6 ounces ground turkey sausage, browned and drained
2.5 cups chicken broth
2 teaspoons poultry seasoning
1/2 teaspoon fresh ground black pepper
1.5 cups chopped celery
1 cup chopped onion
1.5 cups chopped apple
1 package {12 to 14 ounces) stuffing mix (I like Pepperidge Farms )

Steps:

  • Ideal slow cooker size: 4-Quart.
  • Heat the broth, poultry seasoning, black pepper, celery and onion in a 3-quart saucepan over medium-high heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the vegetables are tender, stirring often.
  • Remove the saucepan from the heat. Add the stuffing mix, chopped apple and cooked sausage and mix lightly.
  • Spoon the stuffing mixture into a greased 4-quart slow cooker.
  • Cover and cook on LOW 3 to 4 hours, until heated through.

1/4 cup Butter (Unsalted)
1 pound Italian sausage (Casings removed)
1 cup Onions (Finely chopped)
1 1/4 cups Celery (Diced)
2 cloves Garlic (Finely minced)
1 loaf French bread (About a 1 pound load, Can also use Italian bread, Cut into 1 inch cubes, Should be stale, dry and crusty)
2 Eggs (Large, Lightly beaten )
1.5-2 cups Chicken broth (Low sodium, Adjust quantity based on how moist you like your stuffing)
Salt (To taste)
Pepper (to taste)
1 tsp Thyme (Dried)
1 tsp Oregano (Dried)

Steps:

  • Add butter in a nonstick pot or pan over medium-high heat.
  • When it's fully melted, add sausage. Crumble and cook it until no longer pink.
  • Add onion, celery, garlic and cook until garlic is fragrant veggies are partially softened. This takes about 2-3 minutes.
  • Note: Use a multifunctional slow cooker that allows you to saute the sausage and vegetables the in the slow cooker. This way, you won't have to make another pot or pan dirty.
  • Grease slow cooker (6 quart or larger).
  • Add dry bread cubes.
  • Add the cooked sausage and veggie mixture.
  • Pour the beaten eggs.
  • Pour the broth. Keep in mind that the moisture will not reduce much in the crockpot since there will be a lid on it.
  • Sprinkle salt, pepper, dried thyme, oregano, rosemary.
  • Mix everything together gently until combined.
  • Cover and cook on Low heat for 4 hours.
  • Then, stir gently and Enjoy!

1 roll, 16 oz, ground sausage, sage flavored
3 stalks celery, diced
1 small onion, diced
2 cups chicken broth or stock
1/2 teaspoon celery seed
Salt and pepper to taste

Steps:

  • Grease a slow cooker with nonstick cooking spray and add bread to a slow cooker. Set aside.
  • Add sausage, celery, and onion to a skillet and heat over medium-high heat, stirring frequently and breaking apart sausage until no longer pink. Stir in celery seed and other herbs. Place sausage on top of bread and gently toss.
  • Pour chicken broth over bread. Do this slowly in an attempt to evenly distribute broth.

This hearty stuffing requires no use of a stove-top or oven-simply add cut-up stale French bread, a few vegetables and sweet Italian sausage to a slow cooker and let the machine do the rest. Only a small amount of chicken broth is necessary because the vegetables and sausage give off so much liquid (and flavor).

8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces plus more for greasing the slow cooker
1 large crusty loaf of French bread or two baguettes (not sourdough), cut into 1-inch pieces and staled overnight (about 14 cups)
1 large onion, cut into 1/4-inch pieces (about 2 cups)
2 medium carrots, cut into 1/3-inch pieces (about 1 heaping cup)
2 stalks celery, cut into 1/3-inch pieces (about 1 cup)
1 1/2 teaspoons finely-minced fresh thyme leaves
Kosher salt and freshly ground black pepper
1 cup low-sodium chicken broth
1 pound sweet Italian sausage, casings removed

Steps:

  • Lightly grease the bottom and sides of a 6-quart slow cooker with butter.
  • Toss the stale French bread, butter, onions, carrots, celery, thyme and 1 teaspoon each salt and pepper in the slow cooker. Pour the chicken broth over the bread mixture and toss to coat. Use your hands to tear teaspoon-size pieces of the Italian sausage and put them directly on top of the bread mixture. The sausage should cover most of the stuffing.

1 loaf white sandwich bread
½ pound sage-flavored bulk breakfast sausage
2 tablespoons butter
1 cup finely chopped onion
¾ cup diced celery
1 medium Golden Delicious apple, chopped
⅓ cup chopped fresh parsley
2 tablespoons chopped fresh sage
1 tablespoon chopped fresh rosemary
2 teaspoons chopped fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup chicken broth, or more as needed
⅓ cup unsweetened applesauce
1 large egg
cooking spray

Steps:

  • Tear bread into small pieces and spread out on a baking sheet. Let dry at room temperature for 8 hours or overnight.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove sausage to a paper towel-lined plate to drain. Drain and discard grease from the skillet.
  • Melt butter in the same skillet over medium heat; stir in onion and celery. Cook and stir until very tender, about 10 minutes. Add sausage, apple, parsley, sage, rosemary, thyme, salt, and pepper. Cook for 2 minutes, then remove from heat.
  • Put dried bread pieces into a large bowl. Pour sausage mixture over bread and mix.
  • Combine chicken broth, applesauce, and egg in a bowl. Pour over bread mixture and mix well. Add more broth, as needed, to moisten all the bread. Don't add too much now; more can always be added later if needed.
  • Spray the inside of a slow cooker with cooking spray. Pour stuffing mixture into the slow cooker; cover and cook on High for 1 hour. Reduce heat to Low and cook for 4 hours; stir the stuffing halfway through cooking, scraping the sides and adding more broth if it seems dry.

16 cups (2 loaves) loosely packed dried bread cubes
1 lb. Lepp's Maple Breakfast sausage, casings removed
1/2 cup butter
5-6 stalks celery, chopped
3 onions, chopped
1 large apple, peeled, cored and finely diced
1 tbsp. poultry seasoning
2 tbsp. fresh thyme, chopped (optional)
1 tsp. salt
½ tsp. pepper
Chicken or vegetable broth (approx. 1 cup)

Steps:

  • The night before, cut the bread into cubes and leave on the counter overnight to dry. Or bake the cubes for 1 hour at 200 degrees.
  • Fry sausage meat until no longer pink, breaking up with a fork so that it separates into small pieces. Remove from frying pan and pour off excess fat. In the same frying pan, melt butter and sauté onion and celery until soft.
  • In a large bowl toss together bread cubes, sautéed vegetables, sausage, apple, spices and 1/2 cup broth. Transfer to a slow cooker* and cover. Cook on high for 45 minutes and then reduce heat to low and cook for 3 to 4 hours, checking a few times to stir. If after 2 hours, the stuffing appears dry, stir and add 2 tablespoons broth. (Allow at least 2 hours of cooking time before you add broth, as ingredients give off moisture as they cook.) Give it a chance to soak in and cook for 30 minutes before adding more broth - too much broth and the stuffing can become quite gummy.
  • This can also be made vegetarian by omitting the sausage and using vegetable broth instead of chicken broth.
  • Serve and enjoy!
  • Makes 10 side dish portions.
  • * I use a 6 ½ qt slow cooker and it fits well. You could divide into two smaller ones, but the stuffing does cook down so you can pack it quite tight.
