1 onion, quartered
1 (10.5 ounce) can beef broth
1 (1 ounce) packet dry au jus mix
1 (.7 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Place beef chuck roast into a slow cooker and scatter onion quarters around the meat. Pour the beef broth over the meat and sprinkle the au jus mix, Italian salad dressing mix, salt, and black pepper over the roast.
  • Cover cooker, set on Low, and cook until meat is very tender, 6 to 8 hours.

1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

1 tablespoon olive oil
3 cloves garlic, minced
1 medium yellow onion, minced
1 red bell pepper, minced
Pinch crushed red pepper, optional
2 pounds ground beef (I use 80/20)
1 cup grated Parmesan
3/4 cup breadcrumbs
1/4 cup minced fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
16 fresh basil leaves, chopped
2 large eggs, lightly beaten
1 cup marinara sauce
6 tablespoons unsalted butter, at room temperature
6 soft sub rolls, split
Garlic salt, as needed
1 cup marinara sauce
1 pound sliced mozzarella

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Heat the olive oil in a medium skillet over medium heat. Add the garlic, onion, bell pepper and crushed red pepper if using and saute until the vegetables are tender, about 5 minutes. Set aside to cool.
  • In a large bowl, combine the beef, Parmesan, breadcrumbs, parsley, Worcestershire sauce, garlic salt, kosher salt, pepper, basil, eggs, 1/2 cup of the marinara and the cooled vegetables. Use your hands to mix everything together. Transfer the mixture to the center of the prepared baking sheet and form into a loaf. Coat the meat loaf with the remaining 1/2 cup marinara.
  • Bake until the meat loaf is firm, 45 minutes to 1 hour (depending on the shape of your loaf). Let set for about 5 minutes before slicing.
  • For the sandwiches: Butter the rolls and then sprinkle with garlic salt. Transfer to a baking sheet and bake until light golden and toasted, about 5 minutes.
  • Add a slice of meatloaf to each toasted roll and top with some of the marinara and 3 slices mozzarella. Return to the oven and bake until the cheese is melted, 8 to 10 minutes.

0.75 cup soft whole wheat bread crumbs (1 slice)
0.5 cup chopped onion (1 medium)
0.5 cup chopped zucchini
0.5 cup well drained and chopped roasted red sweet peppers
0.5 cup refrigerated or frozen egg product, thawed
0.333 cup snipped fresh Italian (flat-leaf) parsley

Steps:

  • Coat a 3 1/2- or 4-quart slow cooker with cooking spray. Cut three double-thick, 18x3-inch heavy foil strips. Crisscross strips in the prepared cooker; coat strips with cooking spray.   • Using the foil strips, carefully lift meatloaf from cooker, allowing liquid to drip off. Place on a serving plate. Remove foil strips. Sprinkle meatloaf with cheese (if desired) and the remaining parsley. Cover and let stand for 15 minutes before serving.

1 egg, beaten

1/2 cup chopped green pepper

1 cup shredded mozzarella cheese

Steps:

  • Reserve 1/3 cup pizza sauce; cover and refrigerate.
  • In a bowl, combine remaining pizza sauce with next 7 ingredients. Mix together well.
  • Form meat mixture into loaf and place into crockpot. (place 3 intersecting strips of foil in the bottom of the slow-cooker to aid in removing the meatloaf later).
  • Cover and cook on low for 8-10 hrs or on high for 4-6 hours (To ensure doneness, insert a meat thermo into centre of loaf; internal temp should read 170°F.).
  • Spread loaf with reserved 1/3 cup pizza sauce. Sprinkle with mozzarella cheese. Cover and let cook for another 15 minutes, or until cheese is melted.

2 lbs lean ground beef
2 slices fresh bread (ripped into small pieces, about 2 cups)
1/2 cup spaghetti sauce
1 large egg
2 tablespoons dried onion flakes
1 teaspoon garlic salt
1/2 teaspoon dried Italian herb seasoning
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
2 tablespoons spaghetti sauce

Steps:

  • Fold a 30" long piece of foil in half lengthwise. Place in the bottom of the slow cooker with both ends hanging over the top edges of the slow cooker.
  • In a large bowl, combine all ingredients except 2 Tbls spaghetti sauce until well blended.
  • Shape into a loaf. Place in a slow cooker on top of foil. Spread 2 Tbls of spaghetti sauce over top.
