1 pound skinless, boneless chicken breast halves - cut into 2 inch pieces
4 cloves garlic, chopped
1 large onion, chopped
1 (28 ounce) can diced tomatoes
3 fresh peaches - peeled, pitted, and sliced
1 (15 ounce) can garbanzo beans, drained
1 cup chopped dried apricots
2 teaspoons ground cumin
1 teaspoon ground ginger
1 teaspoon cinnamon
½ teaspoon ground coriander
½ teaspoon cayenne pepper
2 cups chicken broth
1 tablespoon cornstarch
1 tablespoon water
3 tablespoons chopped fresh cilantro
⅓ cup slivered almonds, toasted

Steps:

  • Place chicken in the bottom of a slow cooker. Add the garlic, onion, tomatoes, peaches, garbanzo beans, dried apricots, cumin, ginger, cinnamon, coriander, and cayenne pepper. Pour in the chicken broth. Cook on Low for 5 hours.
  • Remove the chicken and keep warm. Mix the cornstarch and water in a small bowl. Stir the cornstarch mixture into the slow cooker. Cook on High until the sauce has thickened, about 15 minutes. Return the chicken to the slow cooker and heat through. Top with fresh cilantro and almonds before serving.

2 tablespoons extra virgin olive oil
3 cloves garlic, minced or pressed
4 teaspoons ground cinnamon
1 ½ teaspoons ground cumin
1 ½ teaspoons ground cardamom
1 teaspoon turmeric
⅛ teaspoon cayenne pepper
2 teaspoons salt
½ teaspoon ground black pepper
8 bone-in chicken thighs, skin removed ((about 5 pounds))
2 to 3 pounds butternut squash, peeled and cut into 1-inch chunks ((5 to 6 cups cubed squash))
1 cup golden raisins
1 cup low sodium or unsalted chicken broth
2 boxes (10 oz.) couscous, cooked according to package directions
2 tablespoons chopped fresh cilantro or parsley, to garnish
¼ cup toasted almond slices, to garnish

Steps:

  • In a small bowl, stir together olive oil, garlic, cinnamon, cumin, cardamom, cayenne, turmeric, salt and pepper.
  • Put chicken thighs into a large slow cooker and rub oil mixture all over chicken thighs.
  • Add squash, raisins and chicken broth on top of chicken. Cover and cook on low for 8 hours, or on high for 4 hours.
  • About 15 minutes before serving, prepare couscous according to package directions.
  • Serve chicken mixture over couscous and garnished with fresh herbs and toasted almond slices.
