Steps:
- Heat olive oil over medium-high heat in a large saucepan. Saute garlic, onion, celery, and bell pepper until tender. Stir in kidney beans, onion powder, salt, pepper, and hot sauce. Reduce heat to low and let mixture simmer slowly while you cook the rice.
- Bring the chicken stock to a boil and stir in rice and butter. Return to a boil, reduce heat to low, cover and cook for 20 minutes without removing the lid. Remove from heat and let stand for 5 minutes.
- Fold rice and beans gently together and transfer to a serving dish. Serve garnished with cilantro.

Steps:
- Rinse beans, and then soak in a large pot of water overnight.
- In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
- Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
- Stir sausage into beans, and continue to simmer for 30 minutes.
- Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

COPYCAT POPEYES RED BEANS AND RICE RECIPE
We didn't even realize there was a way to recreate the Popeyes red beans and rice magic in our own kitchen until we tried this amazing copycat recipe.

- Set Instant Pot to sauté and add bacon. Cook until the bacon is crisp, and then remove from pot.
- Add onion to the pot and cook until the onions begin to soften, scraping the bottom to incorporate the fond.
- While the onions are cooking, rinse the beans and remove any bad beans or stones.
- Add the garlic, liquid smoke, and cajun seasoning to the pot. Stir.
- Add the beans, broth, and bacon to the pot, and then set on high pressure for 1 hour.
- After the beans have cooked, allow the Instant Pot to naturally release for 15 minutes, and then quick release.
- Drain off excess water, reserving a ½ cup.
- Use an immersion blender or potato masher to mash about half the beans. Stir.
- Add beans to the rice, and garnish with fresh parsley or green onions if desired.

- Cook the rice according to package directions. Set aside.
- Heat some oil, vegetable stock or water in a large pot, add the veggies (garlic, onion and green bell pepper) and cook over medium-high heat for about 5 minutes or until golden brown.
- Add the spices and herbs (thyme, paprika, pepper, salt, cayenne and bay leaf).
- Finally, add the beans and vegetable stock or water, stir and cook over medium-high heat for about 10 minutes. To make the stew thicker, I usually mash some beans using an immersion blender, but feel free to use a fork or a potato masher or just omit this step.
- Serve the beans with the rice immediately. We added some chopped fresh parsley on top, but it's up to you. Feel free to add some hot sauce as well.
- Keep leftovers in a sealed container for 4-5 days in the fridge.

- Rinse the beans and soak them if you want.
- Take a Dutch oven and add water, salt and beans in it.
- Keep the flame on high and bring this mixture to a boil.
- Now, add garlic, onion, andouille sausage, and bacon in this mixture and keep the flame on low.
- Stir this mixture occasionally on low flame. Cook it for about 1 ½ hour. Check the water level and add more if you want.
- Wash your rice thoroughly and rinse it. Then, take a rice cooker or pot. Fill it half with water and add the rice in it.

- Soak kidney beans in large bowl with enough cold water to cover by 3 inches, at least 4 hours or overnight. Drain. Place 2 quarts water, beans and next 5 ingredients in large pot. - Heat oil in heavy large skillet over medium-high heat. Add onions, bell pepper, garlic, cumin and oregano and sauté until onions are beginning to brown, about 5 minutes. Stir in beans and rice; cook until heated through, about 5 minutes. Season with salt and pepper.
