2 large potatoes (about 2 cups mashed), diced, boiled and drained
1 pound white-fleshed fish, COOKED (cod, haddock, pollock, halibut, flounder)
1 large egg
3 tablespoons sour cream
2 tablespoons butter, softened
2 green onions, sliced
3 tablespoons chopped fresh parsley
1 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dry ground mustard
panko breadcrumbs (, for coating)
(Gluten-free use GF panko breadcrumbs)
oil for frying
Homemade Tartar Sauce

Steps:

  • Place all ingredients, except for the breadcrumbs, in a large bowl and mash until thoroughly combined.Form the mixture into 8 equal patties and roll them in the panko breadcrumbs. (You can make smaller patties if you prefer.) Refrigerate the patties for at least 30 minutes or until they've firmed up.
  • Heat some oil in a non-stick pan and fry the patties on each side for 3-4 minutes until lightly browned, being careful not to overcrowd the pan.
  • Serve immediately with our BEST homemade tartar sauce!

1 package lemon cake mix (regular size)
1/2 cup milk
2 teaspoons grated lemon zest, divided
1 teaspoon coconut extract
1 package (3.4 ounces) instant lemon pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
1/3 cup confectioners' sugar
Red, yellow, green and blue liquid food coloring
2 black jelly beans
9 slices fresh lemon
2 cups sweetened shredded coconut

Steps:

  • Prepare cake batter according package directions, replacing 1/2 cup water with milk. Add 1 teaspoon lemon zest and extract. Pour batter into two greased and floured 9-in. round baking pans. , Bake at 350° for 28-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., Prepare pudding according to package directions; add remaining lemon zest. Cut cakes into large and small fish. Cut each fish in half horizontally; spread pudding on bottom layers and replace tops., Place fish on a large platter or covered board (about 16x22-in.) Combine the whipped topping and confectioners' sugar; set 1 tablespoon aside. Use remaining frosting to frost top and sides of each fish., On each large fish, place three separate drops of red food coloring on the top third, three drops of yellow on the middle third and three drops of green on the bottom third. Starting from the top edge of fish, use the tip of a spoon to form scales and blend colors into frosting., For eyes, form a 1-in. oval on each large fish with reserved frosting. Place a jelly bean in the center of oval., For small fish, blend one color of food coloring into frosting to make solid-colored fish., Cut four lemon slices in half; place two halves in the center of each large fish for fins. Push rounded edges of one slice into the back of small fish for tails. Cut remaining slices into quarters; place one or two on the bottom of each large fish for fins and two slices on each side of small fish for fins., Place coconut in a plastic bag, sprinkle 3-4 drops blue food coloring into bag and shake until color is evenly distributed. Sprinkle coconut around fish to resemble water. Store in the refrigerator.

1 box Betty Crocker™ Super Moist™ party rainbow chip cake mix (or any other flavor*)
Water, vegetable oil and eggs called for on cake mix box
2 containers Betty Crocker™ Whipped vanilla frosting
Purple and pink food colors
6 marshmallows
Blue candy-coated chocolate candies
Gummy fruit candy slices
Cheerios™ cereal

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottom and side of one 8-inch round cake pan with shortening or cooking spray. Place paper baking cup in each of 12 regular-size muffin cups.
  • Make cake batter as directed on box. Fill 12 muffin cups about two-thirds full of batter. Pour remaining batter in cake pan. Bake as directed on box for 8-inch round and cupcakes. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • In medium bowl, mix 1 container of frosting and enough purple food color to get desired color. In another medium bowl, mix remaining container of frosting and enough pink food color to get desired color.
  • On large rectangular serving plate, place cake layer, rounded side down. Remove liners from 2 cupcakes, and cut them in half. Spread a small amount of frosting on cut side of each cupcake half to keep them in place. Arrange cupcakes cut sides down as shown in diagram to create back and side fins, discarding extra cupcake half. Place 2 marshmallows on front of cake to create mouth and 3 marshmallows on top of fish to create top fin. Cut remaining marshmallow in half crosswise to create eye. Use small amount of frosting to "glue" a blue candy on for pupil; set aside.
  • Frost body for fish purple and fins and marshmallows pink. Use enough frosting on fins to shape cupcakes into desired fin shape. Place marshmallow eye on cake. Use remaining frosting and candies and cereal to decorate remaining cupcakes as desired.

Our family loves seafood, so I've tried many fish cake recipes. I came up with this combination and it's been a hit at our house. It's outstanding served with corn bread.

1 pound flaked cooked whitefish, cod or haddock
1-1/2 cups soft bread crumbs
3 large eggs, beaten
2 to 4 tablespoons water
1 medium onion, chopped
2 tablespoons mayonnaise
1-1/2 teaspoons ground mustard
1 teaspoon dried parsley flakes
3/4 teaspoon salt
1-1/2 cups Italian-seasoned bread crumbs
2 tablespoons vegetable oil
Tartar sauce and lemon wedges, optional

Steps:

  • In a bowl, combine the first nine ingredients; mix well. Shape into 12 patties, adding additional water if needed; coat with the Italian bread crumbs. In a large skillet, heat oil over medium-high heat. Cook the patties until lightly browned, 4-5 minutes on each side. If desired, serve immediately with tartar sauce and lemon.

Carolina Fish Cakes image

These fish cakes are great with tartar or cocktail sauce or a simple squeeze of fresh lemon or lime. For a change of pace add a bit of chili powder, cilantro and jalapeno or a teaspoon of Cajun spice. Nice served with boiled red potatoes and a spinach salad. This recipe has two cooking options: you can fry the cakes or bake them -- it's up to you!

3 cups water
2 potatoes, peeled
⅓ cup minced onion
⅓ cup chopped green bell pepper
⅓ cup red bell pepper, chopped
⅓ cup chopped celery
2 tablespoons butter
3 ½ cups cooked cod, boned and flaked
4 tablespoons all-purpose flour
2 tablespoons grated Parmesan cheese
1 teaspoon Old Bay Seasoning TM
¼ teaspoon mustard powder
½ teaspoon salt
ground black pepper to taste
½ cup milk
½ cup dry bread crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease two baking sheets. Bring 3 cups of water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Reserve 1 cup mashed potatoes; discard remainder.
  • In a large saucepan, saute onion, green and red bell pepper and celery in butter over medium high heat until tender. Turn heat to low and fold in flaked fish. Slowly mix in flour, cheese, Old Bay seasoning, dry mustard, salt, pepper, mashed potatoes and milk. Mix gently but thoroughly. Remove pan from heat.
  • With floured hands shape batter into cakes 1/2 inch by 3 inches. Coat with breadcrumbs.
  • If you are baking the fish cakes bake them for 10 minutes, flip the cakes and bake another 15 minutes until golden brown.

This recipe is from Ainsley Harriot's Gourmet Express. It the only one I use to make fish cakes for the family. It's very very easy and a favourite with my kids - the perfect combination for me!

450 g floury potatoes, cubed
450 g smoked haddock
1 hard-boiled egg, chopped
2 tablespoons snipped chives
salt & freshly ground black pepper
2 tablespoons seasoned flour
1 egg, beaten
100 g white breadcrumbs
vegetable oil, for shallow frying

Steps:

  • Cook the potatoes in boiling, salted water and drain and mash well when tender.
  • Meanwhile, place the fish in a saute or frying pan and cover with boiling water; Bring to the boil and simmer for 5 minutes until just cooked.
  • Drain the fish and remove the skin; Flake the fish with a fork, discarding any bones.
  • Mix together the potatoes, fish, boiled egg, chives and salt and pepper; Using your hands, shape the mixture into 4 or 8 even sized cakes.
  • Dust the fish cakes with the seasoned flour, dip in the beaten egg, then coat in the breadcrumbs, making sure they are fully covered.
  • Heat the oil in a frying pan and shallow-fry for 3-4 minutes on each side until crisp and golden.

12 ounces fresh skinless white fish fillets or 12 ounces frozen skinless white fish fillets (such as haddock or cod)
1 beaten egg
1/4 cup fine dry breadcrumb
2 tablespoons finely chopped onions
4 teaspoons light mayonnaise or 4 teaspoons salad dressing
1 tablespoon dijon-style mustard
1 tablespoon snipped fresh parsley
1 teaspoon lime zest
1/4 teaspoon salt
2 tablespoons cornmeal
1 tablespoon cooking oil
green goddess sauce (in 'zaar)
chives (optional)

Steps:

  • thaw fish, if frozen, rinse fish, pat dry with paper towels.
  • Cut fish into 1/2 inch pieces.
  • Set aside.
  • In a medium bowl, combine egg, bread crumbs, onion, mayonnaise or dressing, mustard, parsley, lime zest and salt.
  • Add fish, mix well.
  • Shape into 1/2 inch thick patties.
  • Coat both sides of the fish patties with cornmeal.
  • In a large nonstick frypan or on a nonstick griddle heat oil over medium heat.
  • Add half the fish cakes.
  • Cook for 4 to 6 minutes or until fish flakes easily when tested with a fork, gently turning once.
  • Remove from frypan.
  • Repeat with remaining cakes.
  • Serve with Green Goddess Sauce.
  • If desired garnish with fresh chives.

Meringue Buttercream Frosting
Blue gel food coloring
2 candy-coated sunflower seeds
1 red gummy Life Savers candy, halved

Steps:

  • Place templates on sheet cakes, and cut out with a paring knife. Discard scraps. Halve smallest fin piece and round eyeball piece horizontally, discarding bottom halves.
  • Arrange pieces into a fish shape.
  • Starting with 6 cups buttercream, reserve 1/2 cup and tint the rest pale blue with food coloring. Use blue buttercream to attach fins, tail tip, and eyeballs to body. Coat eyeballs with untinted buttercream and the rest of cake with blue buttercream, rounding over the fin in the center of the body. Refrigerate until frosting is firm, about 30 minutes and up to overnight. Add a second smooth coat of untinted buttercream to eyes. Layer more blue buttercream on fins and tail, creating grooves with a small offset spatula. Add more food coloring to remaining buttercream to darken it. Place in a pastry bag fitted with a small curved petal tip (Ateco #61). Starting at the edge of tail, pipe scallops across the body, overlapping each scallop and each row.
  • Use sunflower seeds as pupils and gummy candy as lips.
