3 lb. bottom round beef roast
1/2 tsp. salt
1/4 tsp. pepper
2 garlic cloves (minced)
1 small white onion (minced)
2 cups sliced mushrooms
64 oz. beef broth ((two-32 oz. cartons))
1/2 pound cavatappi pasta (cooked according to package directions)
30 oz. canned cut green beans (drained (two-15 oz. cans))
parmesan cheese (for serving)

Steps:

  • Place the roast into the slow cooker. Add the salt, pepper, garlic, onion, and mushrooms.
  • Pour over the beef broth.
  • Cover and cook on low for 9 hours without opening the lid during the cooking time.
  • When the cooking time is done, start the pasta on the stove top.
  • Remove the roast from the slow cooker. Shred the meat with two forks, discard any fat. If desired degrease the broth in the slow cooker by laying a paper towel over the top, and remove it quickly.
  • Add the drained pasta, green beans, and the shredded beef to the slow cooker.
  • Serve topped with parmesan cheese if desired.

This combines the greatness that is French onion soup with French dips. It is not supposed to be an 'authentic' French dip recipe, because authentic is often boring. These are yummy sandwiches for those that like roast beef and French onion soup. It is mainly on the slow cooker, but it requires a bit of prep on the stove, too.

5 tablespoons olive oil, divided
2 large onions, thinly sliced
3 tablespoons butter, divided
1 teaspoon white sugar
½ teaspoon salt
3 cloves garlic, minced
9 tablespoons water
¼ cup dry vermouth
2 ½ cups beef stock
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon fresh thyme
1 bay leaf
¼ teaspoon ground black pepper
3 pounds rump roast
salt and ground black pepper to taste
8 French rolls, split
1 (6 ounce) package grated Gruyere cheese

Steps:

  • Heat 3 tablespoons olive oil over medium heat in a large, deep pot. Add onions and toss to coat with oil. Cook, stirring often, until softened, about 15 minutes. Add 1 tablespoon butter. Cook and stir until onions start to brown, about 15 minutes more.
  • Stir sugar and 1/2 teaspoon salt into the onions in the pot. Continue to cook, stirring once halfway through, until onions are well-browned, 10 to 15 minutes more. Mix in garlic and cook for 1 minute more.
  • Stir 3 tablespoons of water into the pot, scraping bits from the bottom. Let simmer for 3 minutes; repeat with an additional 3 tablespoons water. Simmer for 3 minutes more and repeat. Add vermouth; scrape bits from the bottom and sides of the pot. Cook for 4 minutes more. Add stock, Worcestershire sauce, soy sauce, thyme, and bay leaf. Simmer for 10 minutes; do not boil. Add black pepper. Discard bay leaf. Remove pot from heat and allow soup to cool. Pour into the slow cooker, but don't turn it on.
  • Trim any excess fat from the rump roast. Sprinkle all sides with salt and pepper. Heat remaining 2 tablespoons olive oil in the pot over high heat. Cook the meat, holding it down with tongs, until browned on all sides, about 10 minutes. Transfer meat carefully to the slow cooker. Spoon the soup over the meat so that it is topped with a few onions. Cover and cook on Low for 4 hours.
  • Remove meat from the slow cooker. Slice it diagonally and return slices to the slow cooker. Continue to cook on Low for 2 hours more.
  • Preheat the oven to 350 degrees F (175 degrees C). Spread rolls with remaining 2 tablespoons butter; place face-down on a baking sheet.
  • Bake rolls in the preheated oven until beginning to brown, 8 to 10 minutes. Remove from the oven, flip, and sprinkle with Gruyere cheese. Set oven rack about 6 inches from the heat source and turn on the oven's broiler. Broil rolls until cheese is slightly bubbly and lightly browned, 2 to 4 minutes.
  • Remove meat from the slow cooker using a slotted spoon. Place on the rolls. Serve soup on the side for dipping.

1-1/2 teaspoons onion powder
1-1/2 teaspoons garlic powder
1/2 teaspoon Creole seasoning
1 carton (26 ounces) beef stock

6 ounces Havarti cheese, cut into 12 slices

Steps:

  • Cut roast in half. Mix onion powder, garlic powder and Creole seasoning; rub onto beef. Place in a 5-qt. slow cooker; add stock. I used thin sliced roasted-garlic Artisian bread, but this recipe calls for doing one large sandwich on French bread loaf and then slicing into individual portions.

1 (14 oz) can of beef broth

4 large yellow onions, sliced and separated into rings
1 tablespoon white sugar
2 cloves garlic, minced
½ cup cooking sherry
7 cups reduced-sodium beef broth
1 teaspoon sea salt, or to taste

1 bay leaf
8 slices of French bread
½ cup shredded Gruyere cheese
⅓ cup shredded Emmental cheese
¼ cup freshly shredded Parmesan cheese

  • Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. 1 tbsp Butter (Unsalted)
1 tbsp Olive oil
3 pounds Chuck roast (Trimmed of excess fat)
Salt (To taste)
Pepper (To taste)
1/2 cup Onions (Sliced)
3 cloves Garlic (Finely minced)
1 can Beer (12 oz. can)
2 cups Beef broth (Low sodium)
1 tbsp Worcestershire sauce
1 tsp Dried thyme
1 Bay leaf
8 Rolls
8-10 slices Provolone cheese

Steps:

  • Season roast with salt and pepper. Keep aside.
  • Heat butter and oil in a large nonstick pot or pan and sear all the sides until golden brown.
  • Transfer meat to your slow cooker.
  • In the same pot or pan you browned the meat, add onions, garlic and saute for a few minutes until garlic is fragrant.
  • Add beer and deglaze the pan, scraping all the brown bits from the bottom of the pot.
  • Transfer this onion mixture and all the juices to the slow cooker.
  • Add broth, Worcestershire sauce, thyme, additional salt and pepper (if necessary). Mix.
  • Cover and cook on High heat for 3-4 hours or on Low heat for 5-6 hours or until meat is very tender.
  • Transfer meat to a serving dish and shred it with 2 forks.
  • Discard the bay leaf.
  • Strain liquid remaining in crockpot through a fine mesh strainer into a bowl and serve this strained Au jus with sandwiches for dipping. On busy days, I just skip this straining step and shred the meat in the crockpot and it still tastes really good.
  • Transfer the shredded meat and the onions back into the slow cooker. Pour over a little bit of au jus to moisten the meat.
  • Pile meat onto toasted buttered rolls.
  • Top with cheese. Heat in oven on broiler setting until cheese starts melting. I also added some sliced jalapenos because I really like them.
  • Enjoy with the strained Au jus. If there is not enough Au jus for everyone, mix in a a little more broth to the Au jus.

1 can (10 1/2 ounces) condensed French onion soup
8 ounces sliced mushrooms
2 tablespoons all-purpose flour
2 to 3 tablespoons cold water
Salt and pepper, to taste

Steps:

  • Cut the roast into 4 to 6 large chunks and place them in the slow cooker . Add the French onion soup and mushrooms. Cover and cook on low for 8 to 10 hours, or until very tender. Or cook on high for 4 to 5 hours.
  • If desired, make a flavorful gravy with the juices. Remove the beef and mushrooms to a platter or bowl with a slotted spoon; keep warm. Transfer juices to a saucepan. Skim excess fat, if desired. Simmer the juices for 5 minutes to reduce slightly and concentrate the flavors.
