS
This is a wonderful recipe I use which calls for fresh pearl onions and fresh or frozen peas. Quick and tasty!

Steps:
- Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
- Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
- Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

SLOW COOKER BLACK-EYED PEAS
Our family was visiting, and we went to Disney World on New Year's Day. I just had to have black-eyed peas before midnight. Make it easy, soak black-eyed peas in the slow cooker overnight. This is a little thinner, like a very rich soup. We really enjoyed it; hope you will too! Hot buttered cornbread and chunky applesauce are my favorites to serve with black-eyed peas.

- Put black-eyed peas into a large container with enough cool water to cover by a few inches; soak 8 hours to overnight.
- Put ham hocks into a stockpot with 6 cups water; bring to a boil, reduce heat to low, cover pot, and simmer until meat is falling off bone, about 90 minutes. Remove ham hocks and reserve for another use. Refrigerate the ham stock, 8 hours to overnight.
- Drain and rinse black-eyed peas thoroughly; transfer to a slow cooker. Bury one of the cooked ham hocks in the peas; add onion, garlic, red pepper flakes, and sugar.
- Skim congealed fat from surface of ham stock; discard. Pour stock into slow cooker. Add enough water to cover the peas by 1 1/2 inches.
- Cook on Low for 14 hours. Season with salt.

- Add potatoes, ham, onion, seasonings, one cup of cheese, and flour to slow cooker. Toss together to coat in flour.
- After cooking stir frozen peas, and sour cream into the potato mixture. The peas will thaw and warm quickly. If creamed potatoes are too thick add a little extra milk to think them out. If they are too thin make a little slurry of flour mixed with milk and add it to the potatoes. It will thicken after a few minutes. You might also want to taste and add more salt to taste.
