SLOW-COOKER PORK AND PINEAPPLE ON A STICK
Transport to a party or potluck right in the slow cooker, and it'll keep warm until everyone is ready to skewer.

Steps:
- Spray 1 1/2- to 2-quart slow cooker with cooking spray. In slow cooker, mix pork, hoisin sauce, garlic and reserved 2 tablespoons pineapple juice to coat pork evenly. (Refrigerate remaining pineapple.)
- Cover; cook on Low setting 4 to 5 hours.
- About 40 minutes before serving, drain cooking juices in slow cooker. In small bowl, mix barbecue sauce and plum sauce. Spoon sauce over pork; stir gently to coat. Add pineapple chunks to pork mixture. Sprinkle with bell pepper.
- Increase heat setting to High; cover and cook 25 to 30 minutes longer or until pork is glazed.
- Gently stir pork mixture. Serve with long wooden picks or skewers for spearing pork, pineapple and bell pepper pieces. If necessary, cover and hold in slow cooker on Low setting up to 2 hours.

- Place pork roast into a slow cooker. Combine crushed pineapple, garlic, cumin, salt, red pepper flakes, and pepper in a bowl. Pour over pork roast. Cover slow cooker.

- If using whole pineapple: Peel, quarter, and cut away the core from the pineapple. Discard the core. Cut each quarter in half lengthwise then slice 1/4-inch thick slices crosswise.
- Stir the pineapple together with the sugar, ginger, and cinnamon in a slow cooker. Cover and cook on HIGH for 4 hours, until the pineapple is very tender and slightly sweet.
- Serve warm with scoops of coconut ice cream on top. The compote keeps for up to a week tightly sealed in the refrigerator.

- Heat the oil in a large, flameproof casserole dish. Season the pork, and brown it in 2 or 3 batches until golden, about 5 mins per batch. Set aside in a bowl. Stir the onions into the remaining fat, cover and soften for 5 mins - they will take on the browned colour of the meat. Heat oven to 160C/140C fan/gas 3.
- Add the garlic, coriander stalks, chillies and anise to the dish, sizzle for 1 min, stirring often, then mix in the sugar and tomato purée. When these have melted and it looks a bit like barbecue sauce, return the pork and its resting juices to the dish, along with the fish sauce and stock. Tuck in the pineapple chunks here and there.
- Once simmering, cover the hotpot, leaving a small gap for steam to escape, and transfer to the oven for 2 hrs. With 30 mins to go, skim some of the fat from the top (this tends to seal the liquid in, making it more difficult for the sauce to reduce), then return to the oven. The pork will be meltingly soft when ready. If the sauce is thin, lift the pork into a warmed serving dish, put the casserole dish on the hob and simmer until the sauce has slightly thickened. Leave to cool for 5 mins, taste for seasoning, pour over the pork and sprinkle over the coriander leaves.

- Spray the slow cooker with non-stick cooking spray (or use a slow cooker liner to make clean up a breeze!).
- Take the slab of ribs and cut in half.
- Mix together brown sugar and Julios seasoning and rub onto the ribs.
- Put the ribs into the slow cooker on their side.
- Cook on HIGH for 4 hours or LOW for 8 hours.
- After they are done in the slow cooker, use tongs to GENTLY pull them out (they will literally fall off the bone).
- Turn the broiler on in your oven.
- Line a baking sheet with foil and place ribs on sheet.
- Cover with the BBQ sauce and place in oven to get the BBQ sauce to get a nice char.
- Optional: You can skip the oven and put on the grill!

- In a small bowl, combine the salt, pepper, onion powder, cayenne, cumin, chili powder, and garlic powder.
- Rub the spice mix all over the baby back ribs.
- Drain the juice from the can of pineapple and add to the slow cooker, along with the barbecue sauce. Stir to combine.
- Add the diced pineapple and ribs to the slow cooker and cover with the sauce.
- Cover and cook on high for 4 hours. Halfway through, flip the racks of ribs so the one that was previously on the bottom is now on top. Cover with more sauce.
- Remove the ribs from the slow cooker and cut into individual pieces. Serve with the leftover sauce and pineapple chunks.
