- Preheat oven to 350 degrees F.
- Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
- Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
- Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.
ITALIAN-STYLE MEATLOAF

- For the meatloaf: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Heat the olive oil in a medium skillet over medium heat. Add the garlic, onion, bell pepper and crushed red pepper if using and saute until the vegetables are tender, about 5 minutes. Set aside to cool.
- In a large bowl, combine the beef, Parmesan, breadcrumbs, parsley, Worcestershire sauce, garlic salt, kosher salt, pepper, basil, eggs, 1/2 cup of the marinara and the cooled vegetables. Use your hands to mix everything together. Transfer the mixture to the center of the prepared baking sheet and form into a loaf. Coat the meat loaf with the remaining 1/2 cup marinara.
- Bake until the meat loaf is firm, 45 minutes to 1 hour (depending on the shape of your loaf). Let set for about 5 minutes before slicing.
- For the sandwiches: Butter the rolls and then sprinkle with garlic salt. Transfer to a baking sheet and bake until light golden and toasted, about 5 minutes.
- Add a slice of meatloaf to each toasted roll and top with some of the marinara and 3 slices mozzarella. Return to the oven and bake until the cheese is melted, 8 to 10 minutes.

- In a bowl, combine the egg, half of the tomato sauce, bread crumbs, onion and green pepper if desired, 1/2 teaspoon of oregano, salt and pepper. Add beef; mix well. , On a large piece of heavy-duty foil, pat meat mixture into a 14x8-in. rectangle. Sprinkle cheeses to within 1/2 in. of edges. - In a large bowl combine tomatoes, bread crumbs, onion, zucchini, roasted peppers, egg product, half of the parsley, the garlic, and black pepper. Add ground beef and ground lamb; mix well.
- Coat a 3 1/2- or 4-quart slow cooker with cooking spray. Cut three double-thick, 18x3-inch heavy foil strips. Crisscross strips in the prepared cooker; coat strips with cooking spray. - Reserve 1/3 cup pizza sauce; cover and refrigerate.
- In a bowl, combine remaining pizza sauce with next 7 ingredients. Mix together well.
- Form meat mixture into loaf and place into crockpot. (place 3 intersecting strips of foil in the bottom of the slow-cooker to aid in removing the meatloaf later).
- Cover and cook on low for 8-10 hrs or on high for 4-6 hours (To ensure doneness, insert a meat thermo into centre of loaf; internal temp should read 170°F.).
- Spread loaf with reserved 1/3 cup pizza sauce. Sprinkle with mozzarella cheese. Cover and let cook for another 15 minutes, or until cheese is melted.
- Remove meatloaf to serving dish, slice, and enjoy!
SLOW COOKER ITALIAN MEATLOAF
This is an awesome recipe and very versitile. I also make up the meatloaf mixture and shape into meatballs. It makes about 3 dozen meatballs. I will freeze in 3 quart size ziploc bags and simmer a dozen or so in a sauce pan and spaghetti sauce when we want to have spaghetti with meatballs for dinner! Very Moist and flavorful

- Fold a 30" long piece of foil in half lengthwise. Place in the bottom of the slow cooker with both ends hanging over the top edges of the slow cooker.
- In a large bowl, combine all ingredients except 2 Tbls spaghetti sauce until well blended.
- Shape into a loaf. Place in a slow cooker on top of foil. Spread 2 Tbls of spaghetti sauce over top.
- Cover tightly and cook on high 2 1/2 to 3 hours or on low 5 to 6 hours.
- Use the ends of the foil to lift out meat loaf and transfer to a serving platter.

- Slow Cooker Chicken Alfredo. Who doesn’t love creamy alfredo sauce with al dente pasta and roasted chicken? It’s about as close to perfect as food gets if you ask me!

- Crockpot Stuffed Shells. I still remember trying to stuff pasta shells and struggling to get the spoon inside. Then when I saw someone using a piping bag, I had a serious facepalm moment.
- Minestrone Soup. Soup is the Crockpot’s best friend. There’s nothing better than throwing a whole bunch of ingredients into the pot with broth and coming back to a comforting bowl of goodness.
- Crock Pot Pizza Casserole. I prefer to think of this as pizza-pasta, but you can call it whatever you like. As you might’ve guessed, it’s the perfect blend of hearty pasta and yummy pizza flavors.
- Crock Pot Italian Sloppy Joe. If you’re looking for a classic sloppy Joe that’s maybe a little lighter, you’ll have to try this turkey version. I love ground turkey (and chicken) because they’re wonderfully lean and super tasty.
- Soft And Creamy Slow Cooker Polenta. I have a dangerous weakness for polenta. When it’s made with cream and cheese, I just can’t get enough. As with rice, you’ll want to cook the polenta in stock first and then add the cream at the end.
- Slow Cooker Cheesy Tortellini. Pasta is great. It’s cheap, easy to cook, and a pretty safe dinner option no matter who you’re cooking for. But if you like your comfort food with extra comfort, you have to try making your next pasta meal with three-cheese tortellini.
