8 Garlic Cloves
8 Bacon Slices
1 Large Onion
3 Large Carrots
3 Celery Sticks
2 Medium Parsnips
1 Medium Leek
100 ml White Wine
75 ml Single Cream
1 Tbsp Bouquet Garni
Salt & Pepper

Steps:

  • Place your slow cooker on high.
  • Peel, clean and dice your garlic, onion, carrots, celery, parsnips and leek.
  • Slice your bacon.
  • Add in the bacon and prepped vegetables and stir.
  • Pour in your white wine and seasonings.
  • Place your rabbit pieces on top of the vegetables.
  • Cook on high for 4 hours or low for 6.5 hours.
  • Remove the rabbit and using a hand blender, blend a small amount of the stew to thicken it. Add in your cream and serve with the rabbit.

This is a savory slow cooker rabbit stew with vegetables. The sour cream sauce is perfectly flavored with paprika and rosemary or thyme.

2 rabbits, cleaned and cut up (see How to Cut Up a Rabbit )
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon paprika
2 small carrots, sliced
1/2 cup chopped onion
6 ounces canned sliced mushrooms, drained
2 sprigs of rosemary (or thyme)
10 3/4 ounces cream of mushroom soup, undiluted
1/4 teaspoon Worcestershire sauce
1 cup sour cream

Steps:

  • Sprinkle the meat with salt, pepper, and paprika and arrange it in the bowl of a slow cooker. Layer the carrots and onions on top of the meat, along with the mushrooms, if using.
  • Add a few sprigs of fresh rosemary or thyme to the mixture.
  • In a bowl, combine the condensed soup with the Worcestershire sauce. Stir the mixture and spoon it over the meat.
  • Cover and cook on low for 5 to 6 hours, or until the meat is tender and thoroughly cooked. According to the USDA, the minimum safe temperature for rabbit is 160 F.
  • Add the sour cream, stir gently to blend, and cook for about 20 to 30 minutes longer, or until hot.
  • Serve the stew with crusty bread or biscuits and a tossed salad .

Variant on a few other rabbit / crock pot recipes I've tried. It makes a hearty one-pot meal for two people. I always like to leave the vegetables nice and chunky. You could try a little less liquid and therefore less flour to thicken, however I found this works well and the additional liquid plays well with the vegetables during cooking.

1 rabbit
1/2 teaspoon ground black pepper
425 g diced tomatoes
1 cup red wine
1 cup water
100 g button mushrooms, sliced
125 g shortcut bacon, sliced
2 medium carrots, chopped
2 medium onions, chopped
2 stalks celery, chopped
1 bay leaf
1 teaspoon oregano
1/4 cup flour

Steps:

  • Grind pepper over the rabbit and place in the crock pot.
  • Combine all other ingredients EXCEPT FLOUR in a large bowl, mix well and pour over the rabbit.
  • Cover and cook on low for 6 hours for a small rabbit, or up to 8 hours for a large rabbit. Actually cook for half an hour less as below.
  • Thirty minutes before ready blend flour with 1/2 cup of water until it is a smooth paste, add to the pot and stir well to thicken and continue cooking covered for a further 30 minutes.
  • Give it a good stir and allow to rest 10-15 minutes before serving.
  • At this point the rabbit should be so tender that you can tear pieces off with a fork to serve rather than cut. Just scoop it all out onto a plate.
  • You'll end up with bones in the dish so eat much like you would a fish dish being careful for bones. Serve along with a nice crusty roll to soak up the juices.

140g prune
50ml brandy
50g soft brown sugar
2 rabbits, jointed
plain flour, for dusting
1 tbsp vegetable oil
3 rashers smoked streaky bacon, sliced into thin strips
2 carrots, chopped
1 onion, chopped
2 celery sticks, chopped
1 garlic clove, crushed
2 thyme sprigs
1 bay leaf
150ml red wine, the best you can afford
250ml chicken stock
chopped parsley and wild rice, to serve

Steps:

  • Heat oven to 150C/130C fan/gas 2. Put the prunes in a bowl with the brandy and brown sugar, stir, then set aside to soak.
  • Dust the rabbit in the flour. Heat the oil in a large flameproof dish and brown the rabbit all over until golden - you may have to do this in batches. Set the rabbit aside. Add the bacon, vegetables, garlic and herbs to the dish and fry for 5 mins until starting to colour.
  • Pour in the red wine and scrape all the goodness off the bottom of the dish. Add the chicken stock and put the rabbit back in the dish with the boozy prunes, then cover and cook for 2 hrs, stirring occasionally, until the rabbit is totally tender. Serve scattered with parsley and wild rice on the side.

Original German rabbit stew recipe passed down from my great-grandmother who immigrated to US in 1889. This is a lot of work to make but well worth it. It is an acquired taste dish; once hooked, you can't get enough. Serve with fresh mashed potatoes and celery sticks. Use the stock as gravy for mashed potatoes. Always tastes better as leftovers. Hope you enjoy!

2 ¾ cups red wine vinegar
3 cups water
1 ½ tablespoons white sugar
8 whole cloves
1 medium onion, thinly sliced
5 stalks celery, chopped
1 lemon, thinly sliced
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 tablespoon salt
1 teaspoon pickling spice
1 teaspoon ground black pepper
1 cup all-purpose flour
1 (2 1/2 pound) rabbit, cleaned and cut into pieces
3 tablespoons vegetable oil

Steps:

  • In a large pot, combine the water, white sugar, whole cloves, onion, celery, lemon, cinnamon, ground cloves, salt, pickling spice and black pepper. Bring to a boil, then turn off and allow to cool. Place the rabbit pieces into the mixture to marinate. Cover and refrigerate overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Spread flour out onto a parchment or aluminum foil lined baking sheet. Bake for about 10 minutes, stirring occasionally, until the flour is a light brown color.
  • Remove the rabbit from the marinade and pat dry. Strain the marinade, and discard the solids. Reserve the liquid for later.
  • Heat the oil in a deep skillet or Dutch oven over medium heat. Coat the chicken with the toasted flour. Place into the hot oil, and cook until browned on both sides. Remove from the pan, and set aside. If there is oil left in the pan, sprinkle enough of the toasted flour over it to absorb the liquid.
  • In a jar with a lid, mix 1/2 cup of the marinade with 1/4 cup of the remaining toasted flour. Close the lid, and shake vigorously until well blended with no lumps. Heat the pan with the rabbit drippings over low heat. Gradually stir in the marinade mixture, stirring constantly until slightly thickened.
  • Return the rabbit pieces to the pan. Cover and simmer over low heat for 1 hour, or until the meat is falling off of the bones. You may remove the bones prior to serving if desired.
