SLOW COOKER ITALIAN CHICKEN AND POTATOES
A healthy version of the ballpark classic, sausage and peppers, I've added in lean chicken breast, hearty potatoes and plenty of peppers and onions in this easy slow cooker dinner recipe.

Steps:
- Place all ingredients in slow cooker and cook on Low for 3-4 hours or until chicken is cooked through.
- Remove chicken and slice it on a cutting board before serving with the potatoes, peppers and onions. Garnish with fresh oregano if you wish.

- Place chicken in a 1-1/2-qt. slow cooker. In a bowl, combine the broth, tomatoes, tomato sauce, green pepper, onion, garlic and seasonings; pour over chicken. Cover and cook on low until chicken is tender, 3-4 hours. Remove chicken and keep warm. , Pour cooking juices into a small saucepan. Combine flour and cold water until smooth; stir into juices. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with chicken and pasta. If desired, top with shaved Parmesan cheese.

EASY ITALIAN CHICKEN AND POTATO SLOW COOKER RECIPE
Serve over warm toasted Italian or sour dough bread. Add a dash of parsley to make this dish an attractive meal at any dinner party. Serve over whole wheat pasta, traditional pasta or gnocchi to turn this meal into the perfect Sunday dinner. Turn the leftovers into a chicken and potato Italian sandwich. Drain the majority of the thin juice. Place on toasted sour dough bread, add mozzarella cheese and a dash of fresh basil. Bake until the cheese is melted. Serve over ready made garlic croutons.

- Combine chicken broth, spaghetti sauce, potatoes, onion, red pepper, crushed tomatoes, basil, chicken and mushrooms into a slow cooker. Stir to mix all ingredients.

- Season chicken with basil, oregano, rosemary, salt, and pepper.
- Melt butter in a large skillet over medium-high heat. Add chicken, skin-side down, and sear until golden brown, 2 to 3 minutes per side. Drain excess fat and set chicken aside.
- Place potatoes in a 6-quart slow cooker. Stir in olive oil, garlic, and thyme, then season with salt and pepper. Add chicken in an even layer over top.
- Cover and cook until potatoes are tender and chicken is no longer pink at the bone and the juices run clear, 7 to 8 hours on Low or 3 to 4 hours on High. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Serve immediately, sprinkled with Parmesan cheese and garnished with parsley.
