SLOW COOKER CHOCOLATE-PEANUT CANDY
This slow cooker candy is almost like the peanut clusters that you can buy. I have taken it to parties several times and there is never any left to bring home.

Steps:
- I used my 6 quart Smart Set crockpot for this. I like the Smart Set because I can set it for 30 minute intervals and it will beep for me when the 30 minutes is done. And I seem to need the beeps, because I tend to wander off if I find something shiny. Drop the 4 tablespoons of butter into your crockpot. Add the sugar and the corn syrup on top of the butter. Pour in the vanilla. Cover your crockpot and turn to high for one hour. Line 2 cookie sheets with parchment paper or release foil. After an hour, stir well to mix everything around. Add the baking soda. It will sizzle and make fun noises. Your sugar mixture will be kind of milky-yellow and the sugar might still look granulated. Cover again and cook on high for another 30 minutes. Check and stir in nuts. Cover and cook again for another 15-30 minutes, or until the sugar mixture is brown and looks the color of peanut brittle. Or a payday candy bar. Then, USING OVEN MITTS, carefully (CAREFULLY! seriously---use the oven mitts) pour half of the pot onto each cookie sheet and spread out with a spatula. It will be lumpy. that's because there are nuts. Let cool at room temperature for about an hour, then tear into pieces.
TWO MINUTE PEANUT BRITTLE
This is a delicious brittle candy that you can whip up in just a couple of minutes. You can be creative with this and use toffee, pistachios, or other nuts.

- Place the caramels in a bowl, and heat in the microwave for about 2 minutes, or until melted and bubbly. Some microwaves may take longer. Stir in the peanuts, and pour out onto the prepared baking sheet. Press as thinly as you can. Cool completely, then break into pieces.

Add the nuts and butter and continuing boiling until it reaches 300°F. Remove from heat and carefully add the baking soda and vanilla. Pour into a sheet pan that has been lined with buttered foil. Use a spatula to spread it thin on the pan. Let cool and then break apart.
MICROWAVE PEANUT BRITTLE CANDY
This is an ancient family recipe that has been adapted to a microwave. This is better than any peanut brittle you can buy at the store. Be careful its addictive

Steps:
- Remember all microwaves vary so you may need to adjust your time by 15 seconds. If the first batch comes out to soft then you know you didnt cook it long enough. After you make the first batch it gets really easy and fast to make.
- In a large microwave safe bowl stir peanuts, sugar, syrup and salt together. Be sure to mix them well. (rubber spatula works really well).
- Microwave for 3 minutes 45 seconds to 4 minutes.
- Stir with a metal spoon so it doesnt stick. Stir it quickly so it doesnt have time to cool.
- Microwave 3 1/2 to 4 more minutes.
- Stir in butter.
- Microwave 2 more minutes.
- Stir in vanilla and dont panic when it steams and turns brown.that is what you want.
- Add baking soda and stir quickly until is gets light and foamy.
- Immediately pour onto a lightly buttered baking sheet and spread to about 1/4 inch thick.
- Cool.
- break into pieces and store in an airtight container.
