SMASHED ROOTS AND TUBERS WITH CHEVRE (GOAT CHEESE)
Been serving this with our holiday turkey for the last 10 years or so. Very good in place of plain mashed potatoes. Try to find a stronger flavor chevre (the more aged, the stronger). If you prefer a creamier texture, add more chevre or some milk while mashing.

Steps:
- 1. Peel and trim all vegetables, and cube in 1-inch pieces.
- 2. Bring large pot of water to boil, and add vegetables. Cook until just tender, about 15 minutes
- 3. Drain and return to pan. Add chevre and butter and mash until desired consistency. (I like mine a little lumpy).
- 4. Stir in chives and season with salt and pepper to taste. Bring back to heat over medium burner, stirring to keep from sticking. Serve.
CHEVRE CHEESECAKE
A gluten-free, soy-free, cow dairy-free New York cheesecake that has that decadent mouth-feel. I have served it several times without anyone noticing it wasn't the REAL STUFF. At a recent party my husband mentioned that he had not had cheesecake for 20 years because of his allergies so this became my goal and voila! Enjoy!

- Preheat oven to 300 degrees F (150 degrees C). Line bottom of a 9-inch springform pan with parchment paper.
- Combine gingersnap crumbs with melted margarine and mix well. Press crumb mixture into bottom of prepared pan; place pan in the freezer.
- Beat chevre and sugar with an electric mixer in a large bowl until smooth. Add eggs one at a time, allowing each egg to blend into the cheese mixture before adding the next. Mix in coconut milk. Add coconut yogurt, vanilla extract, and gluten-free flour; mix just until incorporated.
- Pour cheesecake batter into chilled crust and bake in preheated oven for 1 hour. Turn oven off and allow cake to cool in oven with its door closed for at least 2 hours. Refrigerate for an additional 4 to 6 hours before serving.

An easy side dish with great flavor. I love the goat cheese in this! If you want to make these ahead, chill them and reheat before serving, adding some extra liquid. Stir in the chives right before serving.

- Place potatoes in a saucepan, and cover with cold water to 2 inches above. Add 1/4 teaspoon salt; bring to a boil. Reduce heat, and simmer 15 minutes or until potatoes are tender; drain. Return the potatoes to pan over low heat; add remaining 1 teaspoon salt and butter to pan. Mash the potatoes with a potato masher to desired consistency.
- Add cheese and peper to potato mixture; stir until cheese melts. Stir in milk; cook 1 minute or until thoroughly heated, stirring frequently. Remove from heat; stir in chives.

- Chop all of the fresh herbs.
- Slice the cheese into rounds 1 inch thick. Arrange in 1 layer in a serving dish. Place the garlic pieces around the cheese, remove them later if you wish. Sprinkle the cheese with the herbs, chili flakes, peppercorns, olives and tomatoes. Pour the olive oil over the goat cheese.
- Cover and let marinate for a few hours at room temperature. Remove the garlic and allow the cheese to come to room temperature before serving.
- Serve this wonderful gourmet appetizer with crackers, sliced French stick bread or mini pitas.

- 1. Heat goat’s milk in a large stockpot or saucepan over medium heat. Warm, stirring constantly, until the milk reaches 180°F. Meanwhile, line a colander with a few layers of cheesecloth or butter muslin.
- 2. Remove the milk from heat, and add lemon juice. Stir to combine, and follow with the vinegar, stirring a few more times to evenly distribute. Cover the pot, and let the milk sit for 45 minutes while it curdles.
- 3. After the milk has separated into fine curds and whey, carefully pour (or ladle) the contents of the pot into the lined colander. Allow it to drain slightly.
- 4. Season the curds with salt, and mix through. Gather the edges of the cheesecloth together, and tie off with twine. Attach the twine to the handle of a wooden spoon and set over a large, deep pitcher to drain for at least an hour, until cheese feels set and not too loose. (Alternatively, you can hang the curds from the kitchen faucet for less clean-up.)
