SMASHED BLACK BEANS



Smashed Black Beans image

Number Of Ingredients 10

1/4 cup minced yellow onion
1 jalapeno pepper, minced
2 teaspoons vegetable oil
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
3 cloves garlic, minced
2 cups cooked black beans
1 cup chicken or vegetable stock
1 tablespoon white vinegar

Steps:

  • Cook the onions and jalapenos in the vegetable oil in a large saucepan over medium heat until soft, about 5 minutes. Add the cumin, oregano, salt and garlic, and cook another 2 to 3 minutes. Add the beans, stock and 1 cup water and bring to a boil. Turn the heat to low and simmer 15 minutes.
  • Remove the beans from the heat and strain, reserving the liquid. Mash the beans in a small bowl with a potato masher, adding the vinegar and cooking liquid to keep the beans soft. (You will probably not use all the liquid.).

400g can cannellini beans , rinsed and drained
400g can chickpeas , rinsed and drained
juice 2 lemons , zest 1
2 garlic cloves , crushed
2 tsp ground cumin
100ml Greek yogurt

Steps:

  • Put half the beans and chickpeas into a food processor with the lemon juice, garlic, cumin and yogurt, then whizz until smooth. Tip in the rest of the beans and pulse once to get a very chunky dip. Stir in the lemon zest and plenty of seasoning, then divide between 4 containers and store in the fridge.

4 tbsp olive oil, plus extra for drizzling (optional)
12 sage leaves (optional)
1 onion, finely chopped
1 garlic clove, finely chopped
1⁄2 tsp cracked black pepper
400g can cannellini beans, drained and rinsed
1⁄2 lemon, juiced
12 crostini or breadsticks, to serve (see tip, below)

Steps:

  • Heat half the oil in a shallow saucepan over a low-medium heat and scatter in the sage leaves, if using. Fry for 2 mins until crisp, lift onto a plate using a slotted spoon. Tip the onion into the pan and cook for 3 mins until soft, then add the garlic and cook for 1 min more. Sprinkle in the pepper and toast for 1 min, then stir in the beans. Turn off the heat. Stir in the lemon juice.
  • Season the mixture with salt, then tip into a food processor or mini chopper with the remaining oil. Blitz everything together to your desired consistency - it can be a smooth or a rough paste. Will keep covered in the fridge for two days. Bring to room temperature 1 hour before serving.
  • Serve the dip as is with crostini or breadsticks, or drizzle with a little extra olive oil and top with the crispy sage leaves, if using.

1 tablespoon freshly squeezed lemon juice
1 clove garlic, minced

1 teaspoon onion powder, or more to taste
½ teaspoon salt

Steps:

  • Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.

1 tablespoon extra virgin olive oil
1 shallot, minced
1 (15 ounce) can cannellini beans, drained and rinsed
salt & pepper
handful spinach leaves, stems removed
2 cups grated sharp white cheddar cheese
20 inches tortillas
1/4 cup sour cream
2 tablespoons barbecue sauce (I like the spicy kind here)
red pepper flakes

Steps:

  • Heat the olive oil in a large skillet over medium heat.
  • Once hot, add the shallots, beans, red pepper flakes, salt & pepper and cook for about 5 minutes until the shallots are softened, stirring occasionally. Transfer mixture to a small bowl, mash with a fork or potato masher. Taste to correct seasonings.
  • Place one tortilla in the skillet and spread the bean mixture on only one half of the tortilla. Top with spinach, then sprinkle cheese on top. Fold the tortilla in half, press down and cook for about 1-2 minutes per side until golden brown and cheese is melted.
  • Transfer the tortilla to a cutting board and cut into three pieces.
  • Repeat with the other tortillas and remaining ingredients.
  • To make the dip, combine the yogurt and BBQ sauce in a bowl and stir together.
  • Serve warm with the dip.

1 (6 ounce) can tomato juice
2 sliced scallions (about 1 cup)
1 clove garlic
1 (16 ounce) can pinto beans, rinsed and drained
3/4 cup coarsely grated monterey jack cheese or 3/4 cup cheddar cheese (about 3 oz.)
1 tablespoon minced fresh cilantro or 1 tablespoon parsley
1 tablespoon chili powder
salt & freshly ground black pepper

Steps:

  • Place tomato juice, scallions and garlic in a food processor or blender.
  • Process until scallions and garlic are finely chopped.
  • Add beans, cheese, cilantro, chili powder, salt and pepper; process until smooth.
  • To serve: Heat the dip in a medium-size heavy saucepan over medium-low heat; stir constantly with wooden spoon until hot.
