- In a bowl, combine the first eight ingredients; mix well. Cut steak horizontally from a long edge to within 1/2 in. of opposite edge; open (like a book) and flatten to 1/2-in. thickness. Spread spinach mixture over the steak to within 1 in. of edges. Roll up, jelly-roll style, starting with a long side; tie with kitchen string. , Place in a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 1 hour. Uncover; bake 30-45 minutes longer or until tender. Let stand for 10-15 minutes. Cut into 1/2-in. slices.

SLOW-COOKER SPINACH-STUFFED CUBED STEAKS

- Flatten each beef steak to 1/8-inch thickness. Spread 1 tablespoon pesto over each steak; sprinkle each with 1 teaspoon onion. Divide spinach among steaks, spreading to edges. Roll up steaks; secure with toothpicks.
- Place steaks in 2- to 3 1/2-quart slow cooker. Mix broth and garlic; pour over steaks.
- Cover and cook on low heat setting 8 to 9 hours or until beef is tender.
- Remove steaks from cooker to serving platter; keep warm.
- Skim fat from beef juices in cooker if desired. Measure 1 cup juices; pour into small saucepan. Mix cornstarch and water; stir into juices. Cook over medium-high heat about 5 minutes, stirring frequently, until thickened. Serve over steaks.

- Pound steaks thin between layers of plastic wrap. Spread each steak with 1/4 of pesto, then layer with 1/4 of onion flakes and finally 1/4 of spinach. (Alternatively, combine pesto, onion and spinach and divide mixture evenly between steaks.) Roll up and secure with toothpicks. Dissolve bouillon cubes in water; stir in garlic. Pour bouillon mixture into crockpot. Add steak rolls in a single layer. Cover and cook on LOW for 8 to 10 hours. CROCK POT STUFFED STEAK
This is a tried and true recipe for my family. I've been making this for many years. I got the recipe from my mother-in-law. You could also use flank steak in place of the round steak for this recipe.

Steps:
- Pound the salt, garlic powder and black pepper into the steak.
- Lay the stuffing on top of the steak and roll up jelly-roll style.
- Place toothpicks in steak to hold in place.
- Place the steak in the crock pot.
- Mix the cream of mushroom soup, dry onion soup mix and water in bowl until smooth.
- Pour over the steak in the crock pot.
- Cook on low for about 6 hours.
- Thicken the broth for gravy if you like.
- Serve with mashed potatoes, if desired.
- Slice the steak into serving pieces.

- Pound steaks to 1/4-in. thickness. Sprinkle with 1 teaspoon salt and pepper. Place in a greased 13x9-in. baking dish. Spoon salad dressing over steaks. Cover and chill for 1 hour. , In a large saucepan, combine the vegetables, broth and remaining salt. Cover and cook over medium heat for 6-8 minutes or until tender. Drain, reserving liquid. , Spoon 1/4 cup vegetable mixture onto each steak; roll up and secure with toothpicks. In a large nonstick skillet, brown meat rolls in oil on all sides. Cover and simmer for 35-40 minutes or until meat is tender. Remove with a slotted spoon; keep warm. , Combine cornstarch and reserved cooking liquid until smooth; stir into pan drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Add browning sauce if desired. Remove toothpicks. Serve with steak rolls.

- Flatten the steaks so that they are about 1/8-inch thick by pounding them with a meat mallet or a rolling pin.
- Divide the spinach, onion and garlic evenly among the steaks, spreading the filling to the edges, then roll up each of the steaks and secure it with toothpicks or small metal skewers.
- Place the steaks in a 31/2-quart (31/2 litre) crockpot, pour the wine or beef broth over the steaks, cover the crockpot, and cook on low for 8 to 9 hours or until the beef is tender.
- Remove the steaks from the crockpot to a serving platter, and keep warm.
- Skim any fat from the juices in the crockpot, and pour one cup of the juice into a small pan.
- To make the sauce, mix cornstarch and water and add to the juice; then cook over a medium-high heat for about 5 minutes, stirring continuously until thickened.
- Serve the steaks with the sauce and a potato dish such as Bergy's Irish Mashed Potatoes recipe #10974, English Parsley Potatoes recipe #123425 or Colcannon recipe #123663.

- Place beef in the slow cooker crock. Pour beef stock, vinegar, and Worcestershire over beef. Cook on Low until beef is cooked to medium, 3-4 hours. Remove cooked beef from broth and set aside. Reserve broth.
- Preheat an oven to 350 degrees F (175 degrees C).
- Heat oil in a large skillet over medium-high heat. Cook mushrooms in oil until they begin to soften; add onion and green pepper. Cook and stir until vegetables are soft, about 5 minutes.
- Slice beef thinly. Divide beef and vegetables evenly among the rolls. Top each sandwich with 2 slices cheese; wrap in foil.
- Place sandwiches in preheated oven and heat until cheese is melted; about 10 minutes. Serve hot sandwiches with reserved beef broth, if desired.
