We love cauliflower, eat it raw as a snack, roast or steam it, mash it for a potato replacement, add it to a salad, but enjoying it as a creamy casserole with layers of interesting flavor is a great way to brighten up the dinner table.

1 serving olive oil cooking spray
1 link sweet apple chicken sausage (such as Trader Joes®), cut into 1/4-inch slices
1 large head cauliflower, cut into florets
½ (8 ounce) package cream cheese, cubed
3 tablespoons unsalted butter
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon freshly ground black pepper, or to taste
¼ teaspoon red pepper flakes, or to taste
6 ounces shredded pepper Jack cheese
4 slices bacon

Steps:

  • Spray the inside of a 4- to 6-quart slow cooker with cooking spray.
  • Spray a small skillet with cooking spray and add sausage. Cook over medium heat until sausage are browned, 2 to 3 minutes. Transfer to the prepared slow cooker. Add cauliflower, cream cheese, butter, garlic powder, salt, pepper, and red pepper flakes; stir to combine.
  • Cover slow cooker and cook on Low until cauliflower is fork tender, about 2 hours. Stir in pepper Jack cheese and cook for 30 minutes longer.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Drain bacon slices on paper towels and crumble once cool enough to handle. Sprinkle crumbled bacon over finished casserole.

1 large cauliflower
4 garlic cloves, minced
4 tablespoons butter, melted
1 tablespoon sage, finely chopped
1 lemon, juiced and zested
1 1/2 teaspoons salt
1/2 teaspoon pepper
3/4 cup parmesan cheese (the powdered kind)
2 tablespoons fresh parsley, finely chopped

Steps:

  • If cauliflower has greens still attached to the bottom, leave them on. Place whole cauliflower in the slow cooker.
  • In a small bowl, mix together garlic, butter, sage and lemon zest. Pour butter mixture over cauliflower. Use your fingers to rub into the surface.
  • Evenly sprinkle with the salt and pepper, followed by the powdered Parmesan cheese.
  • Pour the lemon juice around the cauliflower in the slow cooker (not on top of the cauliflower).
  • Cook on low for 5 hours, or on high for 3 hours, 30 minutes.
  • Gently remove the cauliflower from the slow cooker. Add parsley to the slow cooker and mix with the liquid from cooking.
  • Slice the cauliflower and pour the sauce (cooking liquid with parsley) over the top. Serve with grilled chicken or fish, or let it stand alone and shine.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 cups shredded cheddar cheese
1 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup butter, cubed
1 cup dry bread crumbs

Steps:

2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon cumin
2 teaspoons salt
3 cloves garlic, sliced
pita, to serve
tzatziki sauce, to serve
fresh cilantro, chopped, to serve

Steps:

  • Preheat oven to 400°F (200°C).
  • Prep cauliflower by removing leaves and stem with a knife, then place on a parchment paper-lined baking sheet.
  • In a small bowl, whisk together tahini, olive oil, turmeric, paprika, garlic powder, chili powder, cumin, salt, and garlic.
  • Pour tahini mixture over cauliflower, using your hands to make sure entire head is covered.
  • Bake cauliflower for 1 hour and 15 minutes. Make a tent with aluminum foil and cover halfway through.
  • Cut cauliflower into pieces and then separate florets.
  • Serve on warm pita with tzatziki sauce and cilantro.

1/4 cup butter
1 cup dry bread crumbs
1 cup sour cream
1/2 teaspoon salt

Steps:

  • Lightly spray slow cooker with nonstick cooking spray.
  • Chop your cauliflower into florets and place in the bottom of your slow cooker.
  • Pour water over cauliflower.
  • Spoon the cream of chicken soup over the cauliflower. Do not dilute the soup.
  • Sprinkle cheddar cheese over the soup.
  • Cover and cook on low for about 4 hours or until cauliflower is fork tender.
  • At the end of the cook time, melt the butter in a small saucepan. Add the bread crumbs and cook until golden brown; set aside.
  • Add sour cream, salt, and pepper into the cooked cauliflower; mix well.
  • Sprinkle cooked bread crumbs on top and serve.
