SLOW COOKER PINEAPPLE CHIPOTLE RIBS
Incredibly tender and flavorful, these Slow Cooker Pineapple Chipotle Ribs are the ultimate football watching food. They are hearty, finger licking good, pack a bit of a kick, and have so much flavor everyone goes home a winner!

Steps:
- Combine the Rub ingredients in a bowl.
- Pat the ribs dry, then rub with the Rub.
- Place in slow cooker and cook on low heat for 4 hours
- I have a Hamilton Beach slow cookerand I love it because I can set the cook time and when it has finished it will automatically switch to warm.
- Meanwhile, make the BBQ Sauce by combining all the BBQ sauce ingredients in a large blender or food processor, and processing until smooth.
- I have a Blendtec blender which is a lot of blender for this recipe but it is just what I need for a lot of other recipes.
- After 4 hours cook time, drain the ribs(if necessary), and dump sauce over the top, reserving about a cup to a cup and a half for finishing.
- Cook 2 more hours until completely tender. Stir well to get the sauce well incorporated
- To finish the ribs off, grill/broil for 5 to 10 minutes to get a nice caramelized finish on top (optional)
- Garnish and Enjoy!

Steps:
- In a small bowl, combine the salt, pepper, onion powder, cayenne, cumin, chili powder, and garlic powder.
- Rub the spice mix all over the baby back ribs.
- Drain the juice from the can of pineapple and add to the slow cooker, along with the barbecue sauce. Stir to combine.
- Add the diced pineapple and ribs to the slow cooker and cover with the sauce.
- Cover and cook on high for 4 hours. Halfway through, flip the racks of ribs so the one that was previously on the bottom is now on top. Cover with more sauce.
- Remove the ribs from the slow cooker and cut into individual pieces. Serve with the leftover sauce and pineapple chunks.
- Enjoy!

- Generously season the ribs with salt and pepper, then rub with the vegetable oil and sprinkle with the chile powder, pressing to adhere. Whisk 1/3 cup barbecue sauce, the vinegar, ginger and garlic in a 6- to 8-quart slow cooker. Add the ribs and turn to coat in the sauce. Cover and cook on low until the ribs are tender, 7 hours.
- Preheat the broiler. Transfer the ribs to a rimmed baking sheet. Remove 1/4 cup of the cooking liquid to a small bowl and whisk in the remaining 1/3 cup barbecue sauce, the pineapple preserves and ketchup.
- Brush the pineapple sauce all over the ribs to coat completely; arrange bone-side down. Broil until the sauce is sticky and the ribs are lightly charred in spots, 3 to 5 minutes. Top with the scallions.

- Put 4 tbsp of barbecue sauce along with the rest of the ingredients into your slow cooker. Top up with enough water to cover (roughly 1.5l). Slow cook on Low for 8 - 9 hours until very tender but not completely falling off the bone.
- Heat the oven to 220C/ 200C fan/ gas mark 7. Remove the ribs from the slow cooker using a slotted spoon or tongs. Handle them carefully as the meat will be very tender and may start to fall off. - Place Reynolds™ Slow Cooker Liners inside a 5- to 6 1/2 -qt slow cooker bowl. Make sure that liner fits snugly against the bottom and sides of bowl and pull the top of the liner over rim of bowl.
- Place pork ribs, garlic and onion in slow cooker. Spoon about half of the pineapple with some of the juice over ribs. Reserve remaining pineapple and juice.
- Cover; cook on Low heat setting 8 to 10 hours.
- About 35 minutes before serving, drain and discard cooking juices from slow cooker; wipe edge of slow cooker clean. - Spray the slow cooker with non-stick cooking spray (or use a slow cooker liner to make clean up a breeze!).
- Take the slab of ribs and cut into individual slabs (about 2-3 ribs each). Put the ribs into the slow cooker.
- Mix the pineapple juice and brown sugar together and pour over the ribs. Cook on HIGH for 5-6 hours or LOW for 8-9 hours.
- After they are done in the slow cooker, use tongs to GENTLY pull them out (they will literally fall apart when you touch them).
- Turn the broiler on in your oven.
- Line a baking sheet with foil and place ribs on sheet.
- Cover with the BBQ sauce and place in oven to get the BBQ sauce to get a nice char.
- Optional: You can skip the oven and put on the grill!
