HOLY MOLY POTATO SOUP



Holy Moly Potato Soup image

This is a turned-up version of a cheesy potato soup. We eat this often, especially on cold winter evenings, but it'd be lovely for family get-togethers or potlucks during the holidays! Crushed red pepper flakes really turn up the heat. -Angela Sheridan, Opdyke, Illinois

Number Of Ingredients 14

4 cans (14-1/2 ounces each) diced new potatoes, undrained
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
2-1/2 cups water
1 can (11 ounces) whole kernel corn, drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
6 green onions, chopped
1 medium sweet red pepper, chopped
1 tablespoon dried minced onion
1 teaspoon cayenne pepper
1/4 teaspoon pepper
1 pound bulk spicy pork sausage
2 cups (8 ounces) shredded sharp cheddar cheese
1 carton (8 ounces) French onion dip
Tortilla chips

Steps:

  • In a 6-qt. slow cooker, combine the first 10 ingredients. In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking it into crumbles; drain. Add to slow cooker., Cook, covered, on low to allow flavors to blend, 4-5 hours. Add cheese and onion dip in the last 30 minutes of cooking. Stir before serving. Serve with tortilla chips., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

Number Of Ingredients 20

1 leftover ham bone
8 cups boiling water
1/2 yellow onion
1 large celery rib
1 large carrot
3 stems fresh parsley
1 teaspoon black peppercorns
1 tablespoon olive oil
1 yellow onion, diced
2 carrots, peeled and chopped
1 1/2 teaspoons minced garlic
2 lbs yukon gold potatoes, peeled and diced
1/2 teaspoon dried thyme leaves
1 lb leftover ham, cubed
1 cup heavy cream
3 tablespoons flour
3 cups roughly chopped kale leaves, stems and ribs discarded
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
1/2 teaspoon cayenne pepper (to taste)

Steps:

  • In a slow cooker, combine the hambone, water, half yellow onion, celery, carrot, parsley, and peppercorns.
  • Cook on high heat for 1 to 2 hours.
  • Afterwards, strain through a fine mesh strainer, making sure to reserve the broth.
  • Discard the onion, celery, carrot, ham bone, and peppercorns.
  • Return the broth to the slow cooker and set aside.
  • For the soup, in a large saute pan or cast iron skillet, heat the olive oil.
  • Add the onion and carrot and saute for 3 to 4 minutes.
  • Add the garlic and saute for another minute.
  • Transfer the sauteed vegetables to the slow cooker.
  • Add the potatoes, thyme, and ham.
  • Cover with the lid and cook on low for 3 to 5 hours, or until the vegetables are tender.
  • Meanwhile, whisk the flour and the cream together.
  • After the veggies become tender, slowly whisk in the heavy cream and flour mixture.
  • Stir in the kale, salt, and pepper to taste, and cayenne pepper.
  • If the slow cooker insert is stovetop safe, transfer it to the stove and bring the soup to a boil, stirring periodically, until it thickens slightly.
  • Alternatively, if the insert is not stovetop safe, you can transfer the soup to a stock pot to bring it to a boil. and serve.

6 cups water
1 (14.5 ounce) can diced tomatoes
1 onion, chopped
2 stalks celery, chopped
1 clove garlic, minced
½ pound chopped ham
1 cube chicken bouillon
2 tablespoons Worcestershire sauce
1 tablespoon dried parsley
2 teaspoons garlic powder
1 bay leaf
1 teaspoon salt
½ teaspoon ground black pepper
3 cups water

Steps:

  • Combine beans, water, tomatoes, onion, celery, garlic, ham, bouillon, Worcestershire sauce, parsley, garlic, and bay leaf in a stock pot; bring to a boil. Lower heat, cover, and simmer for two hours.
  • Add additional water. Season with salt and pepper. Simmer for an additional two hours. Discard bay leaf.

1 cup dried lentils
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion
2 cloves garlic, minced
1 ½ cups diced cooked ham
½ teaspoon dried basil
¼ teaspoon dried thyme
½ teaspoon dried oregano
1 bay leaf
¼ teaspoon black pepper
32 ounces chicken broth
1 cup water
8 teaspoons tomato sauce

Steps:

  • In a 3 1/2 quart or larger slow cooker combine the lentils, celery, carrots, onion, garlic and ham. Season with basil, thyme, oregano, the bay leaf and pepper. Stir in the chicken broth, water and tomato sauce. Cover and cook on Low for 11 hours. Discard the bay leaf before serving.
