When I told our 12-year-old daughter, Amanda, That we were grilling chicken, she asked to make a marinade. Now we use her combination of honey, lemon, garlic and seasonings every time we grill chicken. -Tamara McFarlin Mondovi, Wisconsin

1/2 cup lemon juice
1/3 cup honey
1/4 cup soy sauce
2 tablespoons finely chopped onion
4 garlic cloves, minced
2 teaspoons dried parsley flakes
2 teaspoons dried basil
1 teaspoon salt-free seasoning blend
1 teaspoon white pepper
1 teaspoon lime juice
6 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a large bowl, combine the first 10 ingredients. Pour 2/3 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for at least 4 hours or overnight. Cover and refrigerate the remaining marinade., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill chicken, uncovered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until a thermometer reads 170°, basting occasionally with reserved marinade.

1 small onion, chopped
thyme leaves
1/4 cup honey
8 bone-in skin-on chicken thighs
1 1/2 lbs baby potatoes
2 -3 garlic cloves, finely chopped or grated
2 lemons, thinly sliced
1/4 chicken stock or 1/4 water

Steps:

  • In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and brown on both sides.
  • Scatter potatoes, onion, garlic, thyme, and lemon slices in crock pot. Season with salt and pepper. Lay browned chicken over this layer, and drizzle with honey.
  • Add stock/water, cover and cook, undisturbed for 4 hours on high, or 6-8 hours on low.

This is such a good and easy recipe. Set it to cook in the morning and dinner is waiting when you're ready. The flavor is wonderful and the meat literally falls off the bone.

8 - bone-in skin-on chicken thighs
- salt and ground pepper
1 1/2 pound(s) baby potatoes
1 small onion, chopped
2 - 3 clove(s) garlic, finely chopped or grated
4 - 5 sprig(s) thyme, dried
2 - lemons, thinly sliced
1/4 cup(s) honey
1/4 cup(s) chicken stock or water
TO FINISH:
- zest of 1 lemon, cut into strips
1/2 cup(s) flat-leaf parsley, chopped
1/2 cup(s) pine nuts, toasted (you can use chopped peanuts if the pine nuts are too expensive)
- balsamic vinegar drizzel

Steps:

  • In a skillet, heat olive oil over medium-high heat. Season chicken with salt and papper and brown on both sides.
  • Scatter the potatoes, onion, garlic, thyme and lemon slices in the bowl of your crock pot. Season with salt and pepper. Lay the browned chicken over the veggies and drizzle with honey. Add stock, cover and cook, undisturbed, for 4 hours on high or 6-8 hours on low.
  • Serve each portion topped with a combination of lemon zest, parsley, toasted nuts (or peanuts) and drizzle of balsamic vinegar.
